TRAEGER BEEF JERKY
This homemade beef jerky is cooked on the Traeger or other wood-pellet grill, and will have you whipping up batches on the regular because it is just SO good.

Steps:
- Mix all marinade ingredients into a one-gallon zip-lock bag along with the sliced beef. Seal the bag, making sure to get as much air out of the bag as possible. Put the bag into the refrigerator and let marinate for 6-24 hours before cooking. Remove the bag from the fridge 1 hour prior to cooking.
- Startup your Traeger grill and put it on the smoke setting. If you don't have a smoke setting, 180-190° is ideal. Layout your meat on the grill with at least a half-inch space between all the pieces. Leave on the grill 4-5 hours turning once after 2 - 2 1/2 hours.
- Remove from grill when finished and let cool for thirty minutes to an hour before putting it into the refrigerator for storage. Make sure to get some for yourself before it's all gone.

SMOKED PEPPERED BEEF JERKY RECIPE - TRAEGER GRILLS®
Try this smoked peppered beef jerky recipe. Thin sliced beef steak is marinated with soy sauce, Worcestershire, garlic and black pepper over hickory.

Steps:
- In a medium bowl, combine the beer, soy sauce, Worcestershire sauce, brown sugar, curing salt, garlic salt, and 2 tablespoons of black pepper.
- With a sharp knife, trim any fat or connective tissue off of the meat. Slice the beef into 1/4-inch-thick slices against the grain (partially freeze the meat for easier slicing).
- Transfer the sliced beef to a large resealable plastic bag. Pour the marinade over the beef and massage the bag until all slices are well coated. Seal the bag and refrigerate for at least 8 hours, or overnight.
- When ready to cook, set the Traeger temperature to 180℉ and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke, if available.
- Remove the beef from the marinade and discard the marinade.
- Dry the beef slices between paper towels, then sprinkle generously on both sides with the remaining black pepper.
- Arrange the meat in a single layer directly on the grill grates. Close the lid and smoke for 4-5 hours, or until the jerky is dry but still chewy and somewhat pliant when bent.
- Transfer the hot jerky to a resealable plastic bag. Let rest at room temperature for 1 hour with the bag open.
- Squeeze out any air from the bag, then seal and refrigerate the jerky. It will keep for several weeks. Enjoy!
TRAEGER BEEF JERKY
This excellent Traeger Beef Jerky has a very traditional taste, and is made with Traeger Jerky Rub as the main ingredient. It has a subtle sweetness, a little black pepper heat, and the perfect recipe for anyone that want's a great tasting beef jerky.

- Mix all dry ingredients in a large bowl until fully blended, and there are no clumps of spices.
- Add the liquid ingredients and mix again until fully blended.
- Add the Ground Beef and mix by hand wearing food handling gloves for several minutes until the spice mixture and meat are fully combined.
- Load seasoned meat into your jerky gun, and dispense onto your dehydrator trays evenly, with about 1/8 in of space between the strips.
- Run the dehydrator at 165 degrees or on the jerky setting for 4 to 6 hours depending on your desired level of dryness.

GROUND BEEF JERKY
Instead of a marinade or a dry rub the spice mixture is mixed in with the ground beef, making this jerky slightly different form its more expensive brothers.

- Stir salt, chili powder, garlic powder, onion powder, ginger, black pepper, and cayenne pepper together in a large bowl; add ground beef and mix well.
- Pass beef mixture through a meat grinder set with the finest blade.
- Preheat oven to 250 degrees F (120 degrees C). Place wire-racks onto baking sheets.
- Place 1/2 ground beef mixture between two sheets of heavy plastic on a solid, level surface. Firmly roll beef mixture to a thickness of 1/8 inch. Remove the top layer of plastic wrap, invert beef mixture onto prepared baking sheet, and remove the bottom layer of plastic wrap. Repeat for remaining beef mixture.
- Bake beef mixture in the preheated oven with the oven door slightly ajar for 2 1/2 hours. Rotate the baking sheet. Bake until jerky is cooked through, another 3 hours. Remove jerky from oven and cut into strips while warm.

TERIYAKI BEEF JERKY
Strips of beef are marinated in teriyaki sauce, soy sauce, and a blend of pineapple and garlic in this easy smoked jerky recipe.

- Mix teriyaki sauce, soy sauce, brown sugar, and Worcestershire sauce in a large bowl.
- Place pineapple and garlic in a food processor or blender; process until smooth. Pour pineapple mixture and teriyaki mixture into a resealable plastic bag. Add beef, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 6 to 8 hours.
- Preheat smoker to 225 to 250 degrees F (110 to 120 degrees C). Drain beef and discard marinade.
- Smoke beef in the preheated smoker until jerky is dry and chewy but not crispy, 6 to 8 hours. Store jerky in the refrigerator.
