Steps:
- Place ground beef in large skillet over medium-high heat. Cook, while crumbling meat with a fork or wooden spoon, about 4-6 minutes, or until meat is cooked through. Drain off excess fat.
- Add tomato sauce and taco seasoning to pan with meat. Stir to combine and cook another minute or two over medium-high heat until heated through.
- Spoon meat on to bottom part of rolls. Top with slices of cheese and other favorite toppings. Serve immediately.

- Heat oven to 375°F Spray cookie sheet with cooking spray. Unroll both cans of dough on work surface and pinch seams to seal. Press into two 12x8-inch rectangles, cut into total of 8 rectangles.
- in 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked. Stir in taco seasoning mix and salsa, simmer 5 minutes. Spoon about 1/4 cup meat mixture in center of 1 dough rectangle. Sprinkle with 2 tablespoons cheese. Fold rectangle over to form triangle; press edges with fork to seal. Place on cookie sheet. Brush with egg; sprinkle with cornmeal. Repeat with remaining dough and filling.
- Bake 10 to 15 minutes or until deep golden brown.

UPSIDE DOWN MEXICAN SLOPPY JOES
My family is fond of many recipes that feature Bisquick Baking Mix for their ease of preparation. Now combine that with the fact we're nuts about Mexican food, this was right up our alley. This recipe came from a little paperback cookbook called "A Taste of Mexico." It's a little gem that is filled with recipes contributed by high school Homemaking teachers from all over California. Let me know what you think. My family really enjoys this one.

Steps:
- Prepare corn dough: mix Bisquick, cornmeal and milk together until dough forms.
- Stir in drained corn; set aside.
- Meanwhile, prepare filling by browning ground beef with onion in a 10 inch skillet; drain fat.
- Stir in remaining ingredients.
- Cover and heat to boiling over medium-low heat.
- Drop corn dough by heaping spoonfuls onto boiling beef mixture.
- Cook, uncovered, 10 minutes.
- Cover and cook 10 minutes longer.
- Serve hot.

THROWDOWN'S SLOPPY JOES
Steps:
- For the BBQ Sauce:
- Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onions and cook until soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add the ketchup and the water and bring to a boil. Reduce the heat and simmer for 5 minutes. Add the remaining ingredients and simmer until thickened, stirring occasionally, about 10 minutes.
- *Transfer the mixture to a food processor and puree until smooth, season with salt and pepper, to taste. Pour into a bowl and allow to cool at room temperature. Sauce will keep for 1 week in the refrigerator stored in a tightly sealed container.
- For the Garlic Toast:
- Combine the butter and garlic in a small saucepan and cook over low heat until the butter is melted. Season with salt and pepper, to taste. Remove from the heat and let sit 5 minutes.
- Preheat the broiler.
- Put the bread on a baking sheet and broil until both sides until lightly golden brown, about 1 minute per side. Remove from the oven and brush them with the garlic butter. Transfer to a serving platter and set aside until ready to serve.
- For the Neat Joes:
- Heat the oil over high heat in a large high-sided saute pan until the oil begins to smoke.
- Add the beef, breaking it up into small pieces using a metal spatula or wooden spoon, season with salt and pepper, to taste, and cook until golden brown. Remove with a slotted spoon to a plate. Drain off all but 1 tablespoon of the fat from the pan. Add the onion and celery and cook until soft, about 3 minutes. Add the poblano, bell peppers and garlic and cook for 1 minute. Add the ancho powder and cook for 30 seconds. Add the BBQ sauce, 1/4 cup of water and the ketchup, bring to a boil and cook, stirring occasionally, until slightly thickened, about 5 minutes. Reduce the heat to medium-low, stir in the mustard, Worcestershire, honey, brown sugar and molasses. Cover and simmer for 15 minutes. Remove the cover, return the meat to the pan and continue cooking until slightly thickened, about 10 minutes longer. Add the vinegar, season with salt and pepper, to taste, and stir in the 1/2 cup of parsley or cilantro.
- Top slices of the garlic bread with some of the sloppy joe mixture, sprinkle with cilantro or parsley.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
TEX-MEX SLOPPY JOES
Steps:
- In a large skillet, cook beef and onion over medium heat for 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add garlic; cook 1-2 minutes longer. Stir in the ketchup, chiles, broth, chili sauce and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally., Meanwhile, spread cut sides of buns with butter. Place on baking sheets, buttered side up. Broil 4 in. from the heat for 1-2 minutes or until toasted. Serve beef mixture in buns.

SLOPPY JOES (MEXICAN STYLE)
This is a favorite at my house. Hispanic people call it "Picadillo". Usually eaten with flour tortillas, I have added the cheese sauce and sour cream. Hope you enjoy!

- Brown ground beef with chopped onion, chopped Jalapenos and salt.
- Drain or spoon off excess fat after browning.
- Add tomato sauce, water and garlic powder to meat mixture.
- Simmer for 10-15 mins to thicken to desired consistency for serving.
- Heat tortillas keeping them soft and pliable.
- I usually heat them on a gas burner set to low, turning them quite often.
- Brown crusty spots are quite welcome!
- Swipe garlic butter across center of warmed tortilla.
- Add single portion of meat mixture and fold in half like a taco.
- Add warm cheese sauce over meat and a couple of small dallops of sour cream.
- Indulge yourself!

- In a large skillet cook ground beef and onion. Drain any excess fat. Add taco seasoning, diced tomatoes and enchilada sauce to ground beef mixture. Cook for 5 minutes to allow flavors to meld. Add corn and cook additional 3 minutes. Serve immediately on hamburger buns and top with your favorite toppings such as shredded cheese, lettuce & avocado. If freezing, make as directed and freeze in freezer containers for up to 3 months. When ready to use, place frozen mixture in skillet and cook until thawed and hot.

This was my Grandma's recipe for Sloppy Joes. It is very easy to make and uses items you probably already have in your pantry. Kids, as well as the adults, will love this All-American favorite. A slice of American cheese adds a nice touch. For an extra kick, add your favorite hot sauce to taste.

- Heat oven to 350°F. Generously spray 12-cup Bavarian-style bundt cake pan with cooking spray. Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in sloppy joe sauce.
- Stir Bisquick mix, milk, butter and eggs until blended. Spoon about two-thirds of the Bisquick mixture onto bottom and half way up side of pan. Spoon beef mixture over Bisquick mixture. Drop remaining Bisquick mixture by spoonfuls to cover beef.
