1 cup rolled oats (look for uncontaminated gluten free oats)
1 medium ripe banana
1 cup almond milk
1 tbsp coconut sugar
1 tsp baking powder
1/2 tsp cinnamon
2 tbsp Tropeaka Lean Protein Vanilla or Tropeaka Lean Protein Chocolate (can substitute for Tropeaka Pump Protein Chocolate)
Your favourite toppings e.g. fresh or frozen berries, figs, goji berries, crushed nuts, shredded coconut etc

Steps:

  • 1 Add all ingredients into a blender and blend until batter is smooth and lump-free. 2 Heat a frypan on low-medium heat. Grease with coconut oil or vegan butter if you're not using a non-stick pan. 3 Add 1/4 cup of the batter into the frypan to form each pancake. 4 Cook for 3-4 minutes or until rims of the pancakes become matte or bubbles appear before flipping and cooking for an additional 2-3 minutes. 5 Serve with toppings of choice!

1 cup low-fat cottage cheese
1 ½ scoops vanilla protein powder
1 tablespoon stevia powder

Steps:

  • Combine egg whites, oatmeal, cottage cheese, protein powder, stevia, vanilla extract, and cinnamon in a bowl. Mix well.
  • Heat a skillet over medium-high heat. Spray with cooking spray. Pour 1/3 cup batter into the skillet; flatten batter using the back of a measuring cup. Cook until bubbles form, 3 to 4 minutes. Flip and cook until golden on the other side, 2 to 3 minutes. Repeat with the remaining batter.

2 scoops vanilla protein powder
1 teaspoon baking powder
1 teaspoon cinnamon
¾ cup egg white
4 tablespoons low-fat greek yogurt
1 teaspoon coconut oil

Steps:

  • In a bowl, mix oat flour, protein powder, baking powder, and cinnamon until fully blended.
  • Add egg whites and Greek yogurt to the bowl and mix until a batter-like consistency is reached.
  • Melt coconut oil in a skillet over medium-high heat and wipe down to prevent the pancakes from sticking.
  • Pour in some batter and cook pancakes until bubbles form all around the top of the pancake, then flip and cook for a few more minutes, or until cooked through.
  • Top your pancake stack with bananas, blueberries, or honey.

1 banana
75g oats
3 large eggs
2 tbsp milk (dairy, soya, oat or nut milks all work)
1 tbsp baking powder
pinch of cinnamon
2 tbsp protein powder (whey, pea or whatever your preference)
coconut oil, or a flavourless oil, for frying
nut butter, maple syrup and berries or sliced banana to serve

Steps:

  • Whizz the banana, oats, eggs, milk, baking powder, cinnamon and protein powder in a blender for 1-2 mins until smooth. Check the oats have broken down, if not, blend for another minute.
  • Heat a drizzle of oil in a pan. Pour or ladle in 2-3 rounds of batter, leaving a little space between each to spread. Cook for 1-2 minutes, until bubbles start to appear on the surface and the underside is golden. Flip over and cook for another minute until cooked through. Transfer to a warmed oven and repeat with the remaining batter. Serve in stacks with nut butter, maple syrup and fruit.
