If your standby supper is baked potatoes with tuna, switch to sweet potatoes and a fresh, spicy topping. It's budget-friendly and low fat too

4 small sweet potatoes (about 200g each)
185g can tuna in spring water, drained
½ red onion , finely sliced
1 small red chilli , deseeded and chopped
juice 1 lime
6 tbsp Greek yogurt
handful coriander leaves

Steps:

  • Scrub the sweet potatoes and prick all over with a fork. Place on a microwaveable plate and cook on High for 18-20 mins, or until tender. Split in half and place each one, cut-side up, on a serving plate.
  • Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion and chilli, then squeeze over the lime juice. Top with a dollop of yogurt and scatter over the coriander, to serve.

2 sweet potatoes
1 tbsp olive oil
2 tbsp fresh rosemary, finely chopped
1 x 120g tin of John West Tuna No Drain
¼ red onion, finely chopped
1 small red chilli, deseeded and finely chopped
2 tbsp Parmesan, grated
1 egg, beaten
Salt and black pepper
4 tbsp non-fat Greek yoghurt
Juice of 1 lime
2 tbsp fresh coriander, finely chopped To serve: Side salad

Steps:

  • Preheat the oven to 180˚C/160˚C fan/gas mark 4. Pierce the potatoes and place directly on the oven rack. Bake for 40-45 minutes until tender.
  • Slice the potatoes in half and scoop out most of the flesh into a mixing bowl. Drizzle the potato hollows with the oil and bake for another 10 minutes.
  • Add the tuna, red onion, chilli, Parmesan and egg to the mixing bowl and combine well. Season with salt and pepper.
  • Remove the potato from the oven and scoop the filling into the hollowed skins. Bake for 10-15 minutes or until the mixture is golden brown.
  • Meanwhile, stir together the yoghurt, lime juice and coriander. Season with salt and pepper.
  • Drizzle the potatoes with the yoghurt and serve with a side salad.

1 (300 g) orange sweet potatoes, peeled, coarsely chopped (kumara)
1 (425 g) can tuna in water, drained
2 eggs, lightly whisked
25 g dried breadcrumbs (packaged)
salt & freshly ground black pepper
1 tablespoon olive oil
4 crusty bread rolls

Steps:

  • Cook the sweet potato in a large saucepan of salted boiling water for 7-8 minutes or until tender. Drain and refresh under cold running water. Transfer to a large bowl.
  • Use a potato masher or fork to mash the sweet potato until coarsely mashed. Add the tuna, egg and breadcrumbs, and stir until well combined. Season with pepper. Divide the tuna mixture into 8 equal portions. Use wet hands to shape portions into 8cm patties.
  • Heat oil in a large non-stick frying pan over medium-high heat. Add the patties and cook for 3-4 minutes each side or until golden brown. Remove from heat. Divide among serving plates and season with salt and pepper. Serve immediately with bread rolls.

1 (220 g) can tuna, drained
1/4 cup frozen sweetcorn
2 tablespoons Hellmann's mayonnaise
1/8 teaspoon salt
1/4 teaspoon sugar
1/2 teaspoon butter or 1/2 teaspoon margarine
1 large potato

Steps:

  • Cook potato (with skin) in microwave for approx 10 minutes or until done (depending on size of potato).
  • Meanwhile put sweetcorn and sugar in saucepan and bring to boil.
  • Once boiled simmer for a few minutes;drain.
  • Mix the tuna and mayonnaise together.
  • Add the sweetcorn and mix some more.
  • When potato is cooked, cut with knife through the middle ¾ of the way (do not cut in half) and again the opposite direction making a cross pattern.
  • Open slightly and place butter inside potato allowing to melt.
  • Sprinkle a little salt over the potato.
  • Spread tuna mix over and serve with a green salad.
