1 lb ground turkey
1/2 cup low sodium chicken broth, preferably homemade
1 tablespoon fennel seed, toasted and crushed until coarsely ground
1/2 teaspoon red pepper flakes, ground if desired
kosher salt & freshly ground black pepper
olive oil, for drizzling meatballs and serving
Broccolini, blanched to serve
chopped cilantro, for serving
crushed red pepper flakes, for serving (optional)
2/3 cup coconut milk, from a well-shaken can
2 tablespoons natural-style peanut butter
2 teaspoons honey
kosher salt
1 tablespoon fresh lemon juice, plus additional if desired
1 tablespoon roughly chopped cilantro
1 teaspoon dried oregano

Steps:

  • Make Meatballs:.
  • Preheat broiler.
  • In a large bowl, combine turkey, chicken stock, oregano, fennel seeds, red pepper flakes, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Mix gently with your hands until well combined. Transfer to refrigerator for at least 1 hour or freezer for 30 minutes, until well-chilled.
  • Form 1-1/2 inch balls, using two spoons or a 1 3/4-inch ice cream scoop. Balls will be about 1 1/2 ounces each.
  • Place formed balls on a sheet pan lightly coated with olive oil. Drizzle meatballs lightly with olive oil. Transfer to broiler and cook until golden and just cooked through, about 7-8 minutes. Serve with peanut sauce, blanched brocollini, and a drizzle of olive oil. Garnish with cilantro and crushed red pepper flakes (if desired) and serve.
  • Makes Peanut Sauce:.
  • Combine coconut milk, peanut butter, honey, and 1/4 teaspoon salt in a small saucepan. Bring to a simmer over medium heat and cook, stirring, for 3 minutes. Add lemon juice. Cook for an additional 5 minutes, taste and adjust seasoning with additional salt or lemon juice, and set aside until ready to serve.

Everybody loves meatball night! These classic turkey meatballs pair perfectly with your favorite pasta and sauce, or alongside any of your favorite vegetables. Make a double or triple batch of meatballs and freeze for future meals!

1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 lb ground turkey
1 large egg, beaten
½ cup panko breadcrumbs
½ cup grated parmesan cheese
½ cup fresh parsley, finely chopped
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
pasta, for serving
Sauce, for serving

Steps:

  • Preheat the oven to 400˚F (200°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes.
  • Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, combine the ground turkey, egg, panko, Parmesan, parsley, salt, pepper, and onion mixture. Use your hands to mix until just combined.
  • Shape the turkey mixture into 1½-inch balls (you should have about 14). Place on the prepared baking sheet, spacing 2 inches apart.
  • Bake the meatballs until browned and cooked through, 20-25 minutes.
  • Serve with pasta and sauce of your choice.
  • Enjoy!

1 cup seasoned breadcrumbs
1 cup half-and-half
1 large egg, beaten
3 tablespoons berbere, spice blend
2 tablespoons fresh minced parsley or 2 tablespoons cilantro
1/3 cup finely minced onion
1/3 cup flour
2 teaspoons paprika
2 tablespoons coconut oil or 2 tablespoons peanut oil
1/2 cup diced onion
1 teaspoon minced garlic
1 tablespoon minced crystallized ginger
1 cup diced tomato
1 tablespoon chili-garlic sauce
1/3 cup tomato paste
3 cups beef broth (use more to thin sauce if desired)
1/2 cup no sugar peanut butter
1/2 teaspoon saffron (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley

Steps:

  • Preheat oven to 350 degrees. Place bread crumbs in a large bowl top with 1/2 and 1/2 soak five minutes.
  • Add the rest of the meatball ingredients and mix well.
  • Make golf size balls.
  • Mix flour and paprika together.
  • Coat balls in flour mixture.
  • Place on a parchment lined cookie sheet and bake in preheated oven for 15 minutes.
  • Sauce:.
  • Meanwhile heat oil in a large pan.
  • Saute onions, garlic, ginger five minutes.
  • Add rest of sauce ingredients except parsley and simmer 5 minutes.
  • Add baked meatballs and simmer 5 minutes this sauce with extra broth or water.
  • Garnish with parsley.
  • Can be eaten with toothpicks or placed in lettuce as wraps.

½ cup bread crumbs
1 egg
2 (10.5 ounce) cans condensed vegetable soup
1 (12 fluid ounce) can evaporated milk

Steps:

  • In a large bowl, combine ground turkey, bread crumbs and egg. Mix well, and shape into balls about 1 1/2 inches in diameter.
  • Preheat a large skillet over medium heat. Cook meatballs until evenly brown on all sides, about 5 minutes. Stir in condensed soup and evaporated milk. Cook over medium heat until meatballs are no longer pink, approximately 15 minutes.
