GUACAMOLE TURKEY BURGER
Lean ground turkey and heart-healthy avocado come together to make eating right delicious. This recipe brings a little Southwestern flavor to the mix, with salsa in the guacamole and a seasoned burger mixture. If you'd like to add cheese, a cheddar-jack or pepper-jack would be perfect. Black bean-corn salad is a great side dish.

- To make guacamole, sliced avocados in half, lengthwise. Remove the pit and discard. Scoop out the avocado flesh with a spoon into a bowl.
- Add juices, chili powder, salsa and salt and mash with a fork until nicely chunky.
- Cover with plastic and set aside. (If you want to make the guacamole an hour or so ahead of time, you can keep it fresh in its bowl in the refrigerator by pressing plastic wrap onto the surface of the guacamole so that no air reaches the avocado, which is what makes it turn brown.)
- In a bowl, combine garlic, salt, pepper, cumin and paprika until thoroughly blended.
- Brush each patty on both sides with olive and sprinkle with the seasoning blend on both sides.
- Using a skillet or grill pan, cook patties over medium-high heat, covered, about 5 to 6 minutes per side, until no pink remains. If you're adding cheese, do so for about the last 1 minute of cooking.
- Brush each bun on both sides with melted butter and warm in another skillet over medium-high heat for about 15 seconds per side, just until toasty.
- Place patties on each bun bottom, top with guacamole and other desired trimmings. Serve with a little salsa on the side.

- Preheat grill, or stove top grill pan, over medium high heat.
- Combine turkey, salt and pepper; shape into 4 equal patties a little larger than the buns.
- Cook burgers until lightly charred on outside, about 4 minutes; flip.
- Place a tablespoon of the chilies on each patty and cover with a slice of cheese.
- Cook until burger is firm, about 4 minutes more.
- Meanwhile place tomato and onion on buns.
- Top with cooked burger, dollop a generous spoonful of guacamole and the top bun.

- Place the ground turkey in a bowl. Grate in the shallot and the garlic. Add in the bread crumbs, paprika, cumin, salt and pepper. Splash in a drop or so of Worcestershire sauce. Add the beaten egg white and mix everything together (it works best if you use clean hands!) until combined, but don’t over mix. Form the mixture into 4 or 6 patties (or however many you’d like!).
- Heat a skillet over medium heat and add a drop of olive oil. Add the burgers and cook until they are brown on the outsides, about 5 minutes per side. To make sure the burgers don’t dry out, you can check the internal temperature – you want it to be about 175 to 180. I let the burgers rest for 10 minutes before eating.
- To make the quick guac, chopped the avocado into chunks. I like to take half of this and smash it with a fork, and keep the rest cubed for a chunky guac. Do it however you love! Mix in the tomatoes, cilantro, lime and salt.
- Place your lettuce on the bun and add the burger on top. Top with a few scoops of the guacamole. You can also top with some pickled onions if you’d like! Serve immediately.

- Saute the chopped onion and minced garlic in about ½ tablespoon oil for a few minutes until the onion starts softening and browning. Or skip this step and use a teaspoon of onion powder and ½ teaspoon garlic powder instead (I do not recommend skipping, see notes).
- Combine all the ingredients for the turkey burgers (ground turkey, egg, oats, sauteed onion or onion powder, salt, pepper) into a bowl and mix well with a fork. Try not to mash the turkey, but to mix it instead. Using wet hands, form 4 - 6 burger patties. Wetting your hands between each burger will prevent the turkey from sticking to your hands.
- Heat up some the olive oil (1-2 tablespoons) in your oven-safe pan, and carefully place the burgers in the the pan. Cook for 3 minutes on each side over medium-high heat, or until each side is nicely browned. The inside will still be raw at this point, that's OK.
