Open Faced Turkey Stuffing Patty with Gravy and Cranberry Sauce image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 2h45m

Yield 4 servings

Number Of Ingredients 21

4 slices bacon
2 cups Old Fashioned Turkey Stuffing, recipe follows
Canola oil, if needed
12 fresh sage leaves
8 ounces leftover turkey meat
1 cup leftover turkey gravy, heated through
1/2 cup Simple Cranberry Sauce, recipe follows
1 stick unsalted butter, melted, plus more for greasing
3 large loaves white bread, cut into 1/4-inch cubes
Oil, for cooking
4 celery stalks, finely chopped
2 medium yellow onions, finely chopped
4 cups low-sodium chicken broth, or turkey stock made from giblets
2 tablespoons poultry seasoning
2 large eggs
Kosher salt and freshly ground black pepper
Two 14-ounce cans cranberry sauce
1 cup orange juice
1/2 teaspoon ground ginger
Pinch ground cinnamon
Pinch kosher salt

Steps:

  • Cook the bacon in a cast-iron skillet over medium-high heat until extra crispy, about 10 minutes. Transfer the bacon to a paper-towel-lined-plate to drain and reserve the fat in the skillet.
  • Meanwhile pack a 1 cup dry measure tightly with a 1/2 cup of the Old Fashioned Turkey Stuffing. Dump the stuffing onto a baking sheet and press down into a 4-inch-wide-cake, using a flat spatula. Repeat until you have 4 patties.
  • Heat the reserved bacon fat in the skillet over medium heat. Carefully lay 2 patties in the skillet and cook until golden brown, 3 to 4 minutes each side. Transfer the patties to a plate and repeat with the remaining 2 patties.
  • Add oil to the skillet if needed. Add the sage and fry, about 30 seconds. Transfer the sage to a paper-towel-lined-plate using a slotted spoon.
  • Divide the turkey meat onto each patty and pour gravy over top. Crumble 1 crispy bacon slice over the turkey. Dollop with the Simple Cranberry Sauce and garnish with the sage.
  • Preheat the oven to 350 degrees F. Grease two 14-by-9-inch baking dishes. Arrange the bread cubes in a single layer on a baking sheet and bake until lightly browned, about 8 minutes.
  • Heat some oil in a large skillet over medium-high heat. Add the butter, celery and onions and cook until the vegetables are lightly browned and translucent. Set aside to cool.
  • Add the bread cubes, celery mixture, broth, seasoning and eggs in a large bowl. Mix well until moist and sprinkle with salt and pepper. Divide between the 2 prepared baking dishes. Bake until the top of the stuffing is slightly crispy, about 40 minutes.
  • Add the cranberry sauce, orange juice, ginger, cinnamon and salt into a small saucepan. Bring to a boil and reduce to a simmer. Cook, uncovered, stirring often to incorporate flavors, about 15 minutes. Remove the saucepan from the heat and cool.

Dressing Griddle Cakes with Turkey and Cranberry Barbecue Sauce image

Provided by Trisha Yearwood

Time 45m

Yield 6 servings

Number Of Ingredients 14

1 tablespoon olive oil
1/2 onion, chopped
1/4 teaspoon smoked paprika
1 cup leftover cranberry sauce
1/2 cup ketchup
2 tablespoons dark brown sugar
1 tablespoon apple cider vinegar
1 teaspoon Worcestershire sauce
4 cups leftover dressing
2 tablespoons chopped fresh Italian parsley
1 to 2 large eggs (see Cook's Note)
1 tablespoon unsalted butter
1 cup chicken broth, turkey broth or water
About 12 ounces leftover sliced turkey

Steps:

  • Heat the oil in a small saucepan over medium heat. Add the onion and cook, stirring occasionally, until softened, about 8 minutes. Add the paprika and cook, stirring, 30 seconds. Add the cranberry sauce, ketchup, sugar, vinegar, Worcestershire and 1/4 cup water. Bring to boil over medium-high heat, then reduce the heat slightly and simmer until slightly thickened and the flavors have blended, about 10 minutes. Let cool slightly, then transfer to a blender or food processor (be careful when blending hot liquids) and blend until smooth. Transfer to a bowl and set aside.
  • Put the dressing in a large bowl with the parsley and egg and mix well with your hands. Divide the mixture into 6 portions and form each into a flattened 3-inch cake. Put the cakes on a plate and refrigerate to set, about 10 minutes.
  • Melt the butter over medium heat in a skillet. Add the dressing cakes and cook, turning once, until hot and golden brown on both sides, 3 to 4 minutes per side. Transfer the cakes to individual serving plates. Add the broth to the skillet, then the sliced turkey and cook gently until just warmed. Serve the cakes topped with the turkey and cranberry barbecue sauce.

HERB-BUTTERED TURKEY, ROASTIES & CRANBERRY SAUCE GRAVY

Herb-buttered turkey, roasties & cranberry sauce gravy image

The potatoes and turkey crown cook together and there's no need to baste - and it's delicious. Easy and stress free

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 2h30m

Number Of Ingredients 10

4 garlic cloves , crushed
2 handfuls parsley leaves, finely chopped
100g butter , softened
3kg turkey crown
1 ½kg new potato , halved if large, quartered if huge
2 tbsp plain flour
3 tbsp chunky cranberry sauce
splash port
600ml chicken stock
1 tbsp soy sauce (optional)

Steps:

  • Heat the oven to 200C/fan 180C/gas 6. Tip the garlic, parsley and butter together in a bowl, season generously with black pepper and a pinch of salt, then beat with a wooden spoon or squish through your fingers until everything is combined. The butter can be prepared up to a day ahead and chilled or made two weeks ahead and frozen. Soften before using.
  • Place the turkey crown on a board with the thick part of the breast facing away from you. Use your hands to make two pockets between the skin and the meat, then smear the flavoured butter beneath the skin and all over the breast and work it down so that the breast is completely covered. 3 Tip the new potatoes into a large roasting tray. Sit the turkey on top, skin side up, then roast for 30 mins. Remove from the oven, sit the turkey on a board and give the potatoes a good shake. Then place the turkey back in the tin, spoon over some of the buttery juices and continue to cook for another 40-50 mins until the turkey is dark golden. Transfer the turkey to a board to rest, loosely covered in foil, then continue to cook the potatoes for 20 mins to brown. Use a slotted spoon to scoop the potatoes into a serving dish, reserving the buttery juices in the pan. Put the potatoes to one side and keep warm.
  • To make the cranberry gravy, place the roasting pan on a lowish heat and stir in the flour. Let everything sizzle and brown, then add the cranberry sauce and a splash of port. Sizzle everything for a few mins until really sticky, then stir in the stock, bring to the boil and cook until thick or to your liking, seasoning to taste. If the gravy is on the pale side or a bit too sweet, stir in a splash of soy sauce.

TURKEY SALISBURY STEAK WITH CRANBERRY-ORANGE GRAVY

Turkey Salisbury Steak with Cranberry-Orange Gravy image

I made this one night on a whim, not knowing what to do with the ground turkey I had taken out of the freezer. It came out amazing! I served it over baked stuffing and with green bean casserole. My two picky eaters (8 and 5) loved this recipe.

Provided by Tasha Shuten

Categories     Meat and Poultry Recipes     Turkey     Ground Turkey Recipes

Time 40m

Yield 6

Number Of Ingredients 11

1 pound ground turkey
⅔ cup bread crumbs, or to taste
1 egg, beaten
1 ½ teaspoons onion powder, or to taste
1 ½ teaspoons garlic powder, or to taste
1 ½ teaspoons ground black pepper, or to taste
1 (12 ounce) package fresh cranberries
1 cup orange juice
3 tablespoons granular no-calorie sucralose sweetener (such as Splenda®)
¼ cup water
1 tablespoon cornstarch

Steps:

  • Mix ground turkey, bread crumbs, egg, onion powder, garlic powder, and black pepper together in a large bowl; set aside for 5 minutes.
  • Stir cranberries, orange juice, and sweetener together in a saucepan; bring to a boil. Stir water and cornstarch together in a bowl; stream into the boiling cranberry mixture while stirring. Bring liquid again to a boil and cook until thickened to your desired consistency, 5 to 10 minutes.
  • Heat a large skillet over medium heat. Shape the turkey mixture into 6 patties. Fry the patties in the skillet until completely browned on the bottom, about 7 minutes. Flip the patties and continue cooking until no longer pink in the center and the juices run clear, 3 to 4 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Pour the cranberry-orange gravy over the patties; bring to a simmer and continue cooking until the sauce thickens further, 3 to 4 minutes more.
