GRILLED TUNA STEAKS

Steps:
- To grill the tuna, get a charcoal or stove-top cast-iron grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for only 2 to 2 1/2 minutes. The center should be raw, like sushi, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes and serve.
TUNA STRATA
My sister shared this one with me. She loves tuna and her husband hates it. So, we had it all to ourselves! She said she got it from a recipe site but couldn't remember which one. I wanted to put it on here so that I wouldn't lose it. Some of you might like it too.

Steps:
- Generously grease a 12x8 baking dish.
- Trim 6 slices of bread to fit bottom of the dish.
- Butter top of each slice of bread with 1/2 tsp of butter.
- Place bread slices butter side up in baking dish.
- In a medium bowl, flake tuna and add celery, onion, pickles, Old Bay Seasoning and mayonnaise. Mix well.
- Spread tuna mixture over bread and sprinkle with cheese.
- Trim other 6 slices of bread and butter tops.
- Arrange slices buttered side up over tuna and cheese.
- In medium bowl, beat eggs with milk, mustard and hot pepper sauce.
- Pour over casserole evenly.
- Bake at 350 for 35-45 minutes or until puffy and lightly browned and set.
- Let stand 5-10 minutes before serviing.

Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

- Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
- Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
- Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.

While the soup simmers, Jo assembles tasty Mozzarella Tuna Melts. "Our daughter's home economics teacher shared the recipe for these all-American favorites," she notes. Using a mini food processor to chop the celery and onion for the filling helps shave preparation time. Then Jo just pops the sandwiches in the oven.

THE BEST TUNA SANDWICH
Years ago, there was a deli in the town I worked and everyday faithfully, I would stop there for the Tuna sandwich (which was the best ever!) I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

- Drain tuna very well and add to large bowl
- dice all of the above very small as indicated and add to tuna.
- I add about 3 -4 heaping kitchen sized tablespoons of Mayo into the tuna you may have to add a little more or a little less based on your preference
- add a few shakes of black pepper and salt (opt).
- Chill in airtight container in fridge. The longer you let it chill, the better the flavor. This can be served on pretty much any kind of bread. My personal favorite, onion rolls or seedless rye!

Place four slices of the bread in a single layer in dish.In a small bowl, stir together tuna, cheese, green onions, celery, pimiento and salt. Spread over bread in dish. Place remaining four slices of bread on top in a single layer.In a medium bowl, beat eggs. Stir in milk until blended. Pour over bread in dish. Cover and refrigerate at least 4 or up to 24 hours.Bell: Press bread into milk mixture. Bake, uncovered, in a preheated 375° oven for 35 minutes. Sprinkle with cheese. Bake 5 to 10 minutes longer or until puffed and golden and center looks set. Let stand for 10 minutes before serving. Sprinkle with paprika.Note: Day-old bread can be used.
