TRADITIONAL SOUTHERN BISCUITS

4 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon salt
4 tablespoons butter, cold
1 cup solid vegetable shortening, cold
2 cups milk

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large mixing bowl, combine the flour, baking powder and salt. Mix well. Add 2 tablespoons of the cold butter and the cold shortening and work it into the dry ingredients, using your hands, until the mixture resembles coarse crumbs. Stir in the milk. The dough will be sticky.
  • Dust your work surface with some flour. Turn the dough onto the floured surface. Gently fold each side toward the center. Pick up the dough and dust the work surface with additional flour. Return the dough to the floured surface and fold each side towards the center again. Turn the dough over and press it out to 1-inch thickness. Cut the biscuits, straight down, do not twist the cutter, with a 2 1/4-inch round cookie cutter. Melt the remaining 2 tablespoons of butter and add to a 10-inch round cake pan. Place the biscuits in the pan, turning once (to coat both sides with butter), about 1/4-inch apart. Let the biscuits rest for 15 minutes before baking. Bake until golden brown, about 15 minutes.

  • Make a well with flour mixture and slowly add milk into the middle. Knead dough with your fingers and add milk when necessary. Roll out dough onto a lightly floured surface and roll out to desired thickness. Cut with small biscuit cutter.
  • Butter bottom of skillet and place biscuits in pan. Bake for 12 minutes or until golden brown.

I grew up loving my mother's homemade biscuits, so I thought I would share the recipe here! They are very simple to make and go great with breakfast, lunch or dinner!

1/2 cup milk
1 1/2-2 tablespoons vegetable oil

Steps:

  • Preheat oven to 425°F.
  • Mix all ingredients well. If dough seems dry, add a little bit extra milk until mixes well.
  • Place dough onto lightly greased cookie sheet in biscuit shapes. My mother didn't even shape them; she would just put globs of dough down and they would be irregular shapes.
  • Lightly dust flour on the top of the biscuits.
  • Bake for 25-30 minutes, or until golden brown.

These are traditional hand-formed South Georgia biscuits as made by my family for generations. Unlike most recipes, these biscuits are formed entirely by hand, not rolled and cut. Once you master the technique, you can make them very quickly and will find the texture and appearance to be much better than rolled biscuits.

2 ½ cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
½ cup shortening
1 cup whole milk

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • In a large bowl, stir together the flour, baking powder and salt. Cut in shortening with a pastry blender or by rubbing between your fingers until the lumps are smaller than peas. Pour in the milk all at once, and stir with a large spoon until dough is evenly moist. It should be sticky.
  • Flour your hands, and knead the dough lightly for 3 or 4 turns, adding just enough flour so that it doesn't stick to your hands. Let the dough rest for a minute or two.
  • With well-floured hands, pinch off pieces of dough (about 12) and pat lightly into balls. Don't over work the dough. Place about 2 inches apart on ungreased baking sheets. With floured knuckles, press each ball down to about 1/2 inch thickness.
  • Bake for 11 to 12 minutes in the preheated oven, until browned on the bottom. Serve hot with butter.

A dear and very close friend of mine who lives in Australia asked me about southern biscuits and gravy for breakfast. It is RARE that I make this because it's artery clogging as HECK so if you're steadfastly health conscious...forget it!! It is an old southern tradition ...like grits. So if you only do it once every 5 years (haha) you're probably safe from a coronary. It's out of this world good! For those who don't know, biscuits and gravy is really more like biscuits, sausage and gravy. Every southern cook adds her/his own twist to it ...like throwing in sugar and vanilla isn't the norm--it's just the way I do it -- once every 5 years or more!

2 cups flour
1/4 cup sugar
1 teaspoon vanilla
4 teaspoons baking powder
1/4 teaspoon baking soda
1 pinch salt
3 ounces cold butter, diced
8 ounces buttermilk
1/2 lb ground sausage
2 tablespoons butter
4 tablespoons flour
3 cups cold milk
salt and pepper

Steps:

  • Combine the dry ingredients. Knead in the butter.
  • Add buttermilk and knead on a floured surface. Make sure you only knead it just enough to get the dough together. Do it gently so the flour doesn't develop gluten which will cause your biscuits to be tough.
  • Flatten the dough with the ball of your
  • fist. Use a glass to cut out your bisquits. Don't make them too tall or the outside may get crusty while the inside is still too doughy.
  • Cook them in a 350 degree oven on a greased cookie sheet and then get started on the gravy straight off.
  • Fry up the sausage until it's thoroughly cooked. Remove the sausage with a slotted spoon.
  • Don't drain the grease. You'll need it to make the roux. You should have about 2 tablespoons of rendered fat. Add the butter and melt it. Then add the flour a little at a time over medium heat, constantly whisking.
  • Cook for about 2-3 minutes. Now start adding the cold milk a little at a time, whisking incessantly.
  • Toward the end of the milk add the sausage back inches When it's nice and thickened up add salt and pepper to taste.
  • Cut the biscuits in half, pour the gravy over them, and enjoy! We're talking breakfast heaven here!
