VANILLA PARTY CAKE (WITH STRAWBERRIES AND CREAM FILLING)



Vanilla Party Cake (with strawberries and cream filling) image

Moist and fluffy vanilla cake with a fresh strawberry and whipped cream filling, surrounded with a vanilla buttercream.

1/2 cup (114g) unsalted butter, room temperature
2 cups (250g) all-purpose flour
1 1/2 cups (300g) granulated sugar
3 large eggs
1 tbsp baking powder
1/2 tsp salt
1 cup (250ml) milk (I used whole milk)
2 tsp vanilla
1 generous cup of diced strawberries
3/4 cup (188ml) whipping cream
2 tbsp (25g) sugar
1/2 tsp vanilla
1 cup (227g) unsalted butter, room temperature
1 tsp vanilla
3 tbsp (45ml) cream or milk
4 cups (500g) powdered sugar

Steps:

  • Preheat oven to 350°F. Butter two 9 inch round cake pans, line bottoms with parchment paper, butter parchment. Dust with flour and tap out the excess.
  • Using an electric mixer or stand mixer with paddle attachment, cream butter and sugar for 1-2 minutes until combined.
  • Add eggs and beat until well combined, scraping down sides of bowl as necessary.
  • Add flour, baking powder, salt and mix until just combined.
  • Add milk and vanilla and beat until smooth.
  • Divide batter between the two prepared pans, smoothing tops with an offset spatula. Bake for about 30 minutes or until golden and cake tester comes out clean.
  • Cool pans on wire rack for 15 minutes then remove cakes from pan to cool completely.
  • Meanwhile, beat whipping cream, sugar and vanilla until soft peaks form, set aside in refrigerator.
  • Beat butter until light and fluffy, add vanilla and 1 cup icing sugar, beat until combined. Add 1 tbsp of the cream or milk and another cup of icing sugar, mix again, continue with remaining cream or milk and icing sugar, beat until fluffy and smooth.
  • To assemble cake, trim cake domes if needed, spread half of whipping cream onto each cake, sprinkle diced strawberries onto one, top with other, cream side down, pressing slightly.
  • Spread a thin layer of buttercream all around the outside of the cake, creating a crumb coat. Refrigerate for 30 minutes.
  • Spread another layer of buttercream on top of the cake, smooth with an offset spatula. Then transfer the remaining buttercream into a pastry bag with an large open star tip like a Wilton 1M. Pipe rosettes all around the sides of the cake. Fill in gaps by pipping a star in between.
  • Top with some sprinkles or leave as is.

Number Of Ingredients 16

1 cup Land O Lakes® Butter with Canola Oil
1 3/4 cups granulated sugar
4 large eggs (at room temperature)
1 cup sour cream (at room temperature)
1/2 cup milk (at room temperature)
1 tbsp pure vanilla extract
3 cups all-purpose flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon kosher salt (or any coarse salt)
1 cup Land O Lakes® Unsalted Butter (2 sticks) (at room temperature)
4 to 5 cups confectioners' sugar
1/4 cup heavy cream
2 teaspoons pure vanilla extract
1/8 teaspoon kosher salt
Strawberries (sliced and whole or halved)

Steps:

  • Preheat your oven to 350 degrees, with rack in the center position. Spray and line the bottoms of your cake pans with parchment paper and spray again, generously, with non-stick baking spray.
  • Using your stand mixer fitted with the flat beater (or paddle) attachment, beat together the Land O Lakes® Butter with Canola Oil and sugar on medium high speed until pale and fluffy, scraping down the sides of the bowl as needed, for about 2 minutes. Reduce the speed to medium-low and add the eggs, one at a time, beating after each addition.
  • In a separate bowl, whisk together the sour cream, milk and vanilla extract. Pour this into the bowl with the Land O Lakes® Butter with Canola Oil and sugar mixture. In a separate bowl, whisk together your dry ingredients: the flour, baking powder, baking soda and salt. Add your dry ingredients into the mixing bowl and mix on medium speed until smooth and incorporated.
  • Evenly divide the cake batter between the two cake pans and bake, rotating halfway through, until the tops spring back when gently touched and a cake tester inserted in the centers comes out clean, for about 30 minutes. Transfer to wire racks and let cool in pans for about 20 minutes.
  • Using your stand mixer fitted with the flat beater attachment, beat the Land O Lakes® Unsalted Butter on medium speed until creamy and smooth, for about 2 minutes.
  • Add in 4 and 1/2 cups confectioners' sugar, the heavy cream, vanilla extract and the salt. Beat on low speed for about 30 seconds, then increase to high and beat for 3 full minutes. Taste and adjust as needed: Add up to 1/2 cup more confectioners' sugar if buttercream is too thin or another tablespoon of heavy cream if it's too thick.
  • Run a knife around the edges of the cakes, and invert onto racks. Remove the parchment paper and discard. *If you want to level your cakes, I highly recommend chilling the cakes in the refrigerator for at least an hour, or you can bake these cakes a day ahead and place into the freezer. This will make leveling the cakes much easier.
  • To level your cakes: Place cake on level surface, and then, use a large serrated knife to slowly trim off the tops of the cakes to make them level.
  • Place first cake on plate, cake stand, or a rotating cake turntable, (make sure this can fit into your refrigerator if you are going to do a crumb coat) and frost the top of the cake. Add sliced strawberries over the top. Place second cake on top and repeat: frost the top part of the cake.
  • At this point you can do one of two things: 1) A crumb coat: using a thin layer of frosting, frost the entire cake and then set in your refrigerator for about 15 to 20 minutes and then frost again. This method helps you to achieve a cleaner frosted cake. 2) Simply frost the entire cake and use your offset spatula to create a fun design around the outside of the cake. Top with strawberries and enjoy! You can also decorate the outside of the cake with thinly sliced strawberries in a design and line them up around the bottom of the cake.

For little girls' birthdays I sometimes add food coloring to the frosting for a more festive look. Otherwise, the white frosting with the bright red strawberries is beautiful. I get asked for the recipe every time I make it.

1 (18.25 ounce) package golden vanilla cake mix
1 ½ cups milk
¾ cup vegetable oil
3 eggs
1 (3.5 ounce) package instant vanilla pudding mix

1 (12 ounce) container frozen whipped topping, thawed
3 cups sliced strawberries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour three 8-inch cake pans.
  • Beat cake mix, milk, oil, eggs, and vanilla pudding mix together in a large bowl with an electric mixer on low speed until just blended. Scrape the bowl, increase mixer speed to medium, and beat until batter is smooth, about 4 minutes. Pour batter into prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 20 to 25 minutes. Cool in the pans for 10 minutes before transferring cakes to a wire rack to cool completely.
  • Beat cream cheese, confectioners' sugar, and white sugar together in a bowl with an electric mixer until smooth; fold in whipped topping until frosting is smooth.
  • Place 1 cake on a serving platter. Spread frosting on top of the cake; top frosting with a layer of strawberries. Place 1 cake atop strawberries. Frost cake and top with a layer of strawberries. Place remaining cake atop strawberries, frost the top and sides of the cake, and top with remaining strawberries.

7 large egg yolks plus 9 large egg whites

1 whole vanilla bean, split and scraped, or 2 teaspoons pure vanilla extract
2 pounds strawberries, hulled and halved or quartered (about 5 cups), plus more for serving
1/2 cup granulated sugar
1 tablespoon fresh lemon juice
Pinch of salt
2 cups cold heavy cream

Steps:

  • Make the cake: Preheat oven to 325 degrees. Whisk together flour, 3/4 cup granulated sugar, the baking powder, and salt. Whisk together oil, egg yolks, and milk in a large bowl. Whisk flour mixture into egg-yolk mixture.
  • Beat egg whites with a mixer on high speed until frothy. Add cream of tartar and vanilla seeds or extract, and beat until soft peaks form. Gradually add remaining 3/4 cup granulated sugar, beating until stiff, glossy peaks form, about 5 minutes. Whisk one-third of the egg-white mixture into batter. Gently but thoroughly fold in remaining egg-white mixture with a rubber spatula.
  • Transfer batter to tube pan. Bake until top of cake springs back when touched, 52 to 55 minutes. Let cool upside down (over a bottle or on tube-pan feet) 1 hour.
  • Make the berries and cream: While cake is baking and cooling, combine strawberries, granulated sugar, lemon juice, and salt, and let sit, stirring occasionally, 1 hour. Just before assembling, beat cream and confectioners' sugar until medium peaks form.
  • Slide a paring knife around edges of tube and side of pan; release cake. Cut cake horizontally into 3 layers with a serrated knife. Transfer bottom layer to a cake plate or platter. Spread with half the berries, and drizzle with juices. Spread half the whipped cream over berries, then top with middle cake layer. Spread with remaining berries and whipped cream. Top with remaining cake layer. Refrigerate cake 1 hour. Sprinkle with confectioners' sugar, and serve with berries.

  • Whisk cream with confectioners' sugar until medium peaks form.
  • Trim cake tops. Slice cakes in half horizontally. Generously brush 1 cake layer with some reserved syrup, and spread on one-third of the jam. Top with one-third of the filling, then one-third of the whipped cream. Repeat with 2 more cake layers. Top with remaining cake layer, bottom side up. Refrigerate for at least 1 hour or up to 2 hours. Dust cake with confectioners' sugar just before serving.

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8-inch-round cake pan, then line the bottom with parchment paper; butter the parchment and dust with flour, tapping out the excess.
  • Make the cake: Whisk the flour, granulated sugar, baking powder and salt in a medium bowl until combined. Whisk the melted butter, vanilla bean paste, eggs, milk and lemon zest in a medium bowl until just smooth. If using handpicked, very ripe strawberries, then the strawberry puree made from frozen strawberries is most likely unnecessary. The cake would make a nice ending to a special summer dinner.

3 eggs
3/4 cup buttermilk
1/2 cup unsalted butter, room temperature
1 tablespoon vanilla extract
3/4 teaspoon almond extract
1 (10 ounce) package frozen sliced strawberries in syrup, thawed
4 cups heavy whipping cream
3/4 cup sugar
3 pints fresh strawberries, hulled and sliced

Steps:

  • Butter and flour 13x9x2 inch metal baking pan.
  • Using electric mixer, beat cake mix, eggs, buttermilk, and butter in large bowl until moistened, about 30 seconds, and then beat on medium speed 4 minutes.
  • Beat in both extracts.
  • Transfer batter to pan; and bake cake at 350 degrees until golden and tester inserted into center comes out clean, about 28 minutes.
  • Cool in pan on rack 20 minutes; turn cake out onto rack and cool completely.
  • Puree thawed berries with syrup in food processor; if using just-picked strawberries, disregard this step.
  • Beat cream with sugar in large bowl until peaks form.
  • Using serrated knife, cut cake horizontally in half; transfer bottom half of cake, cut side up, to platter.
  • Spread 1 cup strawberry puree over cake (puree will soak into cake); again, if using just-picked strawberries, disregard this step.
  • Arrange 1 1/2 cups sliced berries in single layer atop strawberry puree on cake.
  • Spread 2 cups whipped cream over strawberries.
  • Top with second half of cake, cut side down; spread remaining strawberry puree over top of cake or place a single layer of just-picked strawberries.
  • Spread remaining whipped cream over top and sides of cake.
  • Garnish cake top and sides with sliced berries.
  • Can be prepared eight hours ahead; refrigerate.

This is a wonderful vanilla cake with a sweet cream cheese and strawberry frosting. from Bon Appetite Magazine. I This is an AWESOME cake! You can choose to use 2 /9 inch pans or 3/9 inch pans. Even if you use 3 cakes, make sure you split them, I make that suggestion due to the horrible review that was recently left. I am trying to dummy proof this recipe, if you know what you are doing then go for it. This cake really is worth the time it takes to make it. The frosting is delicate and so, so delicious! The cake is moist and dense with a rich vanilla, butter flavor. I have gotten nothing but rave reviews on this cake. Also, this is a huge cake! It will probably serve more than 12-16. I found that 6 cups of strawberries was a bit too much for me but it depends on how many strawberries you like. After reading the very bad review left recently, I must insist that if you are looking for a lowfat cake please DO NOT make and review my cake. The nutrition info is CLEARLY posted. I guess some folks still take out their frustration on line, clearly.

  • Preheat oven to 325°F.
  • Butter and flour 2 or 3 9-inch cake pans with 2 inch high sides. Sift flour, baking powder, and baking soda into medium bowl. Spread 2 tablespoons strawberry jam over ( I like to warm it slightly in microwave and add some boiling water so I can brush it on the cake), then 3/4 cup frosting, and 3/4 cup sliced berries, arranging in a single layer.
  • Repeat this 2 more times with each layer of cake.
  • Spread 2 cups frosting on top of cake and over sides of cake.
  • Optional, spread remaining jam (room temp) on top and sides of cake (swirl).
  • Cut cake into wedges and top with remaining strawberries.

STRAWBERRY AND CREAM LAYER CAKE

This delicate cake is inspired by fraisier, a French cake made from layers of sponge, strawberries and cream. Fraisier cakes are elaborately constructed and typically combine several components to make the cream filling, but this strawberry cake is lighter, looser and much more casual.   • Meanwhile, coarsely chop about a quarter of the strawberries and combine in a medium heatproof bowl with the sugar. Cover the bowl tightly and set it over the saucepan. Reduce the heat if necessary to keep the water just below a simmer and allow the berries to sit, swirling the bowl once or twice to dissolve any stubborn sugar clumps, until they've released all their juices, are mushy, and swim in a translucent red liquid, 35 to 45 minutes. Remove the bowl from the heat, uncover and strain through a fine-mesh strainer. (You should have 1/2 to 3/4 cup of strawberry syrup.) The mushy berries will have given off their color and flavor, and even though you won't use them in the cake, they're still tasty. Reserve the berries for spooning over pancakes or yogurt.
  • In a separate medium bowl, combine the heavy cream, crème fraîche and salt. Whisk the mixture vigorously by hand, or beat with a hand mixer on medium-high, until thick, light and holding a medium peak. Chill the bowl of whipped cream. Thinly slice the remaining raw strawberries lengthwise.
  • Invert the sponge cake on a flat serving plate or cake stand. Holding a long serrated knife horizontally and parallel to the work surface, use it to lightly score all around the side of the cake at the midway point. Then, using long, even strokes and still holding the knife parallel to the surface, slice clean through the cake, using the score marks as a guide, to cut it into two even layers. Set the top layer aside.
  • Use a pastry brush to dab several tablespoons of the strawberry syrup across the bottom layer, lightly soaking the entire surface. Pull the bowl of cream from the refrigerator and dollop about half of it across the soaked layer, then spread in an even layer all the way to the edges. Arrange half of the sliced strawberries on top of the cream, then place the second cake layer on top of the first, cut side up. Lightly soak the top layer of cake with the strawberry syrup, reserving any remaining syrup for serving. Spread the remaining cream on top of the cake, then pile the remaining sliced strawberries over top. (If not serving immediately, cover loosely and refrigerate until ready to serve.)
  • Slice the cake with a serrated knife and serve. Drizzle the slices with any remaining strawberry syrup. The cake is best served the day it's made, but will keep, covered and chilled, for up to 3 days.

Since I first made this cake, everyone at work requests it for special occasions and I have even sold some! Keep refrigerated.

2 cups white sugar
1 cup butter, softened
4 eggs
3 cups self-rising flour
1 cup 2% milk
1 teaspoon vanilla extract
1 (16 ounce) container sour cream
1 (16 ounce) package frozen sweetened sliced strawberries, unthawed
1 (16 ounce) package frozen whipped topping, thawed
1 pint whole fresh strawberries
2 sprigs fresh mint, stemmed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease four 9-inch round cake pans and line with parchment paper.
  • Combine sugar and butter in a stand mixer fitted with the paddle attachment; beat until smooth and creamy. Beat in eggs one at a time. Mix in 1 cup flour. Beat in 1/2 cup milk. Repeat with remaining flour and milk, beating briefly after each addition. Scrape down sides of bowl and mix in vanilla extract.
  • Pour batter evenly into the prepared cake pans. Smooth the tops with a spatula.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes. Cool cakes in the pans for 10 minutes; invert onto a wire rack to cool completely, about 20 minutes.
  • Mix sour cream and sliced strawberries together in a large bowl. Spread evenly between the cooled cake layers.
  • Frost top and sides of cake with whipped topping. Decorate top of cake with whole strawberries and mint leaves.

  • Bake in preheated oven until a wooden pick inserted in centers of cakes comes out clean, 26 to 30 minutes. Cool in pans on wire racks 10 minutes. Invert cakes onto wire racks; let cool completely, about 1 hour.
