TACO PIZZA
I was looking for a recipe for a taco style pizza, but couldn't find exactly the kind I was wanting so I decide to wing it and came up with this one myself. The results were great. My husband said it was the best one he'd ever had! For an extra treat, top with lettuce, tomato and sour cream.

Steps:
- Add the water, salt, oil, flour and yeast to your bread machine in the order listed. Select the dough cycle. Check your dough after it has been mixing a few minutes. If it is too dry and not mixing, add water 1 tablespoon at a time, until it is mixing and has a nice dough consistency. You want the dough to be pliable but not sticky.
- Meanwhile, in a small bowl, combine tomato paste, water, and 3/4 of the package of taco seasoning mix. Stir in chili powder and cayenne pepper; set aside. In another bowl, mix refried beans, salsa, and onion; set aside. In a large skillet, cook ground beef until evenly brown; drain excess fat. Season with the remaining 1/4 package of taco seasoning and a small amount of water. Simmer a few minutes, then remove from heat.
- Preheat oven to 400 degrees F (200 degrees C).
- When the dough cycle is finished, remove the dough from the machine. Divide the dough in half, and pat into two 12 inch pans. Spread a layer of the bean mixture on, then a layer of the tomato mixture. Sprinkle with seasoned beef and top with cheddar cheese.
- Bake in preheated oven for 10 to 15 minutes, or until crust is golden brown and cheese is melted. Turn pizzas halfway through baking.

We used to go to a pizza place in Georgia that served a taco pizza. This is my version. It is different, but really a nice blend of the two. Prep time is if crust is pre-made.

- Brown ground beef, drain fat, add taco seasoning and water, mix well and set aside to cool.
- Mix taco sauce and pizza sauce together.
- Spread sauce on crust.
- Top sauce with"taco meat", any optional ingredients desired, cheddar cheese.
- Keep in mind you will add more cheese when it is done.
- Bake@ 425° until crust is browned and cheese is bubbly.
- Top with a light bed of shredded lettuce.
- Sprinkle with cheese, arrange onion and tomato slices.
- Dot with sour cream and drizzle with taco sauce.
- If you desire add black olives for appearance.

TROOPS BBQ PIZZA OVEN TACO PIZZA
Put a new twist on Taco Tuesdays with a Taco Pizza! The secret to making this a great pizza is the ground Turkey. Your guests will likely think the meat is beef because of the Taco seasoning, but you'll secretly know the reason the crust cooked to perfection is because of the reduced grease. Serve the slices with a dab of Sour Cream for an extra treat!

- Brown the ground Turkey in a skillet. Once browned, add the Taco Seasoning Packet and the water. Use less water than instructed on the Seasoning Packet to compensate for the liquid in the Tomato Sauce.
- Dice the Red Onion, Tomato and Jalapeno. You will have extra onion.
- Spread one can of Tomato sauce on each crust.
- Add half of the seasoned Turkey to each pizza.
- Rinse the Black Beans in a colander under water to remove the bean juice. Add half the can of Beans to each pizza.
- Top the pizza with the Onion, Tomato and Pepper.
- Top with even portions of the Cheddar and Monterrey Jack Cheese on each pizza.
- Preheat the Troops BBQ Pizza Oven to 400 degrees F with the pizza stone in the oven.
- Cook each pizza on the pizza stone in the Troops BBQ Pizza Oven for 10-15 minutes, or until the crust is a golden brown.
- NOTE: It will take about 30 minutes for the charcoal to heat the Troops BBQ Pizza Oven to 400 degrees F. Plan this into the time it takes to make the recipe. While the recipe will also work in a conventional oven, you won't have the same smoke flavor that the pizza oven gives you.

- Preheat the oven to 425 degrees F. Roll out the pizza dough and fit it onto a 15-inch pizza pan.
- Brown the ground beef in a medium skillet over medium heat, about 10 minutes. Stir in the taco seasoning. Set aside.
- In a medium bowl, mix together the refried beans and picante sauce until combined. Spread the mixture onto the crust. Scatter the olives over the crust, then top with the cheese and the browned beef. Bake for 20 minutes, or until the crust is lightly browned.

CHICKEN TACO MEAT PIZZA

- For the pizza dough: Mix the yeast with 1 1/2 cups warm water in a measuring cup or small bowl and set aside for 8 to 10 minutes. Mix together the flour, olive oil and salt in a bowl using an electric mixer. With the speed on low, drizzle in the yeast/water mixture and mix until totally combined. Cover the bowl with a towel and set in a warm, draft-free place. Allow to rise for 1 to 2 hours.
- For the tortilla strips: In a small skillet, heat the canola oil over medium heat until a test tortilla strip dropped in the oil sizzles immediately. Drop in the remaining tortilla strips in batches, frying them quickly and removing them from the oil with a fork when crisp, 30 to 45 seconds per batch. Transfer to a paper towel-lined plate. Set aside.
- For the taco pizza: Position an oven rack in the bottom position in the oven. Preheat the oven to 500 degrees F. Oil a baking sheet with some olive oil.
- Remove half of the pizza dough from the bowl. (Place the remaining half in a large resealable plastic bag and refrigerate, saving it for another use.) With your hands, spread the dough out on the oiled baking sheet, making sure it's relatively thin. Spread a thin layer of the salsa all over the crust, then spread a layer of the Chicken Taco Meat on top of the salsa. Sprinkle the grated Cheddar and Monterey Jack cheese over the top.
- Place the baking sheet on the bottom rack in the oven and bake for about 25 minutes, watching to make sure the crust doesn't burn. Remove the pizza from the oven and sprinkle on the shredded lettuce, diced tomatoes and cilantro leaves.
- Mix together the sour cream and hot sauce in a small bowl, adding enough hot sauce to make the mixture pourable. With a spoon (or you can put it in a pastry bag), drizzle the mixture over the finished pizza. Sprinkle with the tortilla strips. Cut into squares and serve immediately with more salsa.
- In a skillet over medium-high heat, add the olive oil and heat until hot. Add the chicken in batches and cook, browning, a couple minutes per side; remove the chicken to a plate using a slotted spoon. Add the garlic and onions to the skillet and cook briefly. Add the chili powder, paprika, cumin and salt to taste. Pour in the tomato sauce and 2 cups water to create a broth. Add the chicken back to the skillet. Bring to a boil, then simmer until the broth is reduced by half.
- Let cool, divide among 4 freezer bags and freeze. Yield: 16 to 20 servings.

- Preheat the oven to 550 degrees F with a pizza stone in the oven.
- To make the taco pizza, we start with stretching a portion of Pizza dough over a 12-inch pizza pan. Make sure to dust your pan with semolina to keep it from sticking. Stretch the dough slightly larger than the pan to allow yourself an edge to roll your crust. Then apply 1/2 cup of the Salsa and spread evenly. Sprinkle the mozzarella and 1 ounce of the Cheddar-Jack evenly across the salsa. (Keep the cheese within the pan so that you can roll your crust.) Roll the border of un-topped dough into a crust and place in the oven. Spin the pizza frequently to insure even cooking; it should take 5 to 6 minutes to cook. Once the crust is golden brown, gently slide it off the pan and onto the stone to brown the bottom. This should take about 30 seconds to a minute. Remove from the oven and place back on the pizza pan. Cut the pizza into 6 slices. Then top in this order: crushed tortillas, taco beef, lettuce, tomatoes, red onions, remaining 1 ounce Cheddar-Jack cheese, jalapeños, cilantro.
- Start by placing the flour, brown sugar, yeast and salt in a stand mixer and mix for approximately 3 minutes. You then slowly add the water around the edges, then the oil. Mix for 16 to 18 minutes. Once everything is mixed remove the dough, divide into 12-ounce portions, loosely cover and store in the fridge for 48 hours to allow to rise properly.
- Combine the garlic, jalapeños, bell pepper, white onion, cilantro, water, chili powder, granulated garlic, red pepper flakes, cumin, black pepper, salt and lime juice in a food processor and run until has a slightly chunky consistency.
GRILLED CHICKEN TACO PIZZAS

- Make the taco seasoning: Mix all of the ingredients with 1 tablespoon each salt and black pepper in a bowl.
- Prepare the pizza: Mix 2 tablespoons of the taco seasoning and the canola oil in a shallow bowl. Pound the chicken between 2 pieces of plastic wrap to 1/4 inch thick. Add the chicken to the bowl, turning to coat, and marinate 30 minutes.
- Preheat a grill to medium high. Grill the chicken until cooked through, about 4 minutes per side. Let cool, then cut into bite-size pieces.
- Divide the dough into 3 pieces. Roll out each on a floured surface into an 8-inch round. Brush with canola oil, sprinkle with taco seasoning and grill until crisp, 3 to 5 minutes per side; remove from the grill.
- Mix the cheeses in a bowl, then sprinkle on the crusts and top with the chicken. Return the pizzas to the grill, and cook until the cheese is melted, about 5 minutes. Meanwhile, mix the avocado, lime juice, cumin, chili powder, red onion, and salt and pepper to taste. Top the pizzas with the avocado mixture, salsa, sour cream and cilantro.

I came up with this recipe after searching through my pantry looking for a quick family-friendly meal. My two teenage kids LOVE it!

- Preheat the oven to 450 degrees F.
- Heat a medium skillet over medium-high heat and add the olive oil. When the oil is hot, add the ground beef and cook, crumbling it with a wooden spoon, until well browned and cooked through, about 6 minutes. Drain off and discard any excess fat. - Cook and stir the ground beef, onion, and garlic together in a large skillet over medium-high heat until the beef is completely browned; drain fat from the skillet.
- Stir the taco seasoning mix and water into the beef mixture; bring to a boil, reduce heat to medium-low, and cook at a simmer, stirring occasionally, for 5 minutes.
