Janet Knorr GOLDEN, ILLINOIS My kids and grandkids love this cheesy pasta dish. I prepare it at least once a month, but it's especially good during cooler months.

6 ounces uncooked spaghetti, broken into thirds
1 pound ground beef
1/4 cup chopped onion
1 jar (14 ounces) spaghetti sauce
2 tablespoons butter
4 teaspoons all-purpose flour
1/4 teaspoon salt
3/4 cup evaporated milk
1/3 cup water
4 ounces process cheese (Velveeta), cubed, divided
2 tablespoons grated Parmesan cheese

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add spaghetti sauce; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain spaghetti; stir into beef mixture. Set aside. , In a small saucepan, melt butter. Stir in flour and salt; gradually stir in milk and water. Bring to a boil; cook and stir until thickened and bubbly. Add 1/2 cup process cheese and Parmesan cheese; stir until melted., Spread half of the spaghetti mixture into a greased 11x7-in. baking dish. Cover with cheese sauce; top with remaining spaghetti mixture and process cheese. , Bake, uncovered, at 350° for 25-30 minutes or until heated through.

1 pound ground beef
1 onion, chopped
1 (32 ounce) jar meatless spaghetti sauce
½ teaspoon seasoned salt
2 eggs
⅓ cup grated Parmesan cheese
5 tablespoons butter, melted
2 cups small curd cottage cheese, divided
4 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Heat a large skillet over medium heat; cook and stir beef and onion until meat is browned and onions are soft and translucent, about 7 minutes. Drain. Stir in spaghetti sauce and seasoned salt.
  • Whisk eggs, Parmesan cheese, and butter in a large bowl. Mix in spaghetti to egg mixture and toss to coat. Place half the spaghetti mixture into baking dish. Top with half the cottage cheese, mozzarella, and meat sauce. Repeat layers. Cover with aluminum foil.
  • Bake in preheated oven for 40 minutes. Remove foil and continue to bake until the cheese is melted and lightly browned, 20 to 25 minutes longer.

7 fluid ounces dry white wine
1/2 pint whipping cream
Tabasco sauce, to taste
3 1/2 ounces mature cheddar cheese, grated
3 1/2 ounces Stilton cheese, crumbled
1 teaspoon dried sage
1 teaspoon dried thyme
2 large plum tomatoes, sliced

Steps:

  • Heat oven to 180°C.
  • Cook pasta according to packet until almost tender. Drain and wash in cold water.
  • In a pan combine the cream, wine and tabasco and gently heat.
  • Whisk in half the cheddar and stilton as well as the dried herbs. Stir until smooth.
  • Place the pasta in a greased oven proof dish and pour over the sauce. Sprinkle the remaining cheese on top.

2 cups shredded part-skim mozzarella cheese, divided
3/4 cup grated Parmesan cheese
1/2 cup grated Romano cheese
3 large eggs, lightly beaten
1 tablespoon olive oil
2 teaspoons garlic powder
Salt and pepper to taste
3-1/2 cups spaghetti sauce

Steps:

  • Cook spaghetti according to package directions; drain. Transfer to a large bowl. 375g fusilli (pasta twists)
200ml dry white wine
300ml whipping cream
few drops Tabasco sauce
100g mature vegetarian cheddar , grated
100g vegetarian stilton , crumbled
1 tsp dried sage
1 tsp dried thyme
4 large plum tomatoes , sliced
2 tbsp chopped fresh parsley

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Bring a large pan of water to the boil and cook the pasta according to pack instructions until almost tender. Drain and rinse under cold water, drain again, then set aside.
  • In a heavy-based pan combine the wine, cream and Tabasco sauce, then gently heat. Gradually add half the cheddar and half the stilton, whisking constantly. Whisk in the sage and thyme and a good sprinkling of black pepper. When the mixture is smooth remove from the heat.
  • Place the pasta in a buttered 1.4 litre/2½ pint ovenproof dish. Pour the cheese and cream mixture over and sprinkle the remaining cheese on top.
  • Cover with foil and bake for 30 mins. Remove the foil and arrange the tomato slices on top. Bake, uncovered, for 10 mins until the tomatoes are softened, the pasta is tender and the sauce has all been absorbed into the pasta. Serve immediately with a crisp winter salad and crusty bread.

½ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
