PAN-SEARED VEAL STEAKS WITH GREEN PEPPERCORNS
Green peppercorns grow on the same vine as the black peppercorns you use in your pepper mill. The difference is the green ones are picked young, while the black have been allowed to mature and dry. Though they are occasionally available still fresh on the branch, flown in directly from Southeast Asia, green peppercorns are always available preserved in brine or freeze-dried. This classic French recipe employs them in a deliciously pungent sauce for veal steaks, though boneless pork loin chops or chicken breasts can stand in nicely.

Steps:
- Put veal steaks on a platter and season on both sides with salt. Sprinkle with lemon zest, garlic and thyme sprigs and set aside for an hour (or refrigerate for up to 3 hours, then bring to room temperature). Just before cooking, scrape aromatics from steaks and dust lightly on both sides with flour.
- Put olive oil in a wide skillet over medium-high heat. Add veal steaks and cook until lightly browned, 3 to 4 minutes, then turn and cook for 2 minutes more. Remove and keep warm. Wipe skillet clean, then add butter and diced shallot. Season lightly with salt and cook, stirring, until shallot is soft and beginning to color, about 3 minutes.
- Turn heat to high, add peppercorns and cook for 1 minute. Add stock and simmer until reduced by nearly half, 2 to 3 minutes. Add crème fraîche and brandy and stir to incorporate. Return veal to pan and continue simmering until sauce thickens a bit, about 2 minutes more.
- Distribute steaks among 4 warmed plates. Spoon sauce over steaks, sprinkle with parsley and crispy shallot, if using, and serve immediately.

ADOBO GRILLED VEAL FLANK STEAK
Steps:
- Combine juices, garlic, chile flakes, oregano, and oil in a mixing bowl. Pour over veal and marinate. Heat grill to medium and grill steak to desired temperature.

- Trim steak, and season. Heat frying pan and melt butter. Place meat in the melted butter and brown slowly for 25 to 30 minutes, turning from side to side until meat is tender and golden brown. Serve with oven-browned potatoes and a tossed salad.

VEAL WITH ORANGE SAUCE
From fridge to table, a really quick mid-week recipe with only a few ingredients that are readily on hand: veal cooked in an orange and wine sauce. Adapted from 'Colour Me Healthy' by Rita Erlich and Dr Alice Murkies and an earlier recipe of my own. When I came across this recipe in 'Colour Me Healthy', I dug out a recipe I'd had in my very first hand-written recipe book from the early seventies when so many of the influences on Australian cuisine were only just beginning to make a ripple and so many of our recipes were still basically derived from English recipes. Although I suffered English school meals as a child, there really is a lot more to English - and earlier Australian - cuisine than chops and three veg! I am, therefore, posting this as both an English and an Australian recipe.

Steps:
- Preheat the oven to a moderate temperature.
- Squeeze the orange juice, and set aside.
- Grate a teaspoon of orange rind, and set aside.
- Dip the slices of veal in flour, then sauté until lightly browned on both sides.
- Transfer the veal to an ovenproof casserole dish, and set aside.
- Pour the orange juice and wine into the still-hot sauté pan.
- Let the orange juice and wine bubble for one minute.
- Add the soy sauce and orange zest, then pour the orange/wine sauce over the veal.
- Cover with foil and cook for 30 minutes.
- Remove the foil, add some freshly chopped chives and serve.

- Preheat the oven to 375°. Heat a large cast-iron skillet over moderately high heat. Rub the veal with the oil and sprinkle with the herbes de Provence and salt and pepper. Add the veal to the skillet and cook, turning once, until well browned, about 1 1/2 minutes per side. Transfer the skillet to the oven and roast for about 8 minutes for medium. Transfer the meat to a plate and keep warm.
- Add 1/3 cup of water to the skillet and bring to a boil over moderate heat, scraping up any browned bits. Add any exuded juices from the veal and boil until slightly reduced, about 1 minute.
