CREAMY VEGAN AMBROSIA FRUIT SALAD WITH PINEAPPLE



Creamy Vegan Ambrosia Fruit Salad With Pineapple image

Whip up this delicious vegan ambrosia made with fruit, coconut, and pineapple. Tofu is substituted for yogurt in this recipe.

1 cup chopped fresh pineapple
1 cup sliced fresh apples
1 cup orange slices
1 cup strawberries (sliced)
1 cup grapes
1/2 cup shredded coconut
1 tbsp. cornstarch
1/3 cup lemon juice
3 tbsp. sugar
3 tbsp. orange juice
1/2 cup soft (silken) tofu (pureed)
2 tsp. grated orange zest
Optional: 1 tsp. poppy seeds

Steps:

  • In a large bowl, toss the fruit and coconut until well blended. Refrigerate.
  • Combine the cornstarch with the lemon juice in a medium saucepan and stir until well blended. Place the saucepan over medium heat and add the sugar and orange juice. Cook, stirring constantly, until the mixture thickens, about 5 to 10 minutes. Remove the saucepan from the stove and allow to cool thoroughly.
  • Fold the pureed tofu, orange zest, and poppy seeds if using into the juice mixture and chill for at least 1 hour.
  • Immediately before serving, pour the dressing over the fruit and serve.

1 cup fresh pineapple, chopped
1 cup apple, chopped
1 cup orange, chopped
1 cup sliced strawberry
1 cup organic grapes
1/2 cup shredded coconut
1 tablespoon cornstarch
6 tablespoons lemon juice
3 tablespoons sugar
3 tablespoons orange juice
1/2 cup soft tofu, pureed
2 teaspoons grated orange rind
1 teaspoon poppy seed (optional)

Steps:

  • In a large bowl, toss the fruit and coconut until well blended.
  • Refrigerate.
  • Combine the cornstarch with the lemon juice in a medium saucepan and stir until well blended.
  • Place the saucepan over low heat and add the sugar and orange juice.
  • Cook, stirring constantly, until the mixture thickens, about 5-10 minutes.
  • Remove the saucepan from the stove and allow to cool thoroughly.
  • Fold the puréed tofu, orange rind, and poppy seeds into the juice mixture and chill for at least 1 hour.
  • Pour the dressing over the fruit immediately before serving.

A vegan take on my grandma's family ambrosia salad recipe. Make sure you use full-fat coconut cream.

3 ounces gelatin-free jel dessert mix
1 (15.25 ounce) can fruit medley salad
1 (15 ounce) can mandarin orange slices
1 (4 ounce) jar maraschino cherries
1 cup chopped walnuts
1 (14 ounce) can coconut cream
½ (10 ounce) package vegan mini marshmallows

Steps:

  • Prepare gelatin-free jel dessert according to package directions and pour into a mold. Refrigerate until firm, about 4 hours.
  • Combine fruit medley salad, mandarin slices, maraschino cherries, walnuts, and coconut cream in a large bowl. Mix until evenly combined.
  • Remove gelatin-free dessert from refrigerator and cut into small cubes. Add cubes and marshmallows to the fruit salad mixture and mix until well combined. Refrigerate until serving.
