Honey Mustard Chicken image

This is a homemade version of the popular Honey Mustard simmer sauces sold at supermarkets. The Honey Mustard Sauce is slightly tangy, sweet and beautifully creamy. Great for chicken, pork, turkey and fish. **ADJUST SERVINGS by using the slider!**

700 g / 1.4 lb chicken tenderloin or chicken breast cut into thick strips ((Note 1))
Salt and pepper
2 tbsp flour
1 tsp garlic powder
1 tbsp mayonnaise ((Note 3))
1 tsp cornstarch / cornflour or 2 tsp flour
1 1/2 tbsp + 1/2 tbsp olive oil
2 cloves garlic (minced)
1 cup chicken broth / stock ((250ml))
1/4 cup Dijon mustard ((70g))
1/4 cup honey ((85g))
1 - 2 tbsp wholegrain mustard, adjust to taste
2 tsp sprigs thyme or 1/2 dried thyme ((Note 4))
Fresh parsley, finely chopped

Steps:

  • Sprinkle chicken with salt and pepper, then toss with Seasoning if using.
  • Thickener: In a small bowl, mix together the mayonnaise and flour.
  • Heat 1 1/2 tbsp oil in a skillet over medium high heat. Add chicken and cook for 2 minutes on each side or until golden. Remove onto a plate.
  • Reduce heat to medium. Add remaining oil in the middle of the skillet and put garlic straight onto the puddle of oil. Sauté for 20 seconds or until golden (don't let it burn).
  • Add chicken broth, bring to simmer, scraping the bottom of the fry pan.
  • Whisk in Dijon Mustard and honey, then whisk in Thickener (make sure you scrape it all in).
  • Add thyme and wholegrain mustard, if using.
  • Cook for 1 - 2 minutes or until starting to thicken. Adjust salt and pepper to taste.
  • Return chicken and any juices pooled on the plate into the sauce. Turn to coat and reheat through - about 1 1/2 minutes - or until sauce is thickened to your taste.
  • Serve on mashed potato, garnished with parsley, with a simple side salad.

1/3 cup Dijon mustard
1/3 cup honey
1 tablespoon dried dill
1 teaspoon freshly grated orange peel
2 1/2 lbs roasting chickens, quartered

Steps:

  • Preheat oven to 400 degrees. Combine mustard and honey in a small bowl. Stir in dill and orange peel.
  • Line a baking sheet with foil. Place chicken, skin-side down, on prepared pan. Brush sauce on top of chicken; coat well.
  • Turn chicken over. Gently pull back skin and brush meat with sauce. Gently pull skin back over sauce.
  • Brush skin with remaining sauce. Bake until juices run clear when thickest portion of meat is pierced with a knife. About 30 minutes.

4 chicken thighs
4 chicken drumsticks
2 tablespoons butter
1/2 cup honey
1/2 cup sweet-hot mustard
1 teaspoon salt
1 tablespoon curry powder

Steps:

  • Brown chicken in skillet and transfer to slow cooker.
  • Melt butter is a small saucepan. Remove from heat and add all other ingredients, stirring well. Pour over chicken.
  • Cook on LOW for 4 to 6 hours. Serve with rice.
  • Note1: You can also use one whole chicken cut up into serving pieces. If using just breasts, watch for drying out - fortunately there is a lot of sauce.
  • Note2: Dijon mustard is good in this, instead of sweet and hot mustard.
  • Note3: This recipe works well without browning the chicken, although I prefer to brown it. You can use skinless.

¼ cup grainy mustard
2 tablespoons honey
3 (6 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
½ medium white onion, chopped
2 cloves garlic, minced
4 tablespoons Dijon & honey (liquid) LF
salt and ground black pepper to taste
1 tablespoon water

Steps:

  • Mix grainy mustard and honey together in a ceramic or glass bowl. Add chicken pieces and massage with marinade. Let sit to absorb flavors, about 30 minutes.
  • Heat oil in a cast iron skillet over medium-high heat. Add onion and saute until soft and translucent, about 5 minutes. Add garlic and 2 tablespoons honey Dijon mustard. Season with salt and pepper. Reduce heat to medium and saute until onion and garlic are browned, 3 to 4 minutes. If necessary, add 1 tablespoon of water during this process.
  • Add chicken to the skillet and remaining 2 tablespoons honey Dijon. Mix well and cover. Cook, stirring occasionally, until chicken is no longer pink in the centers, 7 to 10 minutes.
  • Uncover, increase heat, and reduce sauce until creamy and thick, 3 to 5 more minutes.
