TUNA PATTIES WITH LEMON-DILL SAUCE

Tuna Patties With Lemon-Dill Sauce image

These tuna patties brought back childhood memories. We loved them then and we really loved these now. They are easy to make and can be a meal on their own. Make them smaller and you've got a yummy appetizer. The lemon-dill sauce is creamy and tangy. It's a nice added touch.

Provided by Tammy T

Categories     Seafood

Time 30m

Number Of Ingredients 14

2 large eggs
2 tsp lemon juice, fresh
1/4 c grated Parmesan cheese
3/4 c Italian seasoned bread crumbs + 1/2 cup
17 oz tuna, canned (one 12 oz and one 5 oz) drained
1/4 c green onions, diced
1/4 tsp ground pepper
2 dash(es) Old Bay seasoning
vegetable oil
LEMON DILL SAUCE
1/2 c mayonnaise (can use reduced fat)
1 tsp lemon juice, fresh
1 tsp grated lemon peel
1/2 tsp dill weed

Steps:

  • 1. Make the Lemon-Dill Sauce first by just mixing the ingredients together and keep in the fridge until needed. Double recipe if you like a good amount, like me.
  • 2. Beat the eggs and mix the lemon juice in a medium bowl. Stir in the Parmesan cheese and the 3/4 cup bread crumbs. Fold in the tuna and onions and mix well. Add the pepper and Old Bay seasonings.
  • 3. Shape mixture into round 1 inch thick patties, like you would hamburger patties. I was able to make six patties. Put the other 1/2 cup of bread crumbs on a paper plate and hold the patties carefully. Sprinkle the breadcrumbs on both sides to dust them. Carefully shake excess off.
  • 4. When all are ready to cook, heat about 3 tablespoons of vegetable oil in a fry pan on stove, medium heat until it is good and hot but not smoking. Add three patties at a time and fry about 4-5 minutes on each side. Add a little more veg oil when adding the second batch. The time it cooks depends on how thick your patties are. They should be golden brown.
  • 5. Serve with the lemon-dill sauce or tarter sauce. These may be small but are filling. Can serve two patties each for three or one patty for six if doing a brunch. Enjoy!

  • Drizzle 1 teaspoon of the olive oil into a large saute pan and bring over medium heat. Add the onion and celery and stir to coat in the oil. Cook, stirring occasionally, for a few minutes until the vegetables are softened. Stir in the minced garlic and cook for another 30-60 seconds until fragrant. Remove from heat.
  • In a mixing bowl, combine the eggs (beaten), the vegetable mix from step one, the drained tuna, ¼ cup of the breadcrumbs, ¼ cup of the Parmesan cheese, the mayonnaise, lemon juice, parsley flakes, salt, pepper, and dill. Stir together until well combined.
  • On a clean surface (I used a cutting mat), scoop out 9 (1/4 cup each) portions of the tuna mixture and flatten/shape them into patties. Combine the remaining ¼ cup of breadcrumbs and 2 tablespoons of Parmesan cheese in a dish and stir together. Sprinkle the crumb mixture over the patties on both sides and press it in to coat.
  • Wipe out the saute pan from step one to use again. Drizzle 1 tablespoon of oil into the pan and bring over medium heat. When the oil is hot, place half the patties (you’ll have to work in batches depending on the size of your pan, I did 5 the first batch and 4 the second) in the oil and cook for about 3 minutes until golden brown on the bottom. Flip the patties and cook for another 3 minutes or until golden. Transfer the cooked tuna cakes to a cooling rack and repeat with the remaining 2 teaspoons of oil and the remaining patties until all are cooked.

  • First of all, open up your cans of tuna and drain the water. I like to put the tuna in a wire mesh strainer to drain out the water.
  • Put the tuna into a medium-size bowl. Dice your onion up into small pieces and toss it in with the tuna. Add in 1 egg, flour, Panko bread crumbs, lemon juice, parmesan cheese, garlic powder, salt, and pepper. Stir together with a fork or spoon until the ingredients are well mixed.
  • Using your hands, grab a handful of tuna mixture. Press it between your hands to form a patty. You might have to squeeze it quite hard. Place formed patties inside your air fryer. The first time I tried it I brushed the Air Fryer tray with oil, but I never did it after that and they were just as crispy. Continue to make patties until the tuna mixture is gone. I usually get 6 nice-size patties out of 2 cans of tuna.
