- Preheat oven to 350°. In a large saucepan, bring broth and butter to a boil. Remove from heat. Add stuffing mix; stir until moistened. Stir in turkey, spinach and cranberries., Transfer to a greased 11x7-in. baking dish. Sprinkle with cheese. Bake, uncovered, 10-15 minutes or until cheese is melted.

- Prick potatoes in several places with fork; place on microwaveable plate. Microwave on HIGH 11 min. or until tender. Meanwhile, combine remaining ingredients.

LOADED SWEET POTATOES WITH GROUND TURKEY, MUSHROOMS AND SPINACH
This dish is my take on a classic baked potato. I ate it pretty often while doing Whole30 because it filled me up without sacrificing flavor and is so rich and creamy thanks to coconut milk. Fluffy sweet potatoes are stuffed with a simple turkey, mushroom and spinach filling that is perfect for the fall.

Steps:
- Preheat the oven to 425 degrees F.
- Poke the sweet potatoes all over with a fork. Place on a sheet pan and bake until soft and easily pierced with a knife, 50 to 60 minutes.
- While the potatoes roast, make the filling: Heat a large nonstick skillet over medium heat. Add the oil, then add the mushrooms in a flat layer. Bump the heat up to medium high and cook the mushrooms, undisturbed, for 5 minutes. Stir and let cook, undisturbed, for 5 more minutes.
- Repeat until softened and golden brown, about 12 minutes total. Season with salt and pepper.
- Reduce the heat to medium. Add the garlic and cook, stirring, for 2 minutes. Add the turkey, breaking it up with a spoon, and cook until cooked through and golden brown, 8 to 10 minutes; season with more salt and pepper.
- Reduce the heat to low and add the coconut milk, Dijon, sage and rosemary. Stir together then simmer until thickened, 8 to 10 minutes. Taste for seasoning and add more salt or pepper, if needed.
- At 5 minutes before you're ready to serve, add the broccoli and cook until bright green and tender-crisp. If the mixture looks too thick, stir in up to 1/2 cup water to thin it out. During the final 2 minutes of cooking, add the spinach and let wilt.
- For each serving, halve a sweet potato lengthwise and fluff up the potato with a fork, leaving the skin intact. Season with salt and pepper then stuff with the turkey filling.
SPINACH AND TURKEY STUFFED SHELLS
Use fresh spinach if you wish. Ground beef, veal or pork may be used instead of turkey. It is up to your personal taste!

- Cook spinach according to package directions.
- Drain and squeeze out excess moisture.
- Brown ground turkey in olive oil.
- Preheat oven to 375°F.
- Grease 12x8-inch baking dish.
- Combine spinach, parsley, crumbs, eggs, garlic, and cheese in a large bowl; mix well.
- Add turkey and mix well.
- Fill shells with this mixture.
- Spread 1 cup sauce on bottom of baking dish.
- Add shells and cover with remaining sauce.
- Cover with foil.
- Bake 35-40 minutes until warmed through and bubbly.

- Preheat the oven to 400 degrees F (200 degrees C). Place potatoes on a baking sheet; rub with canola oil.
- Bake in the preheated oven until easily pierced with a knife, about 1 hour. Reduce oven temperature to 350 degrees F (175 degrees C).
- Cut potatoes in half lengthwise. Scrape flesh into the bowl of a stand mixer, being careful not to tear the skin. Leave a small rim of flesh in the skin intact. Place hollowed-out potato skins back on the baking sheet.
- Beat butter, gravy, cream cheese, salt, and pepper into the potato flesh on low speed. Add 1 cup Cheddar cheese; mix for a few seconds. Remove bowl from the stand mixer; fold in turkey, stuffing, and green onions using a spatula.
- Fill potato skins with the mixture. Sprinkle remaining 1/4 cup Cheddar cheese on top.
- Return to the oven; bake until warmed through, about 15 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
- Spread sweet potatoes evenly over the bottom of the prepared dish.
- Heat a large saucepan over medium heat. Add turkey sausage and spinach; cook and stir until turkey is browned and spinach is wilted, about 5 minutes. Remove from heat. Add to sweet potatoes.
- Crack egg whites into a large bowl; add almond milk, sage, red pepper flakes, thyme, oregano, basil, nutmeg, salt, and pepper. Stir well. Pour egg mixture over the top of the casserole. Sprinkle with Parmesan cheese.
