UNCLE MIKE'S VINEGAR PEPPER SAUCE
This is a North Carolina-style BBQ sauce that I have used for years. It's great on any meat. Lots of vinegar - that's the North Carolina way! Be careful though, this one's spicy.

Steps:
- In a small saucepan over medium heat, stir together the vinegar, ketchup, cayenne pepper, red pepper flakes, sugar, and water.
- Simmer for 15 minutes, or until all the sugar dissolves. Season to taste with salt and pepper. Remove from heat, and let cool. Use to baste your favorite meat while grilling.

CHICK AND OX'S PIG PICKIN' SAUCE
This Southern style bar-b-que sauce is perfect for a hog roast or just to have around the kitchen. A sweet, vinegar based sauce - mix with pulled pork in large containers. Tastes great on chicken too.

- In a 1 gallon container with a lid, mix cider vinegar, white vinegar, and sugar until sugar has dissolved. Mix in ketchup, crushed red pepper, black pepper, paprika, onion powder, garlic, salt, and cayenne pepper. Cover, and chill in the refrigerator.

- Mix all ingredients well. Simmer over low heat for 30 to 40 minutes. Pour into mason jars and store in refrigerator until ready to use. May use on chicken, beef or pork.

HERSCHEL'S GRILL PAINT
Steps:
- Whisk together the mayonnaise and butter in a bowl. Whisk in the honey and lemon juice. Stir in the garlic, dried parsley, horseradish, mustard, pepper and lemon zest and mix well.
- Use grill paint for seasoning meat and poultry. Brush it on steak, chicken or pork before grilling.
PIG PICKIN SAUCE BY MEAN CHEF
Adopted recipe. Please note that this is not a sweet BBQ sauce at all. If you are looking for a "Memphis" or "Kansas City" style sauce, with tomatoes and molasses or brown sugar, please look elsewhere or you will be disappointed. Eastern North Carolina is where you would find the original inspiration for this. Traditionally, a whole hog is cooked and this style of sauce is used both for the mop and on the side. I really like this stuff, it's a nice change from sweet sauces and makes a dynamite mop, as well. Keeps in a covered container in the fridge almost indefinitely.
