UGANDAN BUFUKE WITH ONION SAUCE
Here's a wholesome dish from Uganda that is as simple and cheap as it is tasty and filling. The great thing about this dish is you can use up those ingredients that already seem to be in the kitchen, without having to hunt around the specialty grocery shops. Recipe courtesy of africanoz.com.au

Steps:
- Put the kidney beans, mung beans, and peanuts in a large pot and cover with water.
- Gently boil for about 15 minutes until half cooked. Add sweet potatoes, then the salt and pepper to taste, and cook about 20 minutes, until tender(a fork should go gently into the sweet potato cubes).
- Drain water and mash together using a tablespoon of butter.
- Sauce:.
- Fry the onions, tomatoes and chili in a fry pan using hot oil. Before it starts to brown, add the boiling water/stock and gently simmer until the mixture starts to thicken.
- Now, using a cup add the flour then the milk or cream a little at a time stirring to mix with a fork.
- When evenly mixed add this to tomato and onions, stirring over a gentle heat, until the mixture becomes thick.
- Heap the Bufuke onto a large serving dish and pour over your nice thick sauce. Enjoy!

BEEF, BACON AND ONION SAUCE WITH BUCATINI
One recipe for Beef and Tomato Base makes enough for this Beef, Onion and Bacon Sauce with Bucatini recipe as well as the Beef Picadillo later in the week.

- Heat the EVOO in a large skillet over medium to medium-high heat. Add the guanciale, and cook to render the fat, 2 to 3 minutes. Season with black pepper, and then add the garlic, onions and bay leaf and cook until the onions are soft and sweet but not brown. Add the wine and reduce by half, then add the Beef and Tomato Base. Cool and store for a make-ahead meal.
- When ready to serve, reheat over medium heat and remove the bay leaf before serving.
- Bring a large pot of salted water to a boil for the bucatini, and cook the pasta to al dente. Reserve a cup of the starchy cooking liquids. Drain the pasta, and return it to the pot with the butter and half of the reheated sauce. Toss with the cheese to combine, and serve in shallow bowls. Top with additional sauce and cheese.
- Heat the oil in a large pan over medium-high heat. When the oil is very hot, pat the meat dry with paper towels and add half of the beef to the pan. Crumble the beef with a potato masher or wooden utensil. Cook to develop a deep brown color, season with salt and pepper, and then remove to a plate. Repeat the process with the remaining beef. Add the tomato paste to the pan and stir until fragrant. Then add the stock and the browned beef. Stir to combine, then reduce the heat to a simmer.

- In a stewing pan, add enough water to meat to barely cover. Season with salt, bring to a boil, and simmer until tender, about 1 hour. remove meat and drain, reserving stock.
- Sauté onions in butter or oil until golden brown. Add tomatoes and continue sautéing 5 minutes. Add meat and brown. Stir in curry powder; continue cooking until flavors have blended. Add enough of reserved stock to make stew of desired consistency.

- In a large saucepan, bring 8 cups water to a boil. Add tomatoes; cover and boil for 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry. Peel and chop tomatoes; set aside., In a large skillet, saute the onion, cumin seeds and mustard seeds in oil until onion is tender. Add garlic; cook 1 minute longer. Stir in the peppers, ginger, ground cumin, coriander, salt, turmeric and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until slightly thickened., Add plantains and water. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until plantains are tender, stirring occasionally. Stir in peanuts. Sprinkle with cilantro.
