This is a delicious (and extremely healthy!) vegetable side dish that goes well with shish kebabs, falafel, or any kind of grilled meat, really. It would also make a fine vegetarian main course served with couscous or rice pilaf. Enjoy!

- olive oil
2 medium onions, diced to any size desired
2 teaspoon(s) minced garlic
2 - zucchini or yellowsquash, or mix of both
24 ounce(s) frozen okra
2 can(s) diced tomatoes, 28 oz each
1 - lemon
1 bunch(es) parsley
- penzey's spices turkish seasoning, or any middle eastern spice blend

Steps:

  • Saute onions in olive oil until they begin to brown over medium heat.
  • Once browning begins, add garlic, and stir for a minute or so.
  • Add sliced zucchini, and cook for about 2 minutes or until zucchini begins to soften just a tiny bit. Add thawed okra.
  • Sprinkle the vegetables with several palmfuls of Penzey's Turkish seasoning, or any Middle Eastern seasoning blend including cumin, garlic, pepper, and salt. Stir to coat all vegetables, and cook for several minutes.
  • Once the spices start becoming fragrant, add two cans of diced tomatoes and stir well. Reduce heat and cook for anywhere from 30 minutes to an hour, depending on how soft you like your vegetables, and how thick you want your sauce to be.
  • Right before serving, add the juice of the lemon, fresh parsley, and stir.
  • Enjoy!!! Serve with kebabs, lamb burgers, couscous, pita bread, etc.

2 large onions, chopped
salt and ground black pepper to taste
2 pounds cubed lamb stew meat
3 tablespoons ground cinnamon
1 ½ teaspoons ground cumin

5 (14.5 ounce) cans canned diced tomatoes, drained
1 ½ tablespoons tomato paste
2 beef bouillon cubes
4 cups boiling water
2 pounds frozen sliced okra

Steps:

  • Heat the vegetable oil in a large pot over medium heat. Stir in the onion, salt and black pepper; cook and stir until the onion has softened and turned a light golden brown, about 10 minutes.
  • Add the lamb, cinnamon, cumin, coriander, and garlic paste. Cook on medium heat until the lamb starts to brown, 10 to 15 minutes, stirring occasionally. Stir in the tomatoes and tomato paste; cook and stir for another 5 minutes.
  • Dissolve the beef bouillon cubes in 4 cups of boiling water. Pour the broth into the pot with the lamb and stir in the okra. If necessary, add water to cover the okra. Cover and simmer for 30 minutes, stirring occasionally. Remove the cover and cook for another 45 minutes to 1 hour until the lamb is very tender and the stew reaches your desired thickness.

Until lately, I hadn't been a fan of okra. But then I learned how cooks in the eastern and southern Mediterranean treat this popular vegetable: they cook it whole, after tossing it with salt and vinegar and marinating it for an hour to make it less, well, slimy. Some regional cooks dry okra in the sun after salting it.Okra is low in calories, very high in dietary fiber, and a great source of vitamin A, vitamin C, B vitamins and the phytonutrients glutathione, xanthin, lutein and beta carotene. For the best texture and flavor, buy the smallest pods you can find. Okra is stewed with tomatoes and onions throughout the Middle East and in Greece, where the vegetable goes by its Arabic name, bamyeh or bamyies. Traditionally, the stews are made with about three times as much olive oil as I use here.

2 pounds small okra
Salt
1 cup red wine vinegar
1/4 cup extra virgin olive oil
2 medium onions, cut in half lengthwise then sliced thin across the grain
3 to 4 garlic cloves to taste, minced
1 pound tomatoes, preferably plum tomatoes, seeded and grated, or else peeled, seeded and chopped; or 1 14-ounce can, with juice
Freshly ground pepper
1 tablespoon tomato paste diluted in 1/2 cup water
1 teaspoon ground allspice
1 teaspoon sugar
2 to 4 tablespoons fresh lemon juice, to taste
1/4 cup finely chopped parsley

Steps:

  • Trim the stems off the okra, and place in a large bowl. Salt generously, douse with the vinegar and let sit for 30 minutes to an hour. Drain the okra, and rinse thoroughly.
  • Heat the olive oil over medium heat in a large, lidded skillet or casserole. Add the onions. Cook, stirring, until tender, about five minutes. Add the okra, and cook, stirring, for about three minutes until the edges begin to color. Add the garlic, stir together for about half a minute until fragrant. Stir in the tomatoes. Bring to a simmer, and cook, stirring often, until the tomatoes have cooked down a bit and smell fragrant, about 10 minutes. Add salt and pepper to taste.
  • Stir in the dissolved tomato paste, allspice and sugar. Add water if necessary to just cover the okra. Bring to a simmer, cover and reduce the heat to low. Simmer 45 minutes until the okra is very tender. Add the parsley and lemon juice, and simmer another five minutes. Taste and adjust salt. Remove from the heat, and serve hot, warm or at room temperature.

¼ pound ground lamb
¼ cup basmati rice
2 cups tomato puree, divided
½ teaspoon dried mint
½ teaspoon salt
⅛ teaspoon black pepper
2 pounds small zucchini or yellow squash
½ teaspoon salt
1 teaspoon minced garlic
1 tablespoon lemon juice
½ teaspoon dried mint

Steps:

  • Mix together the ground lamb, basmati rice, 2 tablespoons tomato puree, 1/2 teaspoon mint, salt, and pepper; mix well, and set aside.
  • Slice the ends off of the zucchinis and hollow out the centers using an apple corer. Stuff with lamb mixture.
  • Stir together the remaining tomato puree with 1/2 teaspoon salt in a large skillet. Place the stuffed zucchini into the sauce, and add enough water to cover the zucchini. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer for 30 minutes.
  • Stir in the garlic, lemon juice, and remaining 1/2 teaspoon of mint. Recover, and simmer an additional 15 minutes. To serve, cut the zucchini crosswise into rounds and arrange on a serving plate. Spoon sauce over the top.

1 medium onion, coarsely chopped
1 clove garlic, mashed
1/4 cup olive oil
6 small plum tomatoes, peeled, seeded and roughly chopped
1 scant tablespoon coriander seeds, lightly crushed in a mortar
1/2 teaspoon salt, if desired
1 1/2 pounds fresh okra
1/2 to 1 cup water
Juice of half a lemon

Steps:

  • Over medium low heat, gently saute the onion and garlic in olive oil until onions are transparent and just starting to color. Add tomatoes and crushed coriander seeds, and cook 5 minutes, until tomatoes have given off their liquid. Add salt if desired.
  • Trim the stems from the okra, and add to tomato-onion mixture. Mix well and add water. Start with 1/2 cup; more can be added as necessary.
  • Turn heat down to low. Cover okra, and simmer for about 30 minutes or until the okra is tender. Stir occasionally, and add more water if the vegetables start to stick.
  • Just before serving, add the lemon juice, mixing well.

2 lbs okra (bamya)
2 tbsp olive oil
1 onion, minced
1 tsp minced garlic
1/4 cup tomato paste
1 tsp salt, or more to taste
1 tsp smoked paprika (or substitute regular paprika)
1/2 tsp red pepper flakes - if spice sensitive, use sparingly or omit
1/4 tsp cayenne, or to taste

Steps:

  • Prepare your okra by rinsing it clean, then slicing off the top and bottom tips of each piece. At this point the okra will feel slimy. Don't worry, it will lose that texture as it cooks. To speed the process of prepping the okra, I sometimes line up the stem ends against my chef's knife...
  • Then slice those stem ends off 4-5 pieces at once.
  • Turn the okra pieces, realign the bottom tips with the knife, then slice off the very bottom tips. By grouping them this way you can speed through the whole batch and prep them relatively fast.
  • Heat 2 tbsp olive oil in a saute pan over medium. Add the minced onion and saute, stirring frequently, for about 10 minutes until softened and starting to caramelize. To save time, I usually prep the okra (as outlined above) while the onion is cooking. Just be sure to keep a close eye on the onions and don't let them burn.
  • When the onions are cooked, add the minced garlic to the pan and saute for another minute till fragrant. Add the okra to the pan and stir. It will feel like a lot of okra at first and the pan will be crowded, but it will quickly shrink up and soften as it cooks.
  • Whisk together 1 1/2 cups hot water, 1/4 cup tomato paste, 1 tsp salt, 1 tsp paprika, 1/2 tsp red pepper flakes and 1/4 tsp cayenne. Both the red pepper flakes and cayenne add heat; if you are super spice sensitive, omit the pepper flakes and start with a pinch of cayenne, then add more to taste as desired.
  • Pour the tomato liquid evenly over the top of the okra. Bring to a boil.
  • Cover the saute pan with a lid, vented at the edge. Reduce heat to a simmer. Let the okra cook for about 20-30 minutes, stirring every 5 minutes or so, until the largest pieces of okra have softened to your liking. We like the okra quite tender and almost falling apart, but that is a matter of preference. At the end of cooking, your tomato sauce should have reduced and thickened. If there is a lot of liquid in the pan, remove the lid and turn up the heat to a high simmer till the sauce has reduced (careful, don't let it burn!). Add more salt or spice to taste, if desired.
  • Serve okra hot. We usually eat it alone, but if we need a more substantial meal I serve it over rice, quinoa or couscous.

14 ounces of whole baby okra (or equivalent)
2 cups diced tomatoes
1 cup diced onion
1 tablespoon chopped garlic
2 tablespoons diced jalapeno peppers
8 ounces tomato sauce
3/4-1 cup water (approximately)
garlic pepper seasoning
seasoning salt
black pepper
allspice
corn oil, to fry okra

Steps:

  • Fry frozen okra in hot oil until golden brown(this will ensure okra stays closed and not slimy.
  • Set okra aside.
  • In a skillet combine tomato, onion, garlic, and jalapeno pepper and fry in about 1/8 cup oil until it becomes saucy.
  • Then add water and tomato sauce to skillet and stir.
  • Add okra and seasonings and let cook for about 5 minutes on medium heat.
  • Set aside for about 10 minutes and stir fry will thicken slightly.
  • Enjoy!

STUFFED ZUCCHINI IN TOMATO SAUCE OR KOUSA



Stuffed Zucchini in Tomato Sauce or Kousa image

This recipe is from the middle eastern cookbook by Tes Mallos. My husband is Palestinian and I have been making this for guests for quite a while, even my kids love it! This is the best recipe I have tried for zucchini or "kousa". It does take time and you will need a zucchini corer (mine was a gift from MIL). If you use an apple corer you will have to cut the zucchini into smaller segments. But this is a really wonderful dish, you could also substitute some of the zucchini for small eggplant, as this is traditionally cooked all together with both, but I like zucchini best.

2 lbs zucchini, even sized
1 medium onion, finely chopped
1 tablespoon oil or 1 tablespoon plain butter
1 tablespoon pine nuts (optional)

1/4 cup short-grain rice
1 tablespoon chopped parsley
1/2 teaspoon ground allspice

1 large chopped onion
1/2 cup clarified butter or 1/2 cup regular butter
2 garlic cloves, finely chopped
1 cup peeled tomatoes, chopped (or one can chopped pealed tomato)
1/4 cup tomato paste (I use 1/2 cup for a richer sauce but DH says this is not the "proper" way)
1 cup water
1/2 teaspoon cinnamon (don't leave this out! MIL says anything with tomato should have a pinch of cinnamon)
salt
water

Steps:

  • Choose either medium or small zucchini. Wash well cut of stem end. Using a corer hollow out zucchini leaving rounded end intact. Try not to puncture the skin. Soak in salted water for 10 minutes.
  • Gently fry onion in butter until transparent. Add pine nuts after 10 minutes cook with onions for another 10 minutes, stir occasionally.
  • Add pan contents to ground meat, rice parsley, spice and about a teaspoon of salt and pepper and 1/4 cup of water if need to be easy to work with (I don't add water).
  • Fill zucchini with stuffing. (The rice expands and the meat will shrink so fill them all the way).
  • Prepare the sauce: in a frying pan gently fry chopped onion in butter. When transparent add chopped garlic cook for a few seconds and chopped peeled tomatoes, tomato paste, water and cinnamon with salt and pepper to taste.
  • Ladle some of the sauce into the bottom of a heavy based pan, arrange zucchini in layers adding sauce to each layer, you may have 2-3 layers of zucchini. Or I stand them up on end with the open side up (again DH tells me this is not the "proper" way to do it but if they burn then only the one end is ruined).
  • Add enough water to just cover the zucchini with sauce, you may or may not need to do this depending on how much sauce you have.
  • Cover and simmer gently for 1 1/4 hours or until veggies are tender and rice is cooked.
  • Serve hot or warm with sauce and Arabic pita bread for dipping.
