Ground Chicken Meatballs with Sweet Peanut Sauce image

1 pound ground chicken
½ cup chopped cilantro
¼ cup dry bread crumbs
¼ cup grated onion
2 cloves garlic, grated
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons vegetable oil
¼ cup peanut butter
4 tablespoons sesame oil
3 tablespoons white sugar
2 tablespoons soy sauce
2 tablespoons chopped peanuts, or to taste
toothpicks

Steps:

  • Mix chicken, cilantro, bread crumbs, onion, garlic, salt, and pepper; roll tablespoonfuls of the mixture into balls.
  • Heat oil in a skillet over medium heat. Add meatballs and cook until no longer pink in the center, 6 to 8 minutes.
  • Mix peanut butter, sesame oil, sugar, and soy sauce together in a microwave-safe bowl. Microwave until sauce is heated through, about 1 minute.
  • Toss meatballs with 1/2 of the sauce. Sprinkle with peanuts. Serve with toothpicks and remaining sauce for dipping.

1 lb ground turkey
1/2 cup low sodium chicken broth, preferably homemade
1 tablespoon fennel seed, toasted and crushed until coarsely ground
1/2 teaspoon red pepper flakes, ground if desired
kosher salt & freshly ground black pepper
olive oil, for drizzling meatballs and serving
Broccolini, blanched to serve
chopped cilantro, for serving
crushed red pepper flakes, for serving (optional)
2/3 cup coconut milk, from a well-shaken can
2 tablespoons natural-style peanut butter
2 teaspoons honey
kosher salt
1 tablespoon fresh lemon juice, plus additional if desired
1 tablespoon roughly chopped cilantro
1 teaspoon dried oregano

Steps:

  • Make Meatballs:.
  • Preheat broiler.
  • In a large bowl, combine turkey, chicken stock, oregano, fennel seeds, red pepper flakes, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Mix gently with your hands until well combined. Transfer to refrigerator for at least 1 hour or freezer for 30 minutes, until well-chilled.
  • Form 1-1/2 inch balls, using two spoons or a 1 3/4-inch ice cream scoop. Balls will be about 1 1/2 ounces each.
  • Place formed balls on a sheet pan lightly coated with olive oil. Drizzle meatballs lightly with olive oil. Transfer to broiler and cook until golden and just cooked through, about 7-8 minutes. Serve with peanut sauce, blanched brocollini, and a drizzle of olive oil. Garnish with cilantro and crushed red pepper flakes (if desired) and serve.
  • Makes Peanut Sauce:.
  • Combine coconut milk, peanut butter, honey, and 1/4 teaspoon salt in a small saucepan. Bring to a simmer over medium heat and cook, stirring, for 3 minutes. Add lemon juice. Cook for an additional 5 minutes, taste and adjust seasoning with additional salt or lemon juice, and set aside until ready to serve.

1 green onion, thinly sliced
1 minced clove of garlic
1 egg, lightly beaten
1-ounce fresh bread crumbs
2 tablespoons grated Parmesan cheese, plus extra to serve on the side for grating
1 pound ground turkey or chicken
5 tablespoons olive oil
2 cups tomato sauce (recipe above)
1 pound perciatelli pasta
Salt and pepper to taste
Parmesan cheese-to serve on the side for grating

Steps:

  • Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.
