1 (4 pound) whole chicken
3 cloves garlic
2 (1 inch) pieces fresh ginger root, peeled
2 green onions
½ teaspoon salt
2 tablespoons sesame oil
3 tablespoons vegetable oil
1 tablespoon sesame oil
2 shallots, finely chopped
5 cloves garlic, minced
1 (1 inch) piece fresh ginger root, peeled and chopped
½ cup chopped cilantro
4 cups chicken stock
½ teaspoon salt
3 cups long grain rice, rinsed and drained
cilantro sprigs
sliced green onion
1 cucumber, thinly sliced
2 fresh tomatoes, chopped

Steps:

  • Bring a large pot of water to a boil. Crush 3 cloves of garlic and 2 pieces of ginger, and place them into the cavity of the chicken. Tie the green onions into a knot, and place them into the chicken along with 1/2 teaspoon of salt. Carefully submerge the chicken breast side down into the water.
  • Bring to a boil, then cover and remove from heat. Let stand covered for 40 minutes, turning the chicken over half way through.
  • While the chicken is cooking, heat the vegetable oil and 1 tablespoon of sesame oil in a large saucepan over medium heat. Fry the shallots, ginger, and garlic in the oil until fragrant. Add cilantro and rice, and cook, stirring until toasted. Pour in chicken stock and season with salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender and 'steam holes' appear in the surface of the rice, about 20 minutes.
  • When the chicken is done cooking, remove it from the pot, and place under cold running water to tighten the skin. Rub the outside with sesame oil, and chop into pieces. Place pieces on a serving platter, and garnish with cilantro, green onion, cucumber and tomato. Serve with rice.

¼ cup kosher salt, divided
4 inch pieces fresh ginger, peeled and cut into ¼-inch (6 mm) slices
1 bunch fresh scallion
1 gal cold water, plus more as needed
2 tablespoons sesame oil
¼ cup sesame oil
2 tablespoons chicken fat, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 teaspoon kosher salt
2 cups long grain rice, rinsed and drained
2 cups reserved chicken poaching broth
2 tablespoons sambal
2 tablespoons sriracha
2 teaspoons sugar
1 tablespoon garlic, minced
1 tablespoon fresh ginger, minced
1 tablespoon lime juice
2 tablespoons reserved chicken poaching broth
2 tablespoons fresh ginger, grated
2 tablespoons garlic, finely minced
kosher salt, to taste
3 tablespoons peanut oil
1 tablespoon rice vinegar
reserved fried garlic and ginger
1 tablespoon oyster sauce
3 tablespoons dark sweet soy sauce

Steps:

  • To clean the chicken, rub all over with a handful of kosher salt, getting rid of any loose skin. Rinse the chicken well inside and out. Pat dry with paper towels.
  • Remove any excess fat from the chicken and set aside for later.
  • Season the chicken generously with salt. Stuff the chicken cavity with the ginger slices and scallions.
  • Place the chicken in a large stock pot, cover with cold water by 1 inch (2 cm), and season with salt to taste.
  • Bring to a boil over high heat, then immediately reduce the heat to low to maintain a simmer. Cover and cook for about 30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C). Remove the pot from the heat.
  • Remove the chicken from the pot, reserving the poaching liquid for later, and transfer to an ice bath for 5 minutes to stop the cooking process and to keep the chicken skin springy. Discard the ginger and green onion.
  • After it's cooled, pat the chicken dry with paper towels and rub all over with sesame oil. This will help prevent the chicken from drying out.
  • In a large wok or skillet, heat ¼ cup (60 ml) of sesame oil over medium-high heat. Add 2 tablespoons of reserved chopped chicken fat, the garlic, ginger, and salt, and fry until aromatic, about 10 minutes.
  • Reserve ¼ of the fried garlic mixture, then add the rice to the remaining fried garlic and stir to coat. Cook for 3 minutes.
  • Transfer the rice to a rice cooker and add 2 cups (480 ml) of reserved poaching broth. Steam the rice for 60 minutes, or until tender.
  • While the rice is cooking, carve the chicken for serving.
  • Make the chili sauce: combine the sambal, Sriracha, sugar, garlic, ginger, lime juice, and chicken broth in a small bowl and stir to incorporate.
  • Make the ginger garlic sauce: in a small bowl, combine the ginger, garlic, salt, peanut oil, and rice vinegar, and stir to incorporate.
  • Make the soy sauce: in a small bowl, combine the reserved fried garlic and ginger with the oyster sauce, dark soy sauce, light soy sauce, and chicken broth, and stir to incorporate.
  • Serve the sliced chicken with the rice, dipping sauces, sliced cucumbers, and fresh cilantro.
  • Enjoy!

This is a spicy sweet and sour chicken dish. The spicy being the addition of Creole seasoning. I love the extra spice....if you get it right, it will sneak up on you in a good way. It's an entree I had at this now closed restaurant in Northern Virginia. It was served on a cast iron skillet with Jasmine rice. My mom and I set out to recreate it and are pleased with the results. I am still searching for the best sweet and sour sauce recipe to make it perfect.

2 1/2 lbs chicken breasts, cut into 1-inch cubes
1 green bell pepper, cut into 1-inch squares
1 red bell pepper, cut into 1-inch squares
1 yellow bell pepper, cut into 1-inch squares
2 medium onions, cut into 1-inch squares
3 tablespoons vegetable oil
1 tablespoon creole seasoning (or Cajun, more or less, see note below)
3/4-1 cup sweet and sour sauce (bottled or homemade)
rice, for serving over

Steps:

  • Heat a large skillet to medium high and add half of oil.
  • Saute peppers and onions until tender crisp. I like mine to slightly caramelize on the edges. Remove and set aside.
  • Add rest of oil to skillet and add chicken, sprinkle with Creole seasoning.
  • Note: The amount of seasoning you use is going to depend on the heat level of the spice blend you have and how hot you like it. I season the chicken until it is slightly more spicy than I like it because the sweet and sour sauce along with the pepper/onion mixture greatly cuts the spice. But by all means, go conservative, you can always add more later.
  • Brown the chicken until cook and no longer pink.
  • Add the peppers and onions back in and then the sauce.
  • Cook until sauce is heated through.
  • Taste and add more Creole seasoning if necessary.

Traditionally chicken is cooked slowly over a low heat, about 2 feet above real charcoal. Charcoal is started in pits before sunrise and 250+ halves are usually finished about noon. You can do nearly as well over a gas grill but be very careful to minimize flare-ups which will burn the skin. Soaked wood chips wrapped in foil (punch a couple holes) or smoker box will add to the smoky flavor.

  • Mix the sauce ingredients well. Begin with chicken at room temp and place skin side up on the grill and allow to begin cooking slowly. Turn and baste with sauce allowing it to puddle in the cavity. Turn and baste frequently to prevent burning and to maximize the sauce flavor in the meat. Slower is better for this recipe. The chicken should be completely done and the leg joint should break easily. Skin will be lightly browned and not burned if you are careful with the grill. You can serve immediately, but taking the next step will infuse more flavor. Place each half of hot chicken on a piece of aluminum foil, sprinkle with more sauce, and wrap tightly. Pack the halves together in a cooler or low oven to keep warm for about 30 minutes. The chicken will steam making it moist with even more flavor. To reheat a foil wrapped half - open foil and put 1 tablespoon of sauce, or just use a tablespoon of cider vinegar, in the cavity. Rewrap and warm in oven. It will taste almost hot off the grill.

2 - whole chicken breasts, cut into bite sized pieces
1 cup(s) white rice
2 cup(s) chicken stock
2 small tomatoes (or 1 very large), cut into thin wedges
1 - green bell pepper, thinly sliced

1 large onion, chopped
1 pint(s) heavy cream
2 medium cloves of garlic chopped,or 1/2 tsp. garlic powder
1/2 teaspoon(s) salt and pepper

Steps:

  • Cook rice according to package diections, using 2 cups of stock instead of water. In a large non-stick frypan, lightly saute' chicken, onion, peppers, & garlic in 2T. of your favorite oil. You want these veggies to be crisp-tender, so don't cook too long...3-5 minutes on medium high heat. Set off the heat. When the rice is done, add it to the chicken and veggies, and at that time, add the tomatoes. Stir, over medium heat, approximately 5-7 minutes, adding the cream at little at a time, to make the dish creamy. Be careful not to use too much as, you don't want it to become gooey. (You may have as much as half of it left over...depending on the consistency of the rice.) Taste for salt and pepper and add that near the end of cooking time. Enjoy!!
  • I serve this with sauteed lemony asperagus, and crusty bread.

Vivian Howard was raised on this humble comfort dish, known as a "bog" in her neck of the woods. Boiling the chicken till it falls off the bone yields a flavorful broth for the rice to soak up, resulting in a rich, silky porridge that's plump with chicken. Think of it as Southern risotto!

3 pounds whole chicken
2 1/2 teaspoons freshly ground black pepper, divided, plus more for serving
2 bay leaves (optional)
1 medium yellow onion, halved (optional)
2 teaspoons kosher salt, plus more to taste
2 cups long-grain white rice, may substitute brown rice, quinoa, or a combination
1 cup chicken broth, optional, as needed at the end of cooking
Juice of 1 lemon

Steps:

  • Remove gizzards and liver from chicken and discard; keep the neck (optional). Place chicken-and neck, if using-into a large Dutch oven or pot, breast side up. Add enough cool water to just barely cover the chicken. Over high heat, bring to a boil. While heating, season with ½ teaspoon freshly ground black pepper, and add bay leaves and onion if using. When boiling, reduce to a simmer, cover, and cook, about 1 hour.
  • After an hour, chicken should be fully cooked and falling off the bone. Turn off heat, remove lid, and let rest in the broth, 30 minutes.
  • Remove chicken from the pot and set aside to cool. Meanwhile, season the broth with remaining black pepper and salt. Bring back to a boil and stir in rice; lower heat and simmer uncovered, 1 minute. Stir and cook another 8-20 minutes, depending on the cooking directions of the type of rice you're using.
  • Meanwhile, pull the chicken into sizable chunks, discarding the bones, skin, and fat; pour any juices that run off back into the chicken meat. When the rice is cooked, add chicken back to the pot. Stir, cover, and simmer, 10 more minutes.
  • After 10 minutes, the rice will have absorbed most of the broth, yielding a soupy consistency. (At this point, add more broth if desired.) Season with more black pepper and salt to taste. Stir in the lemon juice. Sprinkle with more black pepper and serve immediately.

After poaching the bird for Hainanese chicken rice, the stock is used to steam the rice and make the soup. The chicken is served with a delicious dipping sauce.

4 lb. free-range chicken
½ oz. (15 g) ginger, bashed with the side of a knife
2 scallions, chopped
1 bunch watercress, leaves picked
1 small cucumber, sliced crossways
Cilantro sprigs, to serve (optional)
6-8 long red chiles, chopped
¾ oz. (20 g) ginger, sliced
4 garlic cloves
Juice of 2 limes
Chicken fat from the stock, to taste (optional)
5 red Asian shallots, thinly sliced
3 garlic cloves, finely chopped
3 cups (1 lb. 5 oz.) jasmine rice, rinsed and drained
2 pandan leaves, tied into a knot
3½ cups (30 oz.) chicken stock
2 Tbsp. light soy sauce
½ tsp. sesame oil
3½ oz. chicken stock

Steps:

  • Remove the pads of fat from the chicken cavity and reserve. Rub the chicken inside and out with 2 tsp. salt. Loop cotton string around and under the wings and across the breast, then set aside for 30 minutes to come to room temperature.
  • Meanwhile, to make the chile sauce, pound the ingredients except the lime juice with a mortar and pestle to a grainy paste (not too fine). Add the lime juice, season with salt and chicken fat to taste, if using, and mix well. Set aside.
  • Put the ginger, spring onions, 16 cups water and 1 tsp. salt in a large stockpot and bring to the boil. Holding the chicken by the string, lower it into the boiling stock, submerge for 60 seconds, then lift the chicken out, allowing the water to drain from the cavity. Repeat this a couple of times, bringing the stock back to the boil between each submersion. This process ensures the water circulating in the bird is hot enough for even cooking. Submerge the chicken again, bring the stock back to the boil, then reduce to a gentle simmer, cover and cook for 20 minutes.
  • Cover the pan with a lid, turn off the heat and leave the chicken for 40 minutes to finish cooking. Lift out the chicken, being careful not to break the skin. Let the stock drain from the cavity, then plunge the bird into a bath of ice water to stop cooking. Leave for 20 minutes, then remove, gently pat dry with paper towel and set aside. Reserve the chicken stock.
  • To prepare the rice, chop the reserved chicken fat and stir in a wok over medium heat until the fat renders, then discard the solids (or heat 2 Tbsp. vegetable oil in a wok). Add the shallots and fry until golden, then add the garlic and fry for a further minute. Add the rice and fry until it begins to pop. Transfer to a saucepan (or a rice cooker). Add the pandan leaves and pour in the reserved hot stock to cover the rice by ¾ inch. Increase the heat to high, bring to a simmer, then reduce heat to low, cover with a tightly fitting lid and cook until liquid is absorbed (11-12 minutes). Remove from the heat, remove lid, cover with a tea towel and leave for 5 minutes to steam dry.
  • Meanwhile, to make the dressing, combine the ingredients in a bowl. To make the soup, add the watercress to the remaining stock. Adjust the seasoning with salt and white pepper.
  • Cut up the chicken Chinese-style: Use a cleaver to split the bird down the middle through the breastplate and backbone, then remove the legs and halve them at the joint. Remove and halve the wings in the same manner. Halve the breasts lengthways and cut into thick slices. Arrange on a platter with the sliced cucumber.
  • Pour the dressing over the chicken and garnish with cilantro sprigs, if using. Serve with separate bowls of rice and watercress broth and chile sauce on the side.
