Creamy Mushroom Turkey Meatballs with Egg Noodles image

8 oz (250 g) Ontario Button Mushrooms
1/2 Ontario Cooking Onion, chopped
2 cloves garlic
1/2 cup (125 mL) dry breadcrumbs
1/4 cup (60 mL) grated Parmesan cheese
1/2 tsp (2.5 mL) dried thyme
1/2 tsp (2.5 mL) each salt and freshly ground pepper
1 egg, beaten
1 lb (500 g) ground turkey
1 tbsp (15 mL) canola oil
Sauce:
2 tbsp (30 mL) butter
1 Ontario Cooking Onion, chopped
8 oz (250 mL) mixed sliced Ontario Mushrooms (such as cremini, shiitake and oyster)
2 cloves garlic, minced
1/2 tsp (2 mL) dried thyme
1/2 tsp (2 mL) each salt and freshly ground pepper
2 tbsp (30 mL) all-purpose flour
2 cups (500 mL) sodium-reduced chicken broth
1/2 cup (125 mL) 10% half and half cream
1/4 cup (60 mL) grated Parmesan cheese
2 cups (500 mL) baby spinach leaves
1 pkg (12 oz/340 g) extra-broad egg noodles, cooked and drained

Steps:

  • Pulse mushrooms, onion and garlic in food processor until very finely chopped; add breadcrumbs, cheese, thyme, salt and pepper. Pulse until well combined; add egg and turkey, pulsing just until incorporated (do not overmix). Transfer to bowl. Roll into 24 meatballs.
  • In large, nonstick skillet, heat oil over medium heat; brown meatballs, in batches, for 3 to 5 minutes or until golden all over. Transfer to plate; tent with foil.
  • Sauce: In same skillet, melt butter; cook onion, mushrooms, garlic, thyme, salt and pepper for 10 minutes or until very tender and lightly browned. Sprinkle flour into skillet; cook, stirring constantly, for 3 minutes.
  • Slowly pour in broth, stirring constantly, until well combined and smooth. Add cream and cheese; bring to simmer (do not boil). Return meatballs to skillet; cook, partially covered, for 20 minutes or until sauce is thickened. Add spinach; toss gently until wilted. Serve over egg noodles.

A good recipe using jars of Heinz Gravy instead of "cream soups". I used an off brand of gravy once and it just wasn't the same. This works good with left over turkey or chicken and fresh mushrooms makes all the difference. Note: we are using beef gravy not chicken or turkey gravy. Although I'm sure it would be just as good using any gravy you'd like.

1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup butter
4 cups mixed mushrooms, sliced 1/4 inch thick

1 teaspoon minced garlic
1/4 cup white wine (optional)
2 (12 ounce) jars heinz homestyle beef gravy
1 (12 ounce) package egg noodles, cooked, kept warm

Steps:

  • Season turkey filets with salt and pepper. Heat butter in large skillet on medium heat. Cook seasoned filets 2 to 2 ½ minutes per side until lightly browned and internal temperature reaches 165 degrees F. Remove filets from pan; keep warm.
  • Add mushrooms, onions and garlic to pan. Cook 4 to 5 minutes until lightly browned. Stirring frequently.
  • Add wine to pan. Cook 2 minutes. Stir in gravy. Bring to a simmer.
  • Add turkey filets to skillet mixture. Simmer until turkey is heated through. Serve over hot cooked noodles.

4 to 5 pounds turkey wings and drumsticks
Salt and pepper
1/4 cup vegetable oil
1 large onion, cut into 1/2-inch dice
4 carrots, peeled, halved lengthwise, and cut into 1/2-inch dice
4 stalks celery, bottoms and tips removed, halved lengthwise, and cut into 1/2-inch dice
6 ounces tomato paste
1 cup low-sodium chicken broth
1/4 cup cider vinegar
12 ounces ale or good lager beer
6 to 8 cloves garlic, peeled and smashed
1 cup pitted oil-cured olives
2 large sprigs fresh rosemary
Cooked egg noodles, for serving

Steps:

  • Generously salt and pepper the turkey.
  • Heat 2 tablespoons oil in a large heavy pot or Dutch oven over high heat. Add the turkey wings and drumsticks and brown as evenly as possible all over. Do this in batches if necessary.
  • Once browned, remove the turkey from the pot. Reduce the heat to medium-high and then add the onions, carrots, and celery and cook until tender. Add the tomato paste and cook, stirring, until it is mixed in. Then add all the remaining ingredients, except the olives and rosemary, and stir until everything is incorporated. Bring this liquid to a simmer, then add the turkey back to the pot, along with the olives and rosemary, and bring to a simmer. Cook about 3 to 3 1/2 hours over a low flame at a low simmer until the turkey meat falls off the bone easily with just a little nudge from a fork. Remove rosemary sprigs and serve over hot egg noodles.
  • Note: During cooking, occasionally check to see if the turkey is getting too browned or dried where not submerged under the braising liquid. If so, stir into the liquid and continue cooking.

1 medium onion
1 large egg
1/4 teaspoon freshly grated nutmeg
1 teaspoon ground allspice

1 3/4 pounds lean ground turkey
1 teaspoon vegetable oil
3/4 pound cholesterol-free egg noodles such as No Yolks
1 small onion
2 1/2 tablespoons cornstarch
3 cups beef broth (24 fluid ounces)
3 tablespoons medium-dry Sherry
1 tablespoon Worcestershire sauce
1 tablespoon nonfat sour cream
2 tablespoons chopped fresh dill leaves
Garnish:
chopped fresh dill leaves
Accompaniment:
1/2 cup lingonberry preserves or cranberry sauce

Steps:

  • Make meatballs:
  • Into a blender tear 2 bread slices and grind into fine crumbs. Transfer crumbs to a large bowl. Make more bread crumbs in same manner and transfer to bowl. Finely chop enough onion to measure 3/4 cup and add to bread crumbs. In a small bowl whisk together egg, nutmeg, allspice, salt, and pepper and add to bread crumb mixture. Add turkey and with your hands mix mixture until just combined (do not overmix).
  • Form turkey mixture into 1 1/4-inch balls (about 80) and arrange on a tray. Meatballs may be prepared up to this point 1 day ahead and chilled, covered.
  • Preheat oven to 375°F.
  • In a 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and brown meatballs in 2 batches, turning them occasionally, about 4 minutes for each batch. With a slotted spoon transfer meatballs as browned to a shallow baking pan and reserve any drippings in skillet. Bake meatballs, tightly covered with foil, in middle of oven until just cooked through, about 25 minutes.
  • While meatballs are baking, fill a 6-quart kettle three fourths full with salted water and bring to a boil for noodles. Finely chop enough onion to measure 1/2 cup. In a small bowl whisk together cornstarch and 1/2 cup broth. To reserved drippings in skillet add Sherry and onion and simmer mixture, stirring and scraping up brown bits, until most of liquid is evaporated. Add remaining 2 1/2 cups broth and bring to a boil. Stir cornstarch mixture and whisk into broth mixture. Boil mixture, whisking, 1 minute and remove skillet from heat. Whisk in Worcestershire sauce, sour cream, and dill and keep sauce warm, covered, over low heat (do not let boil).
  • Cook noodles in boiling water until al dente. Drain noodles well in a colander and transfer to a large serving dish. Gently toss noodles with sauce and meatballs and garnish with dill. Put 1 tablespoon preserves or cranberry sauce on top of each serving.

In Italy, turkey is often prepared as you would with a chicken breast fillet. Since it's so low in fat, it dries out very quickly. This fast cooking method and creamy sauce produces a nice and easy little dinner. Come to think of it, bet the sauce would be nice on left-over roast turkey. Can't remember where this came from, so let's pretend I made it up. Update 4/14/10: Just made the sauce with low-fat cream cheese and it was every bit as good as with regular, so I'm changing the recipe. Who needs the extra calories? I recommend doubling the sauce, at least the cream cheese and milk. And it's lovely on chicken fillets as well.
