Steps:
- Melt the butter in a large, wide pot over medium-high heat and cook, stirring often, until the milk solids are a deep golden brown and the butter smells nutty.
- Add the garlic, shallots and a 1/2 teaspoon salt and cook, stirring, about 30 seconds. Add the spinach in batches and cook, tossing to coat, until wilted, about 2 minutes. Add the lemon juice and season with salt and pepper.
- Transfer to a serving bowl.

Steps:
- If possible, use fresh sage and freshly grated Parmesan to heighten the flavor of this dish. Makes a huge difference!
- Cook cheese tortellini according to package instructions; drain. (You can start on the sauce while the tortellini is cooking).
- Heat butter over medium heat in a large skillet. Add sage and slowly cook butter until it begins to brown. (It's okay if the sage darkens and gets crunchy).
- Remove from heat; add the hot tortellini. Stir to coat; add parmesan cheese, salt and pepper and toss. (If you choose to add sun-dried tomatoes, add them in with the cheese, salt, and pepper before tossing.).

As tortellini cook, place spinach into large Stainless Mesh Colander. Dice ham with Santoku Knife. Finely dice bell pepper. Drain tortellini over spinach in Colander. 3. Add butter to (12-in./30-cm) Skillet; heat over medium heat 5-7 minutes or until butter is a deep brown color, occasionally swirling Skillet. Immediately add bell pepper. Reduce heat to low; add ham, tortellini and spinach. Gently toss to coat with Bamboo Spatulas. 4. To serve, spoon tortellini mixture onto serving plates. Sprinkle with black pepper, if desired. - Bring a large pot of salted water to a boil over high heat. Add the tortellini and cook 1 minute less than the package directions, about 7 minutes. Drain the pasta, reserving 1/2 cup of the cooking water.
- Heat a medium skillet over medium heat. Melt the butter then cook until the solids begin to brown. You may have to scrape the bottom of the pan with a wooden spoon to release the brown bits from the bottom; keep an eye on it. It should smell nutty and appear golden brown, not black. This could take around 2 to 3 minutes.
