Steps:
- Place the cabbage in a greased 2-1/2-qt. baking dish. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the rice, salt if desired and pepper; spoon over cabbage. , Combine soup and water; pour over beef mixture. Cover and bake at 350° for 40-50 minutes or until rice and cabbage are tender. Uncover; sprinkle with cheese. Bake 5-10 minutes longer or until the cheese is melted.

UNSTUFFED CABBAGE CASSEROLE
Unstuffed cabbage casserole is so much easier to make. NO rolling required, just throw it all in, saute and enjoy those classic flavors.

Steps:
- In a large skillet or wok put oil, ground beef, onion and bell pepper. Cook at medium heat until meat is no longer pink. Add garlic and cook 1 more minute.
- Pour in can of diced tomatoes, and all seasonings. Stir.
- Cover top with chopped cabbage, leave a bit of room so lid can fit on top of pot.
- Pour 1/4 c of beef broth on top of cabbage. Put lid on and cook over medium heat for 15-20 minutes until cabbage is as tender as you'd like it to be. (if adding 1 cup cooked rice add that in and fold in now)
- Sprinkle cheese on top and heat just long enough for it to melt, then serve.
- Alternatively you can set oven to 400 degrees, layer top with cheese and bake (in an oven safe cast iron pan or baking dish) until it is melted and golden brown.

UNSTUFFED CABBAGE ROLL
This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.

From a free Penzey's recipe card... Edited 3/24/08 to add that I have now made this recipe for the first time. We really liked it, but found it a bit bland, so I doubled the amounts of vinegar and brown sugar and also added some ketchup to jazz it up a bit. Definitely a keeper, though!

- In a large skillet, brown the ground meat and drain off any grease. Add the chopped onion and cook for about 3 minutes, until the onions are softened.
- Add the cabbage and water and cook for about 5 minutes, or until the cabbage starts to wilt.
- Add the tomatoes, brown sugar, vinegar, salt, caraway seed and garlic. Bring to a boil, reduce heat and cover.

- Bring a large pot of water to a boil. Add cabbage strips to boiling water. Boil until tender. Drain.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
