4 tablespoons butter (1/2 stick)
1 onion, thinly sliced into rings
salt & freshly ground black pepper, to taste
5 tablespoons fresh parsley, minced
3 tablespoons fresh chives, minced
1 lb cod fish fillet (or 4 individual steaks of cod, scrod, or halibut)
4 slices fresh lemon, peel and pith removed
1 bay leaf
1 sprig fresh thyme (or 1/2 teaspoon dried thyme)
2/3 cup dry white wine

Steps:

  • Preheat the oven to 350°F
  • Melt the butter in a medium-size skillet over medium heat. Add the onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes. Season with salt and pepper.
  • Arrange half the onion in an ovenproof baking dish just large enough to comfortably hold the fish.
  • Sprinkle half the parsley and chives over the onion. Arrange the fish fillets or steaks over the onion and season lightly with salt and pepper.
  • Cover with the remaining onion, parsley, chives, the lemon slices, bay leaf, and thyme. Pour in the wine and bake until the fish is just done, about 20 minutes.

1/4 cup seasoned dry bread crumb
4 haddock fillets (4 fillets = 1 pound) or 4 flounder fillets, thawed if frozen (4 fillets = 1 pound)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Pam cooking spray, grilling spray
1 tablespoon fresh lemon juice

Steps:

  • Place bread crumbs in shallow dish; set aside.
  • Rinse fish; pat dry with paper towels. Sprinkle evenly with salt and pepper. Add to bread crumbs; turn over to completely coat both sides of each fillet.
  • Spray large skillet with grilling spray; heat 1 minute over medium-high heat. Add fish; cook 10 minutes or until fish flakes easily with fork (145°F), turning after 5 minutes. Remove from pan. Drizzle with lemon juice.

Simple, fast, and delicious describes this baked cod recipe. Bake for two sets of 10 minutes each and you have the perfect ten dinner! This recipe was a favorite request from a local restaurant. They closed after years in business and we are happy to share a version of their most requested recipe. I serve this with rice pilaf and fresh spinach that has been lightly seared in olive oil and garlic. Yummy!

2 tablespoons butter
½ sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter
1 pound thick-cut cod loin
½ lemon, juiced
¼ cup dry white wine
1 tablespoon chopped fresh parsley
1 tablespoon chopped green onion
1 lemon, cut into wedges

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
  • Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
  • Coat both sides of cod in melted butter in the baking dish.
  • Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
  • Garnish baked cod with parsley and green onion. Serve with lemon wedges.

1/8 teaspoon salt
2 eggs
1 teaspoon water
1 cup panko bread crumbs
1/4 cup shredded Parmesan cheese
4-1/2 teaspoons ranch salad dressing mix
1 tablespoon salt-free Italian herb seasoning
4 cod fillets (4 ounces each)

Steps:

  • In a shallow bowl, combine the flour, pepper and salt. In another shallow bowl, whisk eggs and water. In a third shallow bowl, combine the bread crumbs, cheese, dressing mix and seasoning. Coat fillets with flour mixture, then dip in egg mixture and coat with crumb mixture., Place fillets on a greased baking sheet.
