TURKEY TEA SANDWICHES WITH BASIL MAYONNAISE
Basil mayonnaise is the secret to these tasty little sandwiches. Keep any extra mayo in the fridge to spread on other sandwiches, stir into egg salad or layer on pizza crust before topping it with other ingredients. -Lara Pennell, Mauldin, South Carolina

Steps:
- For the tomatoes: Preheat the oven to 400 degrees F.
- On a small rimmed baking sheet, spread the tomatoes, olive oil, salt, garlic and basil. Toss well to coat. Roast until the tomatoes are popped and beginning to brown, about 25 minutes. Allow to cool slightly.
- For the spread: Mix together the mayonnaise and mustard in a small bowl.
- For the sandwich: Lay out the bread and spread the mayonnaise-mustard mixture on each slice. Working 2 slices at a time, place 2 lettuce leaves on one slice and about 6 roasted tomatoes on the opposite slice. Ribbon 3 slices of turkey on the lettuce. Place the 2 halves together and secure with 2 toothpicks with a cornichon on each one. Continue with the remaining ingredients. Cut in half before serving.

Steps:
- For the scallion cream cheese, combine the cream cheese, scallions and the salt and pepper in an electric mixer fitted with a paddle attachment. Do not whip.
- For the sandwiches, have the store slice the bread lengthwise on a meat slicer into 1/4-inch-thick slices. (If that isn't possible, you can slice it crosswise with a very sharp knife.)
- Lay out 8 slices of bread and spread them all with a thin layer of scallion cream cheese. Place a single layer of turkey on half the slices, cutting the edges to fit the bread. Place the basil leaves randomly on top of the turkey. Top with the other 4 slices of bread, cream cheese side down. Lay the sandwiches on a baking sheet covered with parchment paper, cover with damp paper towels and wrap the sheet with plastic. Refrigerate until the cream cheese is cold and firm. Place the sandwiches on a cutting board and, with a very sharp knife, cut off the crusts. Cut each large sandwich in half crosswise, and then cut each half diagonally, twice, to make a total of 8 small triangles. (If the bread was cut crosswise, follow the assembly directions, then cut off the crusts and cut diagonally, twice, to make 4 small triangles.) Serve chilled.
TURKEY AND APPLE SANDWICHES WITH MAPLE MAYONNAISE
Here's a new fall classic for a young student's lunch box: a fresh sandwich of turkey and apple, bound together with mayonnaise spiked with maple syrup. For a kick, swirl a little Sriracha sauce into the mayonnaise.
