Extra light and moist, these whole wheat muffins are made with fresh Meyer lemons, ricotta cheese, and hinted with warming chai spices. Lightly sweetened with a touch of honey. You'd never guess these delicious muffins are made on the healthier side.

1/2 cup extra virgin olive oil
1/2 cup honey
2 teaspoons vanilla extract
2 eggs
1 cup whole milk ricotta cheese
1 tablespoon Meyer lemon zest and 2 tablespoons juice ((about 1 lemon))
1 3/4 cups white whole wheat or whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cardamon
1/4 teaspoon all-spice
1/4 teaspoon salt
4 tablespoons salted butter at room temperature
1 tablespoon honey
1 tablespoon poppyseeds
2 teaspoons lemon zest

Steps:

  • 1. Preheat the oven to 350 degrees F. Line 12 muffin tins with paper liners.2. In a large bowl, mix together the olive oil, honey, and vanilla. Add the eggs, one at a time, until fully incorporated. Add the ricotta cheese, lemon zest, and juice, beat until smooth and creamy. Add the whole wheat flour, baking powder, baking soda, cinnamon, ginger, cardamom, all-spice, and salt. Mix on low-speed until just combined, being sure the batter is completely mixed.3. Divide the batter among the prepared pan. Transfer to the oven and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.4. Meanwhile, make the honey butter. In a small bowl, combine the butter, honey, poppyseeds, and lemon zest. 5. Serve the muffins warm or at room temperature, smeared with chia butter. Enjoy!

1/2 cup powdered milk or 1/2 cup ground up almonds
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 cup sugar
1/4 teaspoon cinnamon
1 pinch nutmeg
2 tablespoons light brown sugar
1 cup ricotta cheese
1/2 cup milk
2 large eggs
1 tablespoon vanilla
4 tablespoons unsalted butter, melted
1/2 cup vanilla chip (like Nestle's white chips)

Steps:

  • Preheat oven to 350 degrees.
  • Combine flour,powdered milk, salt, baking powder, sugar,vanilla chips, and spices in a bowl.
  • Crumble brown sugar by rubbing it between fingers to break up any clumps.Add this to the dry ingredients.
  • Place ricotta cheese in another bowl, beat in milk.
  • Add eggs, one at a time,beating with a whisk after each addition.
  • Stir in vanilla.
  • Pour wet ingredients along with butter into the dry ingredients.
  • Using a spoon, stir from bottom of bowl until dry ingredients are moistened. Don't overmix.
  • Bake 20-25 minutes.

Butter, for greasing the muffin cups
1 (15-ounce) container whole milk ricotta cheese, at room temperature
1/2 cup mascarpone cheese, at room temperature
3 eggs, at room temperature
1/4 cup heavy cream
1/4 cup maple syrup
3 tablespoons sugar
1/8 teaspoon fine sea salt
1 vanilla bean
2 cups fresh, or frozen and thawed, cranberries
1/2 cup water
1 large orange, zested and juiced
1/2 cup sugar, plus extra, as needed

Steps:

  • For the puddings: Arrange an oven rack in the center of the oven and preheat the oven to 350 degrees F.
  • Butter 10 nonstick muffin cups and line the bottom of each cup with a disk of parchment paper. Set aside.
  • In a blender, combine the ricotta cheese, mascarpone cheese, eggs, heavy cream, maple syrup, sugar, and salt. Using a paring knife, split the vanilla bean in half and scrape the seeds into the blender. (Reserve the seeded vanilla pod for the sauce.) Blend the mixture until smooth. Pour the batter into the prepared muffin cups. Bake for 35 to 40 minutes until puffed and lightly browned. Remove the muffin cups from the oven to a wire rack and cool for 30 minutes (puddings will deflate during cooling). Refrigerate the puddings, in the muffin cups, for 2 hours. Using a thin, flexible spatula, carefully remove the puddings from the muffin cups and discard the parchment paper from the bottom of the puddings.
  • For the sauce: In a medium saucepan, combine the reserved vanilla pod, cranberries, water, orange juice, orange zest and 1/2 cup sugar over medium heat. Bring the mixture to a boil, stirring occasionally. Reduce the heat and gently simmer until the mixture has thickened and the liquid has reduced by half, about 30 to 35 minutes. Cool for 20 minutes. Remove the vanilla pod and sweeten with extra sugar, to taste, if necessary.
  • To serve: Arrange the puddings on small dessert plates and spoon the sauce over the top.

nonstick cooking spray, for the pan
2 1/3 cups unbleached all-purpose flour
3/4 teaspoon salt
2 teaspoons baking powder
6 -8 tablespoons unsweetened cocoa
1 cup sugar
1 cup semi-sweet chocolate chips
1 cup ricotta cheese (best with whole milk ricotta, but works with lowfat variety to further reduce fat content)
2 large eggs
1 1/3 cups milk or 1 1/3 cups 2% low-fat milk
1 tablespoon vanilla extract
4 tablespoons unsalted butter, melted (canola oil can be substituted for all or part of the butter)

Steps:

  • Preheat the oven to 350°F.
  • Lightly spray 12 standard-sized (2 1/2-inch-diameter) muffin cups with nonstick spray.
  • Combine the flour, salt, baking powder, cocoa, and sugar in a medium-sized bowl.
  • Place the ricotta in a second medium-sized bowl, and add the eggs one at a time, beating well with a medium-sized whisk after each addition.
  • Add the milk and vanilla, and whisk until thoroughly blended.
  • Pour the ricotta mixture, along with the melted butter, into the dry ingredients.
  • Using a spoon or a rubber spatula, stir from the bottom of the bowl until the dry ingredients are all moistened.
  • Fold in the chips, but don't overmix; a few lumps are okay.
  • Spoon the batter into the prepared muffin cups.
  • For smaller muffins, fill the cups about 4/5 of the way.
  • For larger muffins, fill them even with the top of the pan.
  • If you have extra batter, spray one or two additional muffin cups with nonstick spray and put in as much batter as you have.
  • Bake in the middle of the oven for to 20 to 25 minutes, or until lightly browned on top, and a toothpick inserted into the center comes out clean.
  • Remove the pan from the oven, then remove the muffins from the pan and place them on a rack to cool.
  • Wait at least 30 minutes before serving.

½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 cups fresh blueberries
¼ cup turbinado sugar (such as Sugar in the Raw®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin pan with extra-large paper cupcake liners.
  • Beat white sugar, butter, and lemon zest together using an electric mixer in a mixing bowl until light and fluffy. Beat in ricotta cheese, followed by egg, lemon juice, and vanilla extract.
  • Combine flour, baking powder, baking soda, and salt together in a separate bowl. Stir into butter mixture until just combined; batter will be thick. Carefully fold in blueberries.
