CHICKEN AND TRUFFLE TERRINE

Steps:
- Line a 2 pound loaf pan with bacon, overlapping the entire area. Put chicken in a chilled food processor and blend until minced. Add pork, shallots and garlic and pulse until mixed. Season with salt and pepper and fold in parsley and truffles. Mix in eggs by hand until incorporated. Chill mixture for 1 hour and preheat oven to 325 degrees. Place mixture in loaf pan and place in water bath going half way up loaf pan. Bake for 45 minutes or until firm. Allow to chill before removing from pan. Slice 1/4-inch thick and serve with 1 tablespoon of grain mustard.
TRUFFLED STUFFED CHICKEN BREAST
I love truffles, but can't afford the eat them as much as I like. I bought a bottle of white truffle oil and worked on a recipe until my kids gave it 2 thumbs up. This recipe can be easily doubled for a dinner party. We like to serve this chicken with wild rice and roasted baby beets with balsamic vinegar reduction.

Steps:
- Lay the chicken breasts flat and make a slit using a very sharp knife, but do not go all the way through. This will make a nice pocket for the stuffing. Pound the breasts evenly using a meat mallet or small saute pan. Cover with plastic wrap and refrigerate.
- Place bread in a bowl and pour milk over; let soak for 10 minutes.
- Meanwhile, heat an ovenproof skillet over medium heat. Add 2 tablespoons olive oil, then shallots. Saute shallots until softened, but not brown, about 5 minutes. Add mushrooms and cook for 5 to 8 minutes. Season with salt and pepper. Cool slightly.
- Squeeze excess milk out of the bread and place in a large mixing bowl. Add mushroom-shallot mixture. Add Parmigiano-Reggiano cheese, truffle oil, and egg. Mix well.
- Preheat the oven to 375 degrees F (190 degrees C).
- Stuff each breast with 2 to 3 tablespoons of stuffing; do not overstuff. Pierce the chicken with toothpicks to seal the stuffing in. Season each breast with salt and pepper.
- Heat remaining olive oil in the same skillet as used for mushrooms over medium heat. Brown chicken for 3 minutes on each side. Transfer to a baking dish.
- Bake in the preheated oven until no longer pink and juices run clear, about 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and allow to rest for 10 minutes. Slice chicken and serve.

- Flatten the chicken to 3/8-in. thickness; sprinkle with Cajun seasoning. In a large skillet, cook chicken over medium heat in oil for 5 minutes on each side or until juices run clear. Place cheese over chicken. Remove from the heat; cover and let stand for 1 minute or until cheese begins to melt., Spread dressing over both halves of rolls. Layer bottom halves with 2 slices of tomato, chicken and 2 strips of bacon; replace tops.

ROASTED CHICKEN CLUB SANDWICH

- Lay toasted bread slices side by side on a clean work surface and divide mayonnaise between them. Divide chicken between two slices of bread, followed by tomato slices, avocado, and bacon. Season with salt and pepper. Top with lettuce, place one bread "stack" on top of the other, and close sandwich with remaining slice of bread.
- Spear each pickle with a 6- to 8-inch wooden or metal skewer and secure two corners of the sandwich from top to bottom with skewers. Cut sandwich in half and serve immediately.
CHICKEN WITH TRUFFLES AND CHAMPAGNE SAUCE

- Whisk flour, salt, and pepper in shallow bowl. Coat chicken pieces in seasoned flour; transfer to rack. Let stand 15 minutes. Coat with flour again; return to rack.
- Melt butter with oil in heavy large skillet over medium heat. Working in batches, add chicken and sauté until brown, about 5 minutes per side. Transfer chicken to plate. Add shallots to skillet and sauté until golden, about 2 minutes. Add Champagne and bay leaf and bring to boil, scraping up browned bits. Return chicken and any accumulated juices to skillet. Cover and simmer until chicken is just cooked through, about 15 minutes.
- Meanwhile, cook green beans in large pot of boiling salted water until crisp-tender, about 2 minutes. Using slotted spoon, transfer to bowl of ice water. Cool quickly, then transfer beans to paper towels to drain. Return water to boil. Add celery root and carrots and boil 1 minute. Drain; transfer vegetables to ice water to cool quickly, then transfer to paper towels to drain. Pat all vegetables dry.
- Transfer chicken to platter; tent with foil to keep warm. Place egg yolks in small bowl. Gradually whisk in 3 tablespoons chicken cooking liquid. Place same skillet over medium-low heat. Whisk in yolk mixture. Cook until sauce begins to thicken, stirring constantly, about 2 minutes (do not allow mixture to boil). Add vegetables and truffle, if desired, to sauce and cook until heated through, about 2 minutes. Spoon sauce with vegetables around and over chicken and serve.
EASY CLUB CHICKEN

- Preheat Oven to 375 degrees.
- Spray a 9 x 13 inch pan with non-stick cooking spray.
- In a bowl, add the cracker crumbs and and Italian dressing mix, and stir until well-combined.
- Melt the butter in a separate bowl.
- Dip the chicken breast in the butter, and roll in the cracker crumbs.
- Place on prepared baking pan.
- Sprinkle with pepper to cook.
- Bake for 1 hours at 375 degrees, or until the internal temperature of the chicken reaches 165 degrees.
