HUNGARIAN MEATBALLS WITH MUSHROOM GRAVY

Hungarian Meatballs With Mushroom Gravy image

Hungarian style comfort food! Great when you really want to fill your belly. My own creation but all of the elements are there to make this a Hungarian treat -- garlic, paprika, mustard, thyme, dill, white pepper, and sour cream. I use all dried herbs. You could certainly use fresh but your measurements would have to be altered.

Categories     Meat

Time 35m

Yield 6 serving(s)

Number Of Ingredients 25

1 lb ground beef
1 garlic clove, minced
1/2 shallot, minced
1 teaspoon paprika
1/2 teaspoon mustard powder
1/4 teaspoon thyme
1/2 teaspoon dill
1 tablespoon Worcestershire sauce
1 cup fresh breadcrumb
salt
white pepper
olive oil
butter
8 ounces mushrooms
1/2 teaspoon paprika
1/2 teaspoon mustard powder
1/4 teaspoon thyme
1/2 teaspoon dill
white pepper
salt
olive oil
3 tablespoons butter
3 tablespoons flour
2 cups beef broth
1 cup sour cream

Steps:

  • Combine all ingredients for meatballs in a bowl except for butter and olive oil. Form into one inch balls.
  • Heat pan on medium with olive oil and butter. (A few drizzles of oil, a few pats of butter.) Brown meatballs on all sides and reserve.
  • In a deep sauce pan, heat olive oil over medium high. Add mushrooms and spices for gravy. Saute until browned. Add butter and flour. Cook for one minute. Slowly add beef broth and stir until smooth and thickened. If you are worried about lumps you can reserve some of the broth and make a slurry with that and the flour.
  • When gravy is thickened add the finished meatballs to reheat. Stir in sour cream and heat through. Sprinkle with fresh parsley if you like.
  • These go great with wide egg noodles or mashed potatoes.

SWEDISH TURKEY MEATBALLS

Swedish Turkey Meatballs image

I've tried a few different Swedish Meatballs recipes and also the sauce packets they sell at the stores but I've never been happy with the results. One night I really wanted to make Swedish Meatballs, and after looking on multiple websites for recipes, I finally gave up and made up my own. It turned out delicious!

TURKEY MEATBALLS WITH MUSHROOM GRAVY

Turkey Meatballs With Mushroom Gravy image

This is a yummy, easy and healthy recipe born out of the need for something flavorful but within my "cleanse" diet guidelines. Though I used the 85/15 ground turkey, you can use the leaner, and save some fat calories. The mushroom gravy sits great on top of the meatballs which you can serve over brown rice, (how I ate it) or over egg noodles, (how my husband ate it). I think this would be a real treat with portabella mushrooms for the gravy, but didn't have them on hand. Hope you enjoy it!

Categories     One Dish Meal

Time 1h10m

Yield 8 Meatballs, 4 serving(s)

Number Of Ingredients 14

1 lb ground turkey
3 tablespoons brown rice flour
1 celery rib
1/4 cup red onion
3 garlic cloves
1 teaspoon ground mustard
2 egg whites
1 tablespoon italian seasoning
1 teaspoon cumin
1/2 teaspoon ground black pepper
1/2 teaspoon sea salt
1 (4 1/2 ounce) jar sliced mushrooms (drained)
1 teaspoon extra virgin olive oil
1 cup chicken broth or 1 cup vegetarian broth

Steps:

  • Preheat oven to 350 degrees F.
  • Chop celery and red onion thinly, nearly a mince. Mince the garlic. Reserve 1minced clove for mushroom gravy.
  • Combine the ground turkey, onion, celery, (2) garlic cloves, spices and egg whites together in a medium sized mixing bowl.
  • Add 2 tbs of the brown rice flour. (You could use about a 1/4 to 1/2 a cup of cooked brown rice in place of flour). After mixing all ingredients very well, shape meat mixture by hand into 8 - 2" to 2 1/2" meatballs.
  • Coat a 9" x 12" casserole dish with vegetable oil spray and place the meatballs into the casserole. Place in the oven and bake for 1 hour.
  • 15 minutes before the meatballs are finished baking, start the mushroom gravy by placing the 3rd minced clove of garlic into a saute' pan with the olive oil and saute' until tender. Add the mushrooms and saute' for a few minutes over medium heat and then gradually add the brown rice flour and stir until there is a coating on the mushrooms. Add the chicken broth and reduce heat. Stir until slightly thickened and let the broth reduce to a gravy at a simmer, about 5 minutes, stirring as necessary.
  • Serve the meatballs and mushroom gravy over hot brown rice or egg noodles.

TURKEY MUSHROOM GRAVY

Turkey Mushroom Gravy image

I have been making Thanksgiving dinner every year since the 1970's. I have tried every kind of turkey gravy. I created this recipe about 15 years ago. It is everyone's favorite, even the people who hate mushrooms. Serve with roasted turkey and cornbread stuffing!

Provided by ranch_maven

Categories     Side Dish     Sauces and Condiments Recipes     Gravy Recipes     Turkey Gravy Recipes

Time 2h30m

Yield 20

Number Of Ingredients 10

2 cups unsalted butter
1 pound portobello mushrooms, wiped clean with paper towels
2 pounds whole white mushrooms, wiped clean with paper towels
1 cup all-purpose flour
4 (14.5 ounce) cans chicken broth
1 ½ cups turkey pan drippings
2 cups chopped onions
1 cup chopped celery
salt and pepper to taste
¼ teaspoon cayenne pepper

Steps:

  • Melt butter in a large stock pot over medium-low heat, and cook the mushrooms until they are browned and the butter is clear, 1 to 1 1/2 hours. Remove the mushrooms, coarsely chop them, and set aside. There should be about 1 cup of butter left in the stock pot; whisk the flour into the butter, and gently cook over low heat until the flour mixture turns mahogany brown in color, about 20 minutes. Whisk in the chicken broth; bring the mixture to a simmer to thicken the stock.
  • Pour the turkey drippings into a saucepan, then cook and stir the onions and celery in the drippings over medium-low heat until the onions begin to turn brown, about 20 minutes. Stir the drippings and vegetables into the thickened stock. Bring the gravy to a gentle boil, reduce heat, and simmer for about 20 minutes to blend the flavors. Stir in the chopped mushrooms, then season to taste with salt, black pepper, and cayenne pepper.

  • Add mushrooms to the same food processor and pulse intermittently for about 1 minute to break up the mushrooms into a ground consistency. Pulse the mushrooms slowly, making sure they do not become a puree (see NOTE 2). • Prepare the meatballs first. Grate the onion into a large mixing bowl, then add the ground turkey meat, egg, bread crumbs, salt, pepper, coriander, parsley and dill. Using a spatula or your hands, gently combine the ingredients together, just until uniform. Do not overmix the meatball mixture. Using a 1 tablespoon (15 ml) scoop, measure out the meat mixture for each meatball and gently roll to shape into a ball. Watch my video recipe to see how it's done.
  • Preheat a large saute pan over medium-high heat and add a few tablespoons of cooking oil. Once the oil is hot, add the meatballs into pan. Fry the meatballs for 7 to 8 minutes, turning every few minutes, until they're well browned all over. The meatballs do not need to be thoroughly cooked; they will finish cooking in the sauce. Remove the browned meatballs onto a clean tray and set aside.
  • Reduce the pan heat to medium and add in the butter. Once melted, add the sliced mushrooms and shallot. Saute the mixture for about 5 minutes, until the mushrooms are lightly browned. Add in the garlic, salt, pepper and paprika next and cook for another minute. Next, add in the wine (or lemon juice) and cook for a few minutes, until the wine is reduced. Add in the flour, stir until well combined and cook for 1 minute.
  • Begin adding the milk gradually, whisking it into the mushroom mixture. Stir in the chicken broth and return the meatballs to the pan. Bring the sauce up to a simmer over medium heat and simmer for 8 to 10 minutes, until the sauce is thickened. The sauce will continue to thicken once it's removed from heat. Sprinkle the dish with more fresh parsley and dill, then serve over prepared mashed potatoes, pasta or egg noodles.
