Steps:
- Preheat oven to 350.
- In a skillet, saute onion, celery, and garlic in oil until soft. Transfer to a large bowl and allow to cool slightly.
- Add all other ingredients and mix well.
- Shape into 24 meatballs and place on a parchment paper lined baking sheet.
- Bake for 15 to 18 minutes or until internal temperature reaches 165 degrees.
MELINDA'S PORCUPINE MEATBALLS
This is, by far, the best recipe for porcupine meatballs I have ever had. This is a recipe that was given to my mom when she married back in 1970. The recipe also includes cooking directions for stovetop cooking or cooking in the oven. Hope you enjoy as much as our family does.

- Mix the ground beef, rice, 1/2 cup water, onion, salt, celery salt, garlic powder, and black pepper in a bowl. Roll the mixture into 12 meatballs.
- Heat a large skillet over medium-high heat and add the meatballs. Cook meatballs, turning occasionally, until evenly browned. Drain and discard any excess grease. Pour the tomato sauce, 1 cup water, and Worcestershire sauce into the skillet; reduce heat to medium-low. Cover and simmer until the meatballs are no longer pink in the center and the rice is tender, about 45 minutes. Stir in more water if the sauce becomes too dry.

TURKEY MEATBALLS
This is a main dish, ground turkey meatballs made with instant rice and simmered in onion soup. Tastes great!! Serve with veggies - the rice is already inside!

- In slow cooker, combine onion soup mix with enough water to fill slow cooker halfway. Set slow cooker to 350 degrees F (175 degrees C) until soup boils.
- Meanwhile, to make meatballs: In a large bowl combine turkey with rice and flavoring mix and mix together; then add egg beat and mix well. Form mixture into 2 inch balls and brown in a large skillet over medium high heat.
- Once soup is boiling, add browned meatballs to slow cooker and cook for 3 hours on medium setting, 6 hours on low setting.

This is one of my favorite meals. We make it at least once a month. I love to serve it with cream cheese corn and green beans. The original recipe for Porcupine Meatballs calls for ground beef, but after we tried ground turkey, we never went back.

- Preheat oven to 375.
- In a large bowl, mix the ground turkey, rice, 1/2 cup water, onion, garlic powder, pepper and salts.
- Form into golf ball size meatballs and place in a 2 quart casserole dish.
- In a bowl, mix the tomatoes sauce, worchesterchire and 1 cup water.
- Pour over the meatballs. Cover and bake for 1 hour.

- Pulse bread in a food processor until fine crumbs form. Transfer to a large bowl. Combine bread crumbs with the next 7 ingredients. Add turkey and pork; mix lightly but thoroughly. With wet hands, shape into twenty-four 1-1/2-in. balls., Transfer to a 3- or 4-qt. slow cooker. Pour sauce over top; stir gently. Cook, covered, on low until meatballs are cooked through, 4-5 hours. If desired, serve with hot cooked pasta and sprinkle with parsley.

This can be made with turkey or beef. My daughter was wanting this recipe, saying she missed her grandma's and my cooking. If you have left over meatballs, they make great sandwiches.

Steps:
- Combine rice-vermicelli mix, ground turkey and egg. Shape into twenty 1-1/4 in. meatballs.
- In large skillet, over medium-high heat, brown meatballs in oil, drain.
- Slowly stir in water and Special Seasonings. Bring to a boil. Cover; reduce heat to low. Simmer 30 inutes or until meatballs are cooked. All of the water should be gone by then.
- Enjoy.
