Vanilla Glazed Carrots image

Sweet and crunchy carrots with just a hint of vanilla in the glaze. Recipe from a package of Earth Exotics baby carrots.

2 cups baby carrots
1 1/2 tablespoons honey
1/4 teaspoon vanilla extract
1 tablespoon butter
1/4 teaspoon white wine vinegar
1 pinch salt

Steps:

  • Combine all ingredients in a large sauté pan.
  • The carrots should form a single layer in the pan.
  • Bring the carrots to a simmer on medium-high heat (you may need to add a bit more honey or some water to keep the carrots from burning while they cook).
  • Reduce the liquid until the pan is just about dry.
  • The carrots should be cooked through, shiny and delicious.

I had this at a restaurant, and, as always, I try and duplicate the dishes that I like. This is my version of these steamed baby carrots that are lightly coated in a sweet vanilla glaze.

20 baby carrots
3 tablespoons honey
2 tablespoons butter
½ teaspoon vanilla extract
¼ teaspoon white vinegar
salt and ground black pepper to taste

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add baby carrots, cover, and steam until tender, 3 to 6 minutes. Transfer to a serving dish.
  • Place honey, butter, vanilla extract, and vinegar in a small microwave-safe bowl and heat on high for 30 seconds in microwave oven; stir until combined. Pour glaze over carrots; season with salt and black pepper.

6 tablespoons sugar
1/3 cup balsamic vinegar
1/4 cup chopped fresh chives

Steps:

  • Melt butter in heavy large pot over medium heat. Add carrots and sauté 5 minutes. Cover and cook until carrots are crisp-tender, stirring occasionally, about 7 minutes. Stir in sugar and vinegar. Cook uncovered until carrots are tender and glazed, stirring frequently, about 12 minutes longer. Season to taste with salt and pepper. Add chives and toss to blend. Transfer to bowl and serve.

¼ cup packed brown sugar

  • Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
