2 cup apricot nectar
1 8 ounce carton plain yogurt
2 tablespoon honey

Steps:

  • In a blender container, combine bananas and strawberries or mango. Add nectar, yogurt, and honey. Cover and blend until smooth. Transfer to a glass pitcher or bowl. Cover surface with plastic wrap. Chill in the refrigerator for 4 to 12 hours. Stir mixture.

This frosty non-dairy delight is the standard breakfast in our home every weekend year-round. Frozen fruit (no sugar added) makes for convenience and frostiness. The fresh bananas give it its thick, creamy texture. Couple this smoothie some almonds or pecans on the side, and I suspect this must be a taste of heaven. It makes a blender full and tastes best when made fresh. If you happen to have any leftovers, pour them into freezer pops for a healthy and yummy snack the kids will love. Be creative and use whatever fruits you happen to love. Measurements are approximate, we just fill up the blender. :)
