This is a great alternative to beef London broil. Red, White & Blue is the color theme for this Memorial Day feast. It's sweet, salty & just a bit tangy. It's also easy! Grilled or oven roasted this is a delicious and healthy meal.

2 lb. Turkey London Broil
Marinade
1/2 can jellied Cranberry sauce
1 cup Cranberry/Raspberry juice
10 oz. bottle soy sauce
3/4 cup brown sugar
1/2 cup honey
1 Tablespoon canola oil
1 teaspoon garlic powder
1 teaspoon onion powder
4 fresh parsley leaves, cut up
2 stalks fresh chives, cut up
Sauce
1/4 cup blueberries, washed and stems removed
1/4 cup dried cranberries
1 cup of cranberry/raspberry juice
1 Tablespoon honey
a splash of balsamic vinegar

Steps:

  • Marinade: Mash jellied cranberry sauce into cranberry/raspberry juice Blend well. Mix this with all the remaining marinade ingredients. Pour into a plastic sealable bag or long container with a lid. Add turkey London broil and coat well with marinade. Refrigerate for at least 3 hours. Flip over half way through marinating cycle. Sauce: Mash berries together with juice and remaining ingredients. Set aside. Grilling: Remove turkey from marinade. Discard marinade. Grill on medium heat for 8-10 minutes on each side. Watch that you don't burn it or over-grill. Internal temperature should be 170 degrees. Slice Turkey London Broil on a diagonal angle Pour sauce over the top.

2 lbs turkey breast, half, boneless
4 garlic cloves, chopped
1 onion, chopped
1 teaspoon oregano, dry
1 teaspoon thyme, dry
1 teaspoon white pepper
1 teaspoon rosemary, dry
3 tablespoons olive oil
2 tablespoons lemon juice
1/2 teaspoon ground sage or 3 fresh sage leaves

Steps:

  • Gather and measure ingredients. Place all ingredients into a blender and puree.
  • Rub herb puree evenly across the whole breast. Loosely cover with plastic and place turkey in fridge to marinate for 1-2 hours.
  • Heat Oven to 375° and place foil on a sheet pan. Once the oven reaches 375° flip the oven off and turn the broiler on to high.
  • Place the turkey into the oven on the middle shelf and broil for five minutes. Turkey should cook to a nice golden brown on the top side.
  • Turn breast over and broil the other side for another five minutes, watching closely to ensure it doesn't burn.
  • Turn the broiler off and set the oven back on to 375°. Let turkey roast in oven for exactly 20 minutes.
  • Flip the turkey over and turn oven off (keeping turkey inside). Continue roasting for another 20 minutes.
  • Check internal temperature. Turkey is ready when it's 150° in the center.
  • Let the turkey rest for fifteen minutes before slicing.
