1/4 cup Worcestershire sauce
3 tablespoons coconut aminos or soy sauce
2 tablespoons finely ground dried shiitake or porcini mushrooms
One 6-ounce can tomato paste
1/2 cup grated Parmesan
1 teaspoon fish sauce

Steps:

  • In a microwave-safe bowl, whisk together the Worcestershire, coconut aminos and ground mushrooms. Microwave for 45 seconds. Let steep for an additional 5 minutes, whisking frequently.
  • Add the tomato paste, Parmesan and fish sauce. Keep refrigerated in an airtight container for up to 2 weeks.

1 tablespoon canola oil
¼ yellow onion, diced
¼ cup sherry wine
1 ½ cups tomato juice
½ cup soy sauce
½ cup pomegranate molasses
½ cup ketchup
¼ cup apple cider vinegar
¼ cup Worcestershire sauce
2 tablespoons pineapple juice
½ shot brewed espresso
4 dried chipotle peppers
½ cup brown sugar

Steps:

  • Heat oil in a saucepan over medium-high heat. Add onion; cook, without stirring, until onions darken, about 5 minutes. Pour sherry wine into the pan. Simmer to cook off alcohol, about 1 minute. Stir in tomato juice, soy sauce, pomegranate molasses, ketchup, vinegar, Worcestershire sauce, pineapple juice, espresso, and chipotle peppers; bring sauce to a boil.
  • Reduce heat to low until sauce is just simmering. Add brown sugar; stir well to dissolve. Simmer sauce, stirring occasionally, until flavors are combined, about 20 minutes. Strain sauce to remove onions and chipotle peppers. Refrigerate until cool.

2 teaspoons white mushroom powder
2 teaspoons onion powder
1 teaspoon crushed red chile flakes
1 teaspoon mustard powder
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper

Steps:

  • Combine the porcini powder, white mushroom powder, onion powder, chile flakes, mustard powder, thyme, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Transfer to an airtight container. Umami seasoning keeps up to 3 months at room temperature.
  • Here are two of our favorite ways to use the seasoning.
  • Mac and Cheese: Stir 1 tablespoon umami seasoning into the cheese sauce from your favorite boxed mac and cheese before you toss it with the pasta.
  • Popcorn: Pop a 3.5-ounce package of natural microwave plain popcorn. Drizzle with 1 tablespoon olive oil and sprinkle with 1 teaspoon umami seasoning.

1/4 cup apple cider vinegar
1/4 cup cold water
3 tablespoons tamari soy sauce
1 cup nutritional yeast
8 garlic cloves, mashed
1/2 cup extra virgin olive oil
salt (optional)

Steps:

  • Place the vinegar, water, tamari, yeast flakes, and garlic in a food processor and blend until well combined.
  • Slowly pour in oil and blend until the mixture becomes thick and emulsified, like mayonnaise. Adjust the seasoning with salt as needed.
  • Pour the mixture into a lidded jar and refrigerate for up to 2 weeks.
  • Bring the sauce to room temperature and shake well before using.
