3/4 cup chopped onion
1 tablespoon olive oil
1 garlic clove, minced
1 can (28 ounces) Italian crushed tomatoes, undrained
1 can (6 ounces) tomato paste
1 cup water
1-1/2 teaspoons dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
MEATBALLS:
4 slices white bread, torn
1/2 cup water
2 large eggs, lightly beaten
1/2 cup grated Parmesan cheese
1 garlic clove, minced
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1/2 teaspoon salt
1 pound lean ground beef (90% lean)
2 tablespoons olive oil, divided
1 package (16 ounces) spaghetti

Steps:

  • In a large saucepan, cook onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, tomato paste, water, oregano, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Meanwhile, in a small bowl, soak bread in water for 5 minutes. Squeeze out excess liquid. In a large bowl, combine the eggs, cheese, garlic, basil, parsley, salt and bread. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, heat 1 tablespoon oil over medium heat. In batches, brown meatballs, adding more oil as needed. Remove to paper towels to drain. Add meatballs to sauce; return to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until meatballs are no longer pink. , Cook spaghetti according to package directions; drain. Serve with meatballs and sauce.

1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil
1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds spaghetti, cooked according to package directions

Steps:

  • Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
  • Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
  • For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
  • Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

2 tablespoons olive oil
3 whole garlic cloves, peeled
2 pig's feet
1 pound pork neck bones
2 (6 ounce) cans tomato paste
1 ½ cups water
2 (28 ounce) cans tomato puree
1 tablespoon white sugar
1 teaspoon black pepper
¾ teaspoon baking soda
1 (16 ounce) loaf fresh Italian bread, torn into 2-inch pieces
1 cup water
6 eggs, beaten
1 pound ground pork
1 pound ground veal
1 pound ground beef
1 tablespoon olive oil
1 clove garlic, minced
2 tablespoons chopped fresh basil
salt and pepper to taste
6 hard-boiled eggs, peeled

Steps:

  • Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
  • Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken. Stir in the sugar, pepper, and baking soda. Continue to simmer while you prepare the meatballs.
  • Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
  • Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.

  • My update Note: I was leary of making this without first pre-cooking the meatballs, but this is by far the best spaghetti and meatballs I have ever made. The meatballs ended up a nice brown color, they were not over cooked and I think putting them in before browning allowed some of the meat flavor to seep into the sauce.
  • #2 Instead of using all ground beef, I opted to use a combination of ground pork and ground beef (12 oz ground beef, 4 oz ground pork) -instead of plain bread crumbs, I used pre-seasoned breadcrumbs, I increased the parmesan cheese to 4 oz. With the sauce, instead of using 2 (28 oz) cans of whole tomatoes, I used 1 (28 oz can) of whole tomatoes, and then two smaller cans (14 oz) of crushed tomatoes. After simmering the sauce, I ran half of it through the blender to make it smoother. I also added a small can of tomato sauce in addition to the tomato paste, plus for added flavour I added 1 tsp italian seasoning, 1/2 tsp basil, and 1 tsp garlic powder.

For meatballs, in a large bowl, combine the eggs, water, onion, bread crumbs, 1 cup Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. 1 (28 ounce) can diced tomatoes with basil oregano and garlic
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 white onion, diced split in 2 equal parts
1/4 cup olive oil
1 lb ground Italian sausage
2 lbs ground beef
2 tablespoons garlic (crushed)
2 tablespoons salt
2 tablespoons sugar
1 bay leaf
1 teaspoon basil
1 1/2 teaspoons black pepper
1/2 teaspoon crushed red pepper flakes
1 egg
1/2 cup breadcrumbs

Steps:

  • Set aside 1/2 of the diced onion, bread crumbs 1/4 lb of Italian sausage, 1 3/4 lb ground beef, 1 Tsp garlic salt, 1/2 Tsp salt, 1/2 Tsp pepper and egg for meat balls.
  • Pour olive oil in large pot. Add, 3/4 lb of the Italian sausage, 1/4 pound on the ground beef, garlic, and half of the diced onion to the pot. Heat on medium heat until meat has been browned.
  • Once the meat has been browned add the diced tomato's and tomato sauce. Stirring until well mixed. Continue to use medium heat allowing sauce to bubble. Add the remaining spices not previously set aside. Stirring them in until well mixed.
  • It should taste pretty good at this point but is still runny, that is why now we are going to add the tomato paste. Stir until well mixed.
  • Drop heat on the burner to low, cover pot and let simmer.
  • Now to the meatballs. In a mixing bowl large enough to hold all the meat add 1 3/4 lb ground beef, 1/4 lb ground Italian sausage, 1/2 cup bread crumbs, 1 Tsp garlic salt, 1 Tsp salt, 1/2 Tsp black pepper and egg.
  • Stir all of the ingredients in until the meat has a good consistency and you feel everything has been mixed evenly.
  • Once mixed, take meat and make into balls it usually makes about 20 golf ball sized meatballs.
  • Once done making the meatballs, take out a medium sauce pan and place it under medium heat.
  • Add meatballs to the pan browning the outsides of the ball but not quite cooking it all the way through.
  • Once completed browning the meatballs add them to the sauce that is simmering.
  • Continue to let the sauce simmer for another 60 minutes once the meatballs have been added. The longer you let it simmer the better.

Italian Spaghetti Sauce With Sausage and Meatballs image

This is one of my favorite recipes to make for friends when we have them over for dinner. Italian is casual, simple to make and inexpensive. Start this early in the day, let it simmer for a few hours and right before the guests arrive, boil your pasta, toast the garlic bread and toss up a Caesar salad...nothing else could be so simple. This recipe makes a full 6 quarts so it will feed an army. It freezes very well so I package the leftovers in containers for simple and delicious weekday meals.

1 1/2 lbs sweet Italian sausage
1 1/2 lbs hot Italian sausage
1 tablespoon olive oil
2 (29 ounce) cans Contadina tomato sauce
2 (29 ounce) cans of contadina tomato puree
2 minced garlic cloves
3 tablespoons dried basil
2 teaspoons dried oregano
1 teaspoon salt
1 (18 ounce) can Contadina tomato paste
1 tablespoon beef base
3 lbs ground beef
1 1/2 cups seasoned dry bread crumbs
3/4 cup milk
1 1/2 teaspoons Worcestershire sauce
2 large eggs

Steps:

  • Cut the sausage links in half and place them into a 6 quart stock pot.
  • Add the olive oil and garlic, stir to coat; brown on medium heat stirring often to keep them from burning.
  • Add the tomato sauce, puree, basil, oregano and salt to the browned sausage and reduce heat to low; cover and slow simmer.
  • MEATBALLS.
  • Mix ground beef, breadcrumbs, milk, Worcestershire and eggs together in a bowl.
  • Shape meatballs into size of your choice and place into a shallow glass baking pan.
  • Preheat oven to 400°F and bake meatballs from 20-40 minutes depending upon size.
  • Add meatballs to the sauce and let simmer for 3 hours;stir occasionally and skim the fat off the top so the sauce is not greasy when it is done.
  • Add the tomato paste 1 hour before the sauce is done to thicken it up.
  • 1/2 hour after adding the tomato paste test the sauce; if it is too sweet from the paste add the beef base to counteract the sweetness--if not, leave this out and enjoy!

1 cup fresh breadcrumb
1 tablespoon dried parsley
1 tablespoon grated parmesan cheese

1 egg, beaten
1/2 lb lean ground beef
3/4 cup chopped onion
5 garlic cloves, minced
1/4 cup olive oil
2 (28 ounce) cans whole canned tomatoes
2 teaspoons salt
1 teaspoon white sugar
1 bay leaf
1 (6 ounce) can tomato paste
3/4 teaspoon dried basil
1/2 teaspoon ground black pepper

Steps:

  • 1. In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed. Or you can prepared the meatballs and cooked them in the oven on a sheet pan for 20 minutes at 350*F. Then added them to the sauce, or store, covered, in refrigerator until needed.
  • 2. In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir lean the ground beef, in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.
  • My Note: Sometime I also spiced up the meatballs with some stand-by italian spices (basic, oregano, etc.) and I upped the garlic (to taste). Also, I used crackers (pounded or processed to crumbs) in place of bread crumbs, and used a little less than called for. This made a very solid and yummy meatball I was leary of making this without first pre-cooking the meatballs, but this is by far the best spaghetti and meatballs I have ever made. The meatballs ended up a nice brown color, they were not over cooked and I think putting them in before browning allowed some of the meat flavor to seep into the sauce. opted to use a combination of ground pork and ground beef (12 oz ground beef, 4 oz ground pork) -instead of plain bread crumbs, I used pre-seasoned breadcrumbs, I increased the parmesan cheese to 4 oz. With the sauce, instead of using 2 (28 oz) cans of whole tomatoes, I used 1 (28 oz can) of whole tomatoes, and then two smaller cans (14 oz) of crushed tomatoes. After simmering the sauce, I ran half of it through the blender to make it smoother. I also added a small can of tomato sauce in addition to the tomato paste, plus for added flavour I added 1 tsp italian seasoning, 1/2 tsp basil, and 1 tsp garlic powder. If you think or found the meatballs too dry, may I suggest adding 1/2 cup of water, or milk, or tomato sauce to the meatballs? The eggs will bind them, but not make them moister - adding liquid makes them exquisitely tender and juicy. Also, if you want a lighter meatball, substitute oatmeal for the breadcrumbs - measure it first, then run it briefly in the blender so you won't have any big bits in the meatballs. I added 1.5 tsp oregano and 3 tsp basil; added 1 tsp seasoned salt, 1 medium green pepper. I was very, very happy with the sauce. Put it into a 250* oven while I cooked other stuff, for about 2 hours,it was wonderful.
  • We do work long hours and don't have time at night to make a 2 hour meal, so what I did was use my slow cooker. In the morning I sauteed my onion and garlic, combined it with all the ingredience including half a can of tomato sauce for extra liquid since it tends to lose some in a slow cooker. Had my Son turn the cooker on low at his lunch, so the sauce cooked about 6 1/2 hours. one hour before the sauce was done, he put the meat balls inches We did end up adding the extra half a can of sauce just for liquid, but the flavor was amazing. By using the slow cooker for us working cooks, it was nice to come home to a ready made meal and good as this. Old YES! If you substituted turkey or other poultry for ground beef -- you are never supposed to use breadcrumbs, that type of meat is quite dry, breadcrumbs only makes it worse!

My mother-in-law has a life-long friend named Rosie, a dear Italian woman, who shared with us her family recipe for a hearty spaghetti sauce. I usually omit the ribs, as I'm not that much of a carnivore! Oftentimes I just make the meatballs with the sauce. No need to fry or bake the meatballs, add just add carefully to the hot sauce, then simmer.

2 teaspoons oil
6 pieces stewing beef
3 Italian sausages
1/2 lb boneless rib
12 ounces tomato paste
30 ounces water
1/4 teaspoon oregano
1/4 teaspoon pepper
1/4 teaspoon parsley
1 tablespoon salt
1/4 cup onion, diced
1/2 loaf Italian bread (3 days old)
1 lb hamburger
2 eggs
1/4 cup romano cheese, Grated (a large handful)
1 dash garlic salt
1 dash pepper

Steps:

  • Pour oil into skillet. Cook stew beef, sausages and ribs until brown.
  • Add onion and continue to cook until the onions turn golden brown.
  • Remove all meats except for the beef and put them in a dish and cover to keep warm. Add beef, onions, tomato paste, water, and spices, to a heavy bottomed dutch oven, mixing well.
  • Cover and cook 1½ hours. Return meats to pan and cook an additional ¾ hours.
  • Add warm water to the dry bread. Squeeze out 2 handfuls and put into large bowl.
  • Add hamburg, eggs, Romano cheese, garlic salt and pepper.
  • Mix all of the Meatball's ingredients together. Shape into meatballs and add to sauce 25 minutes before the sauce is done. Watch carefully for burning.

1 small green pepper, chopped
12 frozen fully cooked Italian meatballs (1/2 ounce each), thawed and halved
2 cans (15 ounces each) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1/3 cup tomato paste
1/4 cup grated Parmesan and Romano cheese blend
1 tablespoon minced garlic
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1/4 teaspoon crushed red pepper flakes
1 cup shredded part-skim mozzarella cheese
Hot cooked pasta

Steps:

  • In a large skillet, cook the sausage, onion and pepper over medium heat until sausage is no longer pink; drain. Transfer to a 4-qt. slow cooker. Add the meatballs, tomato sauce, tomatoes, tomato paste, Parmesan cheese blend, garlic and seasonings. Cover and cook on low for 4-5 hours or until hot and bubbly., Sprinkle with mozzarella cheese.
