- Brush the center of 4 appetizer plates wtih olive oil, then very lightly sprinkle with salt. Lay the tuna slices over the seasoned olive oil.
- Combine the lemon juice, lemon zest, caper brine, and chiles in a small bowl. Spoon the mixture evenly over each slice of tuna. Drizzle the top of each plate with the remaining olive oil. Season the tuna with salt and pepper. Let stand for 2 to 4 minutes, depending on your desired texture, then serve immediately.

Steps:
- To prepare vinaigrette, puree or mash kiwi and press through a fine mesh strainer.
- Add to a blender with vinegar and blend to combine.
- With the blender running, drizzle in olive oil very slowly to emulsify. Season with salt and set aside.
- To prepare salad, brush tuna with olive oil and season with salt.
- Grill or sear for 1 to 2 minutes on each side.
- Slice tuna and arrange slices on 4 serving plates.
- Toss micro greens with a small amount of vinaigrette and place greens on top of tuna.
- Place kiwi slices on plate and serve with any remaining vinaigrette.
- Makes 4 servings.

- Slice the cucumber into thin slices and add to a bowl of ice water. With a sharp knife, slice the brown cut end from each endive and carefully remove a layer of leaves. Slice off the end again to release the next layer of leaves. Continue the process until you have about 20 leaves approximately the same size. Reserve any unused portions of the Belgian endive for another purpose.
- Remove the partially thawed tuna from the refrigerator and place on a clean work surface. Using a very sharp, thin-blade knife, cut the tuna into 1/4-inch slices. Add the sliced tuna to a plate and drizzle the vinaigrette over it. Allow to marinate for 5-minutes while preparing the serving plate.
