A very interesting appetizer pizza. Sounds strange, but everyone will love the unique combination of fragrant pears and distinctive Gorgonzola.

Ingredients

1 (16 ounce) package refrigerated pizza crust dough
4 ounces sliced provolone cheese
1 Bosc pear, thinly sliced
2 ounces chopped walnuts
2 ½ ounces Gorgonzola cheese, crumbled
2 tablespoons chopped fresh chives

Steps:

Preheat oven to 450 degrees F (230 degrees C).
Place pizza crust dough on a medium baking sheet. Layer with Provolone cheese. Top cheese with Bosc pear slices. Sprinkle with walnuts and Gorgonzola cheese.
Bake in the preheated oven 8 to 10 minutes, or until cheese is melted and crust is lightly browned. Remove from heat. Top with chives and slice to serve.

Ingredients

1 tablespoon extra virgin olive oil
1 large onion, sliced into wedges
1 pear, ripe, cored and sliced
2 tablespoons balsamic vinegar
1/2 teaspoon fresh ground black pepper
8 inches low-carb whole wheat tortillas
1/2 cup blue cheese, crumbled
1/4 cup walnuts, chopped

Steps:

Preheat oven to 450°F.
Heat oil in non-stick skillet, add onions and saute until softened (7-8 minutes). Add pears and saute for 2 more minutes.
Add vinegar and pepper and keep stirring until all liquid is evaporated and onions are covered with a glaze.
Divide the mixture between the wraps. Add the cheese and walnuts.
Bake for 8-10 minutes or until cheese is melted.

The pizza dough should have just been baked for 10 minutes in a 425 degree oven. Keep the oven on 425.
Heat up a nonstick skillet over medium heat and add 1/2 tbsp of butter. Add the pears to the pan and caramelize for a couple minutes, until they soften up a little. Be careful not to cook them to mush. Remove from the pan.
Add the other 1/2 tbsp of butter to the pan, and add the sliced onion. Season with a pinch of salt, and cook for 10 minutes until caramelized.
Whisk to combine the fresh thyme, honey, olive oil, and vinegar. Season to taste with salt and pepper. Brush this mixture onto the parbaked pizza. Distribute the caramelized onions evenly on top of the pizza, then sprinkle over the gruyere.
