POOR MAN'S PEPPER STEAK
This is a good recipe for families that have good taste but can't afford really expensive steaks. The kids love it so much they call it Mom's famous cube steak! It's great with mashed potatoes and gravy!

- Preheat oven to 350 degrees F (175 degrees C).
- Season the steak with salt and pepper to taste. Dredge in the flour and shake off the excess. Heat the oil in a frying pan over medium-high heat. Brown the steaks in the oil, then transfer to a large, shallow casserole dish. Sprinkle the garlic, onion, and green pepper over top, pour in water, and wrap with aluminum foil.
- Bake in preheated oven until steak is tender and vegetables are soft, about 1 1/2 hours.

QUICK PEPPER STEAK
After many years of making this, I found a shortcut by accident. So, here we go... I had always used "Round Steak" as my mother did. I found myself with a package of stew bf and decided to use the fresh veggies I had. The stew beef cooked faster and was very tender. The key to a recipe like this, is to never let the water boil off..you have a dinner in half the time as if you had used a tougher cut of meat. (Next I will try Beef and Broccoli using stew bf!)

Steps:
- In a "Dutch Oven" add a few drizzles vegetable oil, add meat, salt, pepper, and garlic pepper. Stir meat to coat. Set burner on Medium high heat. As the oil and meat cook, begin to slice onion, grn and red peppers and mushrooms. Set aside.
- Add 1/4 of onion, and stir meat to get a light sear..add water to bring meat to a boil. Cover & let water cook off (about 15 minutes), if meat is still pink, add more water to cover meat and reduce to Medium heat. Let come to a boil.
- At 30 minutes..add green, red peppers, remaining onion and mushrooms. Pour in Tomato Sauce, cover and return to a rolling boil..approx 1 and 1/2 hrs..give it a good stir from the bottom to the top, add salt, pepper and garlic ppr to taste.
- Reduce heat for remaining time. Once the meat is fork tender..serve over mashed potatoes, noodles or rice.
ULTIMATE DUTCH OVEN PEPPER STEAK

- Remove racks from Ultimate Dutch Oven and spray your Dutch oven with non-stick vegetable spray. Brown cube steak, salt and pepper in shortening. Using heat (10 or 11 briquettes), cook meat in shortening until meat is brown. Add onion, cook with meat for a couple of minutes. Add 5 cups of water, green bell pepper, soy sauce, bouillon cubes and garlic to meat and simmer over low heat (8 or 9 briquettes) for 20 to 30 minutes. Add cornstarch to mixture and simmer until a hearty gravy forms. Continue to cook over low heat for (8 or 9 briquettes) for 15 to 20 minutes. Serve over rice.
