TURKEY PORCUPINE MEATBALLS

Number Of Ingredients 11

1 cup cooked brown rice
1 tablespoon olive oil
1/2 small yellow onion (diced)
1 clove garlic (minced)
1 stalk celery (diced)
16 ounces lean ground turkey
2 tablespoons dried cranberries (chopped)
3/4 cup spinach leaves (stems removed, chopped)
2 teaspoons Worcestershire sauce
salt and pepper to taste
2 large eggs

Steps:

  • Preheat oven to 350.
  • In a skillet, saute onion, celery, and garlic in oil until soft. Transfer to a large bowl and allow to cool slightly.
  • Add all other ingredients and mix well.
  • Shape into 24 meatballs and place on a parchment paper lined baking sheet.
  • Bake for 15 to 18 minutes or until internal temperature reaches 165 degrees.

This is, by far, the best recipe for porcupine meatballs I have ever had. This is a recipe that was given to my mom when she married back in 1970. The recipe also includes cooking directions for stovetop cooking or cooking in the oven. Hope you enjoy as much as our family does.

1 pound ground beef
½ cup uncooked white rice
½ cup water
⅓ cup chopped onion
1 teaspoon salt
½ teaspoon celery salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
1 (15 ounce) can tomato sauce
1 cup water, or more as needed
2 teaspoons Worcestershire sauce

Steps:

  • Mix the ground beef, rice, 1/2 cup water, onion, salt, celery salt, garlic powder, and black pepper in a bowl. Roll the mixture into 12 meatballs.
  • Heat a large skillet over medium-high heat and add the meatballs. Cook meatballs, turning occasionally, until evenly browned. Drain and discard any excess grease. Pour the tomato sauce, 1 cup water, and Worcestershire sauce into the skillet; reduce heat to medium-low. Cover and simmer until the meatballs are no longer pink in the center and the rice is tender, about 45 minutes. Stir in more water if the sauce becomes too dry.

2 (1 ounce) envelopes dry onion soup mix
water as needed
2 pounds ground turkey
1 (6.8 ounce) package beef flavored instant rice mix (e.g. Rice A Roni)
2 eggs, beaten

Steps:

  • In slow cooker, combine onion soup mix with enough water to fill slow cooker halfway. Set slow cooker to 350 degrees F (175 degrees C) until soup boils.
  • Meanwhile, to make meatballs: In a large bowl combine turkey with rice and flavoring mix and mix together; then add egg beat and mix well. Form mixture into 2 inch balls and brown in a large skillet over medium high heat.
  • Once soup is boiling, add browned meatballs to slow cooker and cook for 3 hours on medium setting, 6 hours on low setting.

This is one of my favorite meals. We make it at least once a month. I love to serve it with cream cheese corn and green beans. The original recipe for Porcupine Meatballs calls for ground beef, but after we tried ground turkey, we never went back.

1 lb lean ground turkey
1/2 cup Minute Rice
1/2 cup water
1/2 onion, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon celery salt
1 (15 ounce) can tomato sauce (large can)
1 (8 ounce) can tomato sauce (small can)
1 tablespoon Worcestershire sauce
1 cup water

Steps:

  • Preheat oven to 375.
  • In a large bowl, mix the ground turkey, rice, 1/2 cup water, onion, garlic powder, pepper and salts.
  • Form into golf ball size meatballs and place in a 2 quart casserole dish.
  • In a bowl, mix the tomatoes sauce, worchesterchire and 1 cup water.
  • Pour over the meatballs. Cover and bake for 1 hour.

1/2 cup grated Romano or Parmesan cheese
1 large egg, beaten
1 tablespoon ketchup
1 tablespoon minced fresh parsley
1 teaspoon minced fresh oregano

1 teaspoon seafood seasoning
1 pound ground turkey
1/4 pound ground pork
1 can (29 ounces) tomato sauce
Hot cooked pasta, Parmesan cheese, and chopped fresh parsley, optional

Steps:

  • Pulse bread in a food processor until fine crumbs form. Transfer to a large bowl. Combine bread crumbs with the next 7 ingredients. Add turkey and pork; mix lightly but thoroughly. With wet hands, shape into twenty-four 1-1/2-in. balls., Transfer to a 3- or 4-qt. slow cooker. Pour sauce over top; stir gently. Cook, covered, on low until meatballs are cooked through, 4-5 hours. If desired, serve with hot cooked pasta and sprinkle with parsley.

1 pound(s) ground turkey
1 - egg, beaten
1 tablespoon(s) vegetable oil
2 1/2 cup(s) water

Steps:

  • Combine rice-vermicelli mix, ground turkey and egg. Shape into twenty 1-1/4 in. meatballs.
  • In large skillet, over medium-high heat, brown meatballs in oil, drain.
  • Slowly stir in water and Special Seasonings. Bring to a boil. Cover; reduce heat to low. Simmer 30 inutes or until meatballs are cooked. All of the water should be gone by then.
  • Enjoy.
