A SUPER EASY WAY TO MAKE CORN PUDDING



A Super Easy Way to Make Corn Pudding image

We add just a touch of sugar to enhance the sweetness of the corn and onion. The texture falls somewhere between a pudding and a soufflé-rich and custardy, with bubbles of air within. It's best served piping hot, but cold leftovers are good, too.

Cooking spray
2 1/2 tablespoons unsalted butter
4 cups frozen corn kernels, thawed and patted dry
1 cup chopped yellow onion
1 tablespoon chopped fresh thyme
1 tablespoon minced garlic
1/2 cup thinly sliced scallions
3 tablespoons all-purpose flour
1 tablespoon granulated sugar
2 teaspoons baking powder
3/4 teaspoon kosher salt
3/4 teaspoon black pepper
3 cups 2% reduced-fat milk
8 large eggs, lightly beaten

Steps:

  • Preheat oven to 350°F with oven rack in middle of oven. Lightly coat a 13- x 9-inch glass or ceramic baking dish with cooking spray. Melt butter in a large skillet over medium-high until foamy. Add corn, onion, thyme, and garlic; cook, stirring occasionally, until lightly browned, 7 to 9 minutes. Remove from heat; stir in scallions. Let cool slightly, about 10 minutes.
  • Whisk together flour, sugar, baking powder, salt, and pepper in a small bowl. Whisk together milk and eggs in a large bowl until smooth. Whisk flour mixture into milk mixture until smooth. Stir in cooled corn mixture. Pour into prepared baking dish.
  • Bake at 350°F until lightly browned and center is set, 55 minutes to 1 hour.

2 cups uncooked corn kernels (from about 4 ears)
1 tablespoon flour
1 tablespoon sugar
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 cup egg substitute (or 6 egg whites and 1 egg) or 8 egg whites (or 6 egg whites and 1 egg)
1 tablespoon reduced-fat butter or 1 tablespoon butter substitute, melted
1 cup fat-free evaporated milk

Steps:

  • Preheat the oven to 350 degrees. Have ready a nonstick loaf pan (or lightly grease a loaf pan with nonstick cooking oil spray) and a larger roasting pan to create a bain-marie, or hot-water bath. Boil a kettle of water.
  • Combine the corn, flour, sugar, salt and pepper in a large bowl; mix well.
  • In a separate bowl, whisk together the egg substitute, melted butter or butter substitute and milk for 3 minutes, then add to the corn mixture. Pour the pudding into the loaf pan and place the loaf pan inside the roasting pan. Place on the middle rack of the oven and pour enough boiling water into the roasting pan to come at least halfway up the sides of the loaf pan. Bake for 45 to 50 minutes or until the pudding is firm to the touch and slightly browned on top. Let it rest in the pan for at least 5 minutes before serving.

3 cups whole milk (do not use low fat or nonfat)
1 cup yellow cornmeal
1/2 teaspoon salt
1/4 cup butter, cut into pieces
3/4 cup sugar
3/4 cup buttermilk
6 large eggs, separated
1/2 teaspoon vanilla extract
Powdered sugar

Steps:

  • Preheat oven to 375 degrees. Butter 8 cup souffle dish. Bring milk to boil in heavy large saucepan. Reduce heat to medium. Gradually mix in cornmeal and salt. Stir until mixture becomes very thick, about 1 minute. Add butter; stir until melted. Remove pan from heat. Stir in 1/2 cup sugar and buttermilk. Whisk yolks in large bowl to blend. Gradually whisk in cornmeal mixture. Using electric mixer, beat egg whites in medium bowl until frothy. Add remaining 1/4 cup sugar and beat until soft peaks form. Gently fold whites into cornmeal mixture.
  • Transfer mixture to prepared dish. Bake until mixture puffs and is golden brown. Sprinkle with powdered sugar and serve hot.

By cutting back on butter and egg yolks and by using low fat milk, we've reduced the fat in this satisfying side dish without sacrificing the creaminess.

Nonstick vegetable oil spray
2 cups fresh corn kernels or frozen, thawed, well drained
3 tablespoons cornstarch
1 teaspoon butter
1/2 cup thinly sliced green onions
2 large eggs
1 large egg white
1 cup low-fat milk
1/2 cup chicken stock or canned low-salt chicken broth
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 375°F. Spray 8x8x2-inch glass baking dish with nonstick vegetable oil spray. Puree 1 1/4 cups corn kernels and cornstarch in processor until almost smooth; set aside.
  • Melt butter in small skillet over low heat. Add green onions; sauté 3 minutes. Whisk eggs, egg white, milk, stock, sugar, salt, pepper and nutmeg in large bowl to blend. Add corn puree, green onions, 1 tablespoon Parmesan and remaining 3/4 cup corn kernels and stir until blended.
  • Pour mixture into prepared dish. Sprinkle remaining 1 tablespoon Parmesan over. Place dish in large roasting pan. Pour enough hot water into roasting pan to come halfway up sides of dish. Bake until pudding is just set and light golden, about 45 minutes. Remove dish from water and let stand 5 minutes. Cut into squares and serve.

Steps:

  • Preheat oven to 400°F. Butter 13 x 9 x 2-inch oval or rectangular baking dish. Heat 1 tablespoon butter in heavy medium skillet over medium heat. Add onion and sauté until soft, about 5 minutes; cool in skillet.
  • Whisk milk, eggs, flour, sugar, salt, pepper, and remaining 3 tablespoons butter in large bowl. Scrape in onion mixture. Add 2 cans drained corn. Puree remaining 1 can drained corn in processor until smooth. Add puree to bowl with custard mixture and stir to blend well; transfer to prepared dish.
  • Bake pudding until set in center and beginning to brown on top, 40 to 45 minutes. Serve warm.

4 garlic cloves, unpeeled
Kernels from 4 ears corn (about 4 cups)
3/4 cup low-fat milk (1 percent or 2 percent)
3 eggs
Salt to taste (about 1/2 teaspoon)
Freshly ground pepper
1 tablespoon slivered or chopped fresh sage

Steps:

  • Preheat the oven to 350 degrees. Oil or butter a 2-quart soufflé dish or gratin. Set the dish in a pan and fill the pan with enough water to come partway up the sides of the dish.
  • Toast the garlic: Place the unpeeled cloves in a heavy skillet over medium-high heat and toast, turning the garlic cloves often, until the skin is blackened in spots and the garlic smells toasty, about 7 minutes. Remove from the heat. When the cloves are cool enough to handle, cut away the root end and remove the skin.
  • Set aside 1 cup of the corn kernels. Place the rest, with the garlic, milk, eggs, salt and pepper in a blender and blend until smooth. Pour into a bowl and stir in the sage and the corn kernels, then transfer to the baking dish.
  • Place in the oven and bake 1 hour to 1 hour 15 minutes, until the top is lightly browned and the pudding is firm. Serve hot.
