  • Stir water, sugar, and blueberries together in a saucepan and bring to a boil. Reduce heat to medium-low and simmer until the berries begin to pop and the syrup thickens, about 10 minutes.

1 cup fresh or frozen (thawed) blueberries
1/2 cup dry red wine or cranberry juice cocktail
1/4 cup sugar
1/4 teaspoon ground cinnamon
1 tablespoon water
2 teaspoons cornstarch
1 1/2 pints (3 cups) lemon sorbet or sherbet

Steps:

  • In 1-quart saucepan, heat blueberries, wine, sugar and cinnamon to boiling. Reduce heat; simmer uncovered about 5 minutes, stirring occasionally, until blueberries are tender.
  • In small bowl, stir water and cornstarch until dissolved; stir into blueberry mixture. Cook and stir about 1 minute or until mixture is thickened. Cool about 30 minutes until slightly warm, or cool completely.
  • Scoop sorbet into individual dessert dishes. Top each serving with blueberry sauce. Serve immediately.

1 (10 ounce) bag unsweetened frozen blueberries
2 tablespoons fresh lemon juice
1 inch strip lemon, zest of
1/2 cup sugar

Steps:

  • Defrost the berries.
  • Put them in a deep pan and add the lemon juice.
  • Cook over medium heat until the berries are really juicy, about 5 minutes.
  • Add the lemon zest.
  • Turn up the heat to medium-high and boil until the berries are soft, about 5 minutes.
  • Add the sugar and bring to a boul over medium-high heat.
  • Pout it into a heat-proof container and cool it to room temp.
  • It should thicken as it cools.
  • Remove the lemon zest.
  • Cover it and refrigerate it.
  • It can keep for up to a week in the fridge.
