TROPICAL BANANA SPLITS



Tropical Banana Splits image

Go bananas for this delicious treat with tropical sorbets.

Number Of Ingredients 9

1 cup heavy cream
4 ounces semisweet chocolate, chopped
1 teaspoon sugar
4 ripe bananas
1 cup mango sorbet
1 cup coconut sorbet
1 cup raspberry sorbet
1/4 cup coarsely chopped macadamia nuts, toasted if desired
4 maraschino cherries

Steps:

  • In a small saucepan, bring 1/2 cup cream just to a boil. Remove from heat and add chocolate. Let stand 2 to 3 minutes; stir to combine.
  • In a medium bowl, whip remaining 1/2 cup cream with sugar until soft peaks form. Set aside.
  • Peel bananas, and split lengthwise; divide among 4 sundae dishes. Top with a scoop (1/4 cup) each of mango, coconut, and raspberry sorbets. Drizzle each sundae with chocolate sauce; top with whipped cream, nuts, and a cherry. Serve immediately.

2 medium firm bananas, sliced
1 tablespoon lime juice
2 tablespoons salted peanuts
1 tablespoon honey
1 tablespoon sweetened shredded coconut
1-1/2 teaspoons grated lime zest

Steps:

  • In a small bowl, toss bananas with lime juice. Add peanuts and honey; mix well. Spoon into individual dishes. Sprinkle with coconut and lime zest. Serve immediately.

1 package (12 ounces) vanilla wafers, crushed
1/2 cup butter, melted
2 tablespoons sugar
6 cups chocolate chip ice cream, softened if necessary
4 large firm bananas, sliced
2 jars (11-3/4 ounces each) hot fudge ice cream topping, divided
6 cups strawberry or cherry ice cream, softened if necessary
Optional toppings: whipped cream, maraschino cherries, chopped walnuts, banana slices and colored sprinkles

Steps:

  • In a bowl, mix wafer crumbs, melted butter and sugar; press onto bottom of a 13x9-in. dish. Freeze 15 minutes., Spread chocolate chip ice cream over crust. Layer with bananas and 1-1/2 jars fudge topping (about 1-1/2 cups). Freeze, covered, at least 30 minutes., Spread strawberry or cherry ice cream over top. Freeze, covered, 6 hours or overnight., Remove from freezer 10 minutes before cutting. Warm remaining fudge topping; drizzle over top. Serve with toppings as desired.

Number Of Ingredients 5

Vanilla ice cream or frozen yogurt
3 tablespoons unsalted butter
4 ripe but firm bananas, peeled, thickly sliced on diagonal
1 cup purchased chocolate sauce, warmed
Toasted sweetened coconut

Steps:

  • Place 1 scoop vanilla ice cream in each of 4 dessert bowls. Place bowls in freezer.
  • Melt butter in heavy large skillet over medium heat. Add bananas; sauté until just beginning to soften, about 3 minutes. Spoon bananas over ice cream. Top with chocolate sauce and coconut.

The twist to these sundaes is a simple ginger-flavored sauce sparked with lime. It can be made ahead and rewarmed before you assemble the sundaes.

Yield Serves 6

Number Of Ingredients 10

1/2 cup sugar
1/2 cup firmly packed golden brown sugar
6 tablespoons water
1/4 cup strained fresh lime juice
3 tablespoons unsalted butter
2 pieces crystallized ginger
3 tablespoons minced crystallized ginger
Vanilla ice cream
3 cups diced peeled tropical fruit such as pineapple, papaya and/or mango
Toasted sweetened shredded coconut

Steps:

  • For sauce: Combine first 6 ingredients in heavy medium saucepan. Stir over medium heat until sugars dissolve. Boil gently until reduced to 1 cup, stirring frequently, about 15 minutes. Cool to lukewarm. Discard ginger pieces and add minced ginger. (Can be prepared 1 day ahead. Cover and store at room temperature. Reheat to lukewarm, whisking occasionally, before serving.)
  • For sundaes: Scoop ice cream into balloon glasses or sundae dishes. Spoon lukewarm sauce over. Top with fruit. Sprinkle with coconut and serve.
