This recipe came from my grandmother, who used peas in her version instead of pickles. My mother changed the recipe and I have altered it even more. The flavors of these ingredients blended together in what is reminiscent of a cold macaroni or potato salad will be your family's new favorite!

- Bring a saucepan of lightly salted water to a boil. Add the macaroni, and cook until tender, about 7 minutes. Rinse under cold running water, then drain well and pat lightly with paper towels.
- In a large bowl, stir together the macaroni, pickles, cheese, tuna, mayonnaise and mustard. Season with a splash of pickle juice, salt and pepper. Cover, and refrigerate for at least 30 minutes before serving.

- Preheat the grill on its highest setting. Drain the tuna, flake it into a bowl and mix with the spring onions and mayonnaise. Season with salt and plenty of freshly ground black pepper.
- Toast the bread under the grill until it's nicely browned on both sides, then spread the tuna mixture on top, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
- Slice in half, sprinkle with paprika and tuck in.

TUNA AND CHEESE PIRATE SHIPS
I remember a long time ago looking in a cookbook my mom had (for fun kid meals) where they made pirate ships out of the sandwiches. These are probably nothing like that, but that old recipe was my inspiration for a twist on tuna sandwiches that had my kids clapping their hands with glee.

- Open tuna; drain.
- In small bowl, mix tuna, miracle whip, and relish (or prepare tuna using your favorite method.).
- Cut crusts off of bread and cut each piece in quarters. Spread tuna on one piece and put another piece on top for each mini-sandwich.
- Fold and tear one slice of cheese to make four squares. Skewer each piece of cheese on a toothpick as pictured and stick into sandwich to make the ship.
- Two pieces of bread and one piece of cheese makes 4 pirate ships.

TUNA CHEESE CASSEROLE
This is a cheesy tuna casserole recipe that makes enough for 2 casseroles. I sometimes like to make this on a Sunday and have the second casserole for Tuesday. One less day to cook!

- Preheat over to 350 degrees.
- Melt butter in sauce pan over medium heat. Cook onion for a few minutes and whisk in flour. Cook for a few minutes.
- Gradually whisk in milk until smooth, whisking often. Cook for about 15 minutes or until thickened.
- Turn off heat and add salt, pepper, oregano, garlic powder, hot pepper flakes, 2 cups of cheddar and 1/2 cup of parmesan.
- Meanwhile cook penne or rotini noodles until cooked. Don't overcook as they cook more while baking. Rinse with cold water and return to pot.
- Add sauce and tuna to the noodles (it looks like it will be too saucy but it turns out great) and divide between 2 greased 2 liter baking dishes. Top with remaining 1 cup cheddar and 1/2 cup parmesan cheese.
- Cover with foil and bake in 350 degree oven for 20 minutes. Uncover and bake for 25 minutes. Yum yum!
