CHEF RAY'S SEAFOOD TRINITY

This is a recipe I got from a Cajun cooking class. This was by far the best Cajun cooking I have eaten so far!

1/4 cup extra virgin olive oil
2 2/3 tablespoons green onions
2 2/3 small garlic cloves, finely minced
2/3 pint heavy cream
1/4 teaspoon thyme
1 1/3 teaspoons italian seasoning
1/3 teaspoon sweet basil
1/8 teaspoon oregano (dash)
1 teaspoon salt
2/3 teaspoon cayenne pepper
1 1/3 teaspoons paprika
1/3 cup romano cheese, grated
2/3 lb angel hair pasta
0.667 (8 ounce) can black olives, sliced for garnish
1 1/3 lbs shrimp, med. size, peeled, deveined and butterflied
2/3 lb large scallop
2/3 cup lump crabmeat, about two cans
1 loaf French bread (for sopping up sauce)

Steps:

  • Take a heavy aluminum 12 inch skillet, pour in the olive oil and heat it hot enough for frying. Drop in the shrimp and scallops (make sure they are drained well) and stir-fry them quickly until they start to bronze. Then immediately reduce the heat to medium and gently sauté the shrimp and scallops until the natural juices begin to render out(about 3 min). Do not over cook.
  • Add the green onions and garlic and sauté then till the onions wilt slightly and the garlic starts to brown. At this point, remove seafood from the skillet with a strainer spoon, leaving as much liquid as possible in the pan and set them aside in a bowl.
  • increase heat to "high" again. Pour in the heavy cream and dry seasonings and cook it at a quick bubble until it thickens. Make sure to watch the pan and continuously stir as it cooks because cream has a tendency to boil over easily.
  • Boil pasta, drain and add a small amount of olive oil to prevent sticking. Set Aside.
  • Place all the seafood, including crab and the Romano cheese into the pan and mix everything together well. Then drop in the pasta and thoroughly coat each strand with the sauce and serve piping hot. garnish with black olives.

2 pounds ground beef
1 (12 ounce) package smoked sausages, cut into bite-sized pieces
9 slices bacon, diced
2 tablespoons minced garlic
2 onions, diced
1 (6 ounce) can tomato paste
1 (14 ounce) can beef broth
1 (28 ounce) can diced tomatoes
1 (15 ounce) can mild chili beans, with sauce
2 (15 ounce) cans pinto beans, drained
3 Anaheim (New Mexico) chile peppers, seeded and minced
3 jalapeno peppers, seeded and minced
3 serrano peppers, seeded and minced
3 tablespoons Worcestershire sauce
⅓ cup brown sugar
2 teaspoons chipotle chile powder
2 teaspoons ground cumin
salt and pepper to taste

Steps:

  • Brown the ground beef in a large soup pot over medium-high heat until cooked and crumbly; drain and set aside. Brown sausages, then set aside. Reduce heat to medium and stir in bacon. Cook until the bacon has released its fat and is beginning to turn crispy. Stir in garlic and onions, and cook until the onions soften and turn translucent, about 5 minutes. Stir in tomato paste to coat the onions.
  • Pour in beef broth, diced tomatoes, chili beans, and pinto beans. Add the Anaheim peppers, jalapeno peppers, and serrano peppers. Season with Worcestershire, brown sugar, chipotle powder, and cumin. Bring to a boil over high heat, then reduce heat to medium-low, and simmer for 2 hours, or until thickened, stirring occasionally. Season to taste with salt and pepper, then simmer for 5 additional minutes before serving.

1 lb chicken parts
2 tablespoons adobo seasoning, goya
2 garlic cloves
2 celery
1/2 red pepper
1/2 onion
1 tomatoes

Steps:

  • Wash chicken, pat dry, and sprinkle with adobo seasoning on both sides.
  • Mince garlic and chop celery, red pepper, onion, and tomato.
  • In a large pan, sauté garlic using non- stick spray or a little oilive oil (you will get the fat from chicken skin later and this is so vegetables do not stick to the pan).
  • Slightly brown chicken on both sides.
  • Add garlic and saute for a bit.
  • Add rest of vegetables and enough water to cover chicken and vegetables half way.
  • Cook until chicken is done.
  • Variation of this which I did last night - when chicken way nearly done, I added more water and some pasta (whole wheat of course). Waited for pasta and chicken to be done and voila! So good!
