BUFFALO TURKEY WINGS



Buffalo Turkey Wings image

These mega wings will make jaws drop at your next game-day party. The crispy skin, tender meat and zesty sauce will cure any buffalo cravings -- in an extra-large way!

4 turkey wings, split into wingettes and drumettes (tips reserved for another use)
Oil, for drizzling
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
1/4 cup crumbled Maytag or other blue cheese
1/4 cup half-and-half
1 tablespoon sour cream
2 teaspoons lemon juice
Kosher salt and freshly ground black pepper
1 stick unsalted butter
1 1/2 cups hot sauce, such as Frank's RedHot
Carrot and celery sticks, for serving

Steps:

  • For the wings: Preheat the oven to 350 degrees F. Arrange the wings in a single layer on a cooling rack set into a baking sheet. Pat the wings with paper towels until they are very dry, then drizzle with some oil and sprinkle on all sides with salt and a few grinds of black pepper. Add 1 cup water to the bottom of the baking sheet and tent the pan with foil.
  • Bake for 1 hour 30 minutes. Remove the foil and continue baking until the wings are tender, the skin is crispy and brown and an instant-read thermometer inserted into the thickest part of the wing registers 165 degrees F, about 1 hour more. Let cool for 10 minutes.
  • For the blue cheese dip: Meanwhile, whisk together the mayonnaise, Maytag, half-and-half, sour cream, lemon juice, 1/4 teaspoon salt and a few grinds of pepper in a bowl until well combined. Set aside.
  • For the sauce: Melt the butter in a medium microwave-safe bowl, 1 to 2 minutes. Add the hot sauce and whisk to combine. Brush the wings all over with the sauce, making sure they are well coated. Serve the wings with the remaining hot sauce, blue cheese dip and carrots and celery.

6 turkey wings
1 tablespoon butter or margarine
1 medium onion, chopped
2 teaspoons dry mustard
1/2 cup sugar
1 tablespoon cider vinegar
1/4 teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1 cup ketchup
1 teaspoon celery salt
1 pinch cayenne pepper
2 cups beef broth, divided
2 tablespoons cornstarch

Steps:

  • Cut off and discard wing tips. Divide wings in 2 pieces. Set aside. To prepare sauce, melt butter and saute onion. Add mustard, sugar, vinegar, hot pepper sauce, Worcestershire sauce, ketchup, celery salt, cayenne and 1 1/2 cups beef broth. Bring to a boil. Meanwhile, combine cornstarch with remaining 1/2 cup beef broth. Stir into boiling mixture and simmer for 15 minutes. Barbecue the wings over medium heat for 20 to 30 minutes. Baste with sauce and continue to cook until tender (approximately 20 minutes).

Steps:

  • separate wings at the joint discard tips.
  • in a 12 in skillet over medium heat in hot oil cook wings a few at a time until browned on all sides.
  • arranged browned wings in a 15x10 roasting pan.
  • in a small bowl combine soup, salt, paprika and pepper. spoon over turkey.
  • cover pan and roast at 350 for 2 1/4 hours.
  • garnish with parsley.

5 turkey wings
1 small onion, chopped
1 teaspoon seasoned salt
1 teaspoon poultry seasoning
1 teaspoon ground black pepper
1 teaspoon minced garlic
1 ½ cups water, divided
1 (10.75 ounce) can cream of mushroom soup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place turkey wings and onion in a casserole dish; sprinkle seasoned salt, poultry seasoning, black pepper, and garlic on both sides of each wing. Pour 1/2 cup water into the casserole dish. Cover casserole dish.
  • Bake in the preheated oven until browned, 1 hour.
  • Stir cream of mushroom soup and 1 cup water together in a bowl; pour over turkey wings into casserole dish and return to oven, uncovered.
  • Continue baking until brown and tender, 1 hour.
