LIGHT AND AIRY CHEESECAKE
I love cheesecake but sometimes it can be too rich and too sweet. When growing up in Puerto Rico, I remember enjoying a very light textured baked cheesecake from a local bakery. This is my version of that cheesecake. While not exactly the same, it is light, fluffy, and delicious. Serve with a light fruit syrup to take it over the top!

- Preheat an oven to 350 degrees F (175 degrees C). Wrap the exterior of an 8-inch springform pan with aluminum foil, then spray the interior with cooking spray. Spread the vanilla wafer crumbs over the bottom and sides of the pan, pressing firmly to adhere.
- Cream together the egg yolks and sugar in a large bowl. Stir in the cream cheese, sour cream, and vanilla extract until smooth. Beat egg whites until foamy in a large glass or metal mixing bowl. Add the cream of tartar, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
- Use a rubber spatula or wire whisk to fold 1/3 of the egg whites into the cream cheese mixture . Gently run the spatula through the center of the bowl, then around the sides of the bowl, repeating until fully incorporated. Add the remaining egg whites, folding just until incorporated. Pour the batter into the prepared springform pan. Line a roasting pan with a damp kitchen towel. Place springform pan on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.
- Bake in the preheated oven for about 50 minutes. The cheesecake is ready when the edges have nicely puffed and the surface of the cheesecake is firm except for a small spot in the center that will jiggle when the pan is gently shaken. Turn off the oven, and allow the cheesecake to rest in the oven for 1 hour before placing into the refrigerator, and cooling 4 hours to overnight.

- Adjust oven rack to middle position, and heat oven to 325 degrees. Brush interior of a 9-inch springform pan with butter. Add crumbs of choice and tilt pan in all directions to evenly coat, or line pan sides with ladyfingers. Tear off two long strips of heavy-duty foil, overlap in a cross pattern, and set the pan in the middle. Bring up sides, crimping around exterior top of the pan and forming a tight seal. Set it in a roasting pan large enough to hold it.
- Beat cream cheese with an electric mixer until smooth. Gradually add sugar and beat on medium speed until fully incorporated. Scrape down bowl sides and beat again until smooth. Add eggs, one at a time, scraping down bowl after each addition to ensure a creamy batter. Slowly beat in vanilla, then cream and sour cream. (Meanwhile, bring tea kettle of water to a boil, then turn off heat.)
- Pour batter into prepared pan. Set the roasting pan on oven rack and pour in enough boiling water to come halfway up the side of the springform pan. Bake until cake perimeter is set but center still jiggles, about 40 minutes (some flavor variations will take longer). Turn off heat and leave oven door ajar; let cheesecake sit in oven so the residual heat continues to cook it, about 30 minutes.
- Remove pan from water; set on a wire rack. Let cool to room temperature. Cover and refrigerate until well-chilled, about 3 hours (can be refrigerated up to 4 days). Run a sharp knife around the edge of the pan, loosen the spring siding and serve.

- Preheat the oven to 350˚F (180˚C). Grease a 10-inch (25 cm) springform pan with nonstick spray. Line the inside edges of the pan with parchment paper.
- In the bowl of a food processor, combine the graham crackers, 1 tablespoon of sugar, and the melted butter. Pulse to combine until the texture is similar to wet sand.
- Press the graham cracker crumbs into the prepared pan, using a measuring cup to compact in even layer.
- Bake for 8-10 minutes, until golden brown. Transfer to a wire rack and let cool to room temperature.
- Once cool, line the sides of the springform pan with parchment paper.
- In a large bowl, combine the cream cheese, remaining 2 cups (400 G) of sugar, and the salt. Using an electric hand mixer, blend until well-combined and fluffy.
- Add the heavy cream and beat to incorporate.
- Add the sour cream, flour, salt, and vanilla bean seeds, and beat to combine.
- Add the eggs, 1 at a time, and mix until fully combined, making sure not to over-beat. The mixture should be smooth and creamy.
- Pour the cream cheese mixture into the cooled crust.
- Wrap the outside of the springform pan tightly with foil and place the pan in a large baking dish. Fill the dish with 1 inch (2 cm) of boiling water.
- Gently transfer the baking dish to the oven and bake for 1 hour.
- Without opening the oven door, turn off the heat and let the cheesecake rest for 1 hour.
- Remove the springform pan from the baking dish and unwrap the foil. Run a paring knife gently around the outside of the cheesecake to loosen it from the sides of the pan.
- Cover the pan with plastic wrap and transfer to the refrigerator overnight.
- Remove the cheesecake from the refrigerator and release the springform pan. Remove the parchment paper lining.
- Top with fresh berries, if desired.
- Dip a knife into hot water for clean slices, then slice and serve.

BLACK AND WHITE CHEESECAKE
It seems as if my best friend, Judy, with whom I grew up, has been surfing the net and landed on the Godiva web site, too. I had this cheesecake at her house and we all sat there in quiet silence after an evening of sheer decadence. This was recipe was the last straw! I haven't allowed for chilling and cooling times - it is approximately 24 hours.

- MAKE CHOCOLATE CRUST:.
- Preheat oven to 250°F.
- Tightly wrap outside of 11" springform pan with heavy-duty aluminum foil.
- Mix together cookie crumbs and sugar in bowl.
- Add melted butter and stir until combined.
- Press mixture evenly into the bottom and sides of prepared pan.
- MAKE FILLING:.
- Beat cream cheese in mixing bowl until creamy, using electric mixer at medium speed.
- Gradually add sugar and beat until blended.
- Add vanilla and flour, mixing just until combined, at low speed.
- Add eggs one at a time, beating after each addition.
- Add yolks and half-and-half, beating until smooth.
- Stir in chopped solid ivory.
- Pour mixture into crust and smooth out top.
- Bake for 2 hours or until firm.
- Turn off oven and leave cheesecake in oven with door propped open for 1 hour or more.
- Cool in pan on wire rack for 1 hour.
- Cover with aluminum foil and refrigerate at least 8 hours or overnight.
- MAKE CHOCOLATE GLAZE:.
- Place corn syrup, water, butter in saucepan over medium heat.
- Cook until butter is melted and mixture comes to a boil.
- Remove from heat.
- Add chopped chocolate and rum or rum extract and let stand 30 seconds.
- Whisk until smooth.
- Loosen edge of cheesecake with knife.
- Remove cake from springform pan.
- Spread chocolate glaze over top of cheesecake.
- Refrigerate 15 minutes to set glaze.
- Garnish with chocolate curls, if desired.
- Cut wedges and serve.

- Heat oven to 325°F.
- Line 13x9-inch pan with foil, with ends of foil extending over sides of pan. Spray with cooking spray. Mix cookie crumbs and butter; press onto bottom of prepared pan. Place 2 pkg. chocolate in medium microwaveable bowl; microwave on HIGH 1 to 1-1/2 min. or until chocolate is almost melted, stirring every 30 sec. Stir until chocolate is completely melted. Add condensed milk; mix well. Pour into prepared crust. Refrigerate until ready to use.
- Beat cream cheese, sugar and vanilla in large bowl with mixer until blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing after each just until blended. Pour 1/2 of the batter over chocolate layer in crust.
- Melt the remaining chocolate in medium microwaveable bowl on HIGH 45 sec. or until chocolate is almost melted; stir until chocolate is completely melted. Cool slightly. Stir melted chocolate into remaining cheesecake batter. Spoon chocolate batter over cheesecake batter in pan.
- Bake 55 to 60 min. or until center is almost set. Cool. Refrigerate 4 hours. Use foil handles to lift cheesecake from pan before cutting to serve.

- In a bowl, beat cream cheese& sugar with electric mixer for 2 minutes until light and fluffy.
- In a separate bowl, whisk the 1/2 cup heavy cream with the Nutella, leaving no lumps.
- Whip the remaining heavy cream until soft peaks form.
- Divide the cream in half, folding half into cream cheese mixture and half into the Nutella mixture.
- Alternately spoon the 2 batters into the pie crust, creating layers.
- Refrigerate for at least 1 hour and serve!

- In microwave, heat on high for 5 seconds in microwavable bowl.
- Or, on low heat on a stove until mixture becomes creamy.
