Turkish Delight image

This dessert is slightly exotic and is known by many people who have read the book 'The Lion, The Witch, and The Wardrobe'. This would do well for a tea party, a holiday party, or even if you just wanted to surprise someone.

1 ½ cups water
3 cups granulated sugar
3 tablespoons light corn syrup
½ cup orange juice
3 tablespoons orange zest
3 (.25 ounce) envelopes unflavored gelatin
¾ cup cornstarch
½ cup cold water
1 tablespoon vanilla extract
¾ cup chopped pistachio nuts
confectioners' sugar for dusting

Steps:

  • Bring 1 1/2 cups water, sugar, and corn syrup to a boil over medium-high heat in a large saucepan. Cook, stirring frequently, until the temperature reaches 240 degrees F (115 degrees C) on a candy thermometer. Set aside and keep hot.
  • Stir together orange juice and orange zest, sprinkle with gelatin, and set aside. In a small bowl, dissolve cornstarch in 1/2 cup cold water, then stir into hot syrup. Place over medium-low heat, and simmer, stirring gently, until very thick.
  • Remove syrup from heat, stir in orange juice mixture, vanilla, and pistachios. Sprinkle a 8x8-inch pan generously with confectioners' sugar. Pour the Turkish delight into the pan, and let cool in a cool, dry place (not the refrigerator) until set, 3 to 4 hours.
  • When cool, sprinkle the top with another thick layer of powdered sugar. Cut into 1-inch squares, and dredge each well with confectioners' sugar. Store at room temperature in an airtight container.

My fiancee loves Turkish delight and rose flavoured desserts. I found this recipe online from Julie LeClerc (love her cookbooks!)

125 g butter
3/4 cup sugar
3 eggs
1 teaspoon rose water
1/2 cup sour cream
1 cup plain flour
1 teaspoon baking powder
12 pieces traditional rose-flavoured Turkish Delight

Steps:

  • Preheat oven to 180ºC.
  • Grease and flour a 12-hole standard muffin pan (or 36 mini) or line with individual paper cases.
  • Cream butter and sugar until pale. Beat in eggs, rose water and sour cream.
  • Fold in sifted dry ingredients.
  • Pour into prepared tins and poke a piece of Turkish delight into each (cut Turkish delight to fit mini size).
  • Bake for 25 minutes or 15 minutes for mini size or until a skewer inserted into the cake part (not the Turkish delight part) comes out clean. Makes 12 (or 36 mini) cup cakes.

440 g sugar (2 cup)
250 ml water (1 cup)
3 tablespoons gelatin
1/2 teaspoon citric acid
1 teaspoon rose water
food coloring (as desired)
icing sugar (for coating)

Steps:

  • Stir the sugar, water and gelatine in a saucepan over low heat until dissolved.
  • Bring to a boil.
  • Boil without stirring for 20 minutes.
  • Add the citric acid, rose water and food colouring.
  • Pour into a lightly greased tin.
  • Allow to cool and set.
  • Cut into squares.
  • Roll in icing sugar.
  • Serve and relish the delight!

Sift the flours and cocoa together and fold in alternately with the milk. Stir through the Turkish delight. Divide the mixture evenly among the cases. Bake for 18–20 minutes, or until a skewer comes out clean when inserted into the centre of a cake. Transfer onto a wire rack to cool.
  • To make the rosewater icing, place the icing sugar in a large bowl. Add the rosewater and 1½ tablespoons of boiling water, and stir until smooth (add a little more water if necessary to make a pouring consistency). Add the food colouring (add more food colouring if desired) and stir until well combined. Spread the icing over each cake, then decorate with pieces of Turkish delight.
