VEGAN CHAI SPICE LOAF CAKE



Vegan Chai Spice Loaf Cake image

This spiced chai cake is glazed with a masala chai icing. It's soft, mouthwatering, easy to make, and the perfect sweet treat!

1 2/3 cups (390g) plant milk
1 tbsp heaping loose leaf masala chai (or 2 teabags)
1 1/4 cup (300g) prepared chai milk
1/3 cup (75g) neutral flavored oil
1/2 cup (120g) plain unsweetened vegan yogurt*
2 tsp (10g) vanilla extract
2 1/2 cups (350g) all purpose flour, whisked to fluff before measuring*
3/4 cups (145g) sugar
2 tbsp (18g) cornstarch
1 tsp (4g) baking powder
1/2 tsp (2g) baking soda
3/4 tsp (4g) salt
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground cardamom
1/4 tsp ground clove
1/8 tsp black pepper
2 tbsp prepared masala chai milk
1 cup powdered sugar, sifted

Steps:

  • Preheat the oven to 350 ºF and grease a loaf pan (approximately 9" x 5") by lightly spraying with oil.
  • Bring the plant milk to a low boil on the stove. Add the masala chai tea and steep for 5 minutes, then strain.
  • In a small mixing bowl stir to combine 1 1/4 cup (300g) of the prepared masala chai milk along with the oil, yogurt, and vanilla extract. Reserve the remaining chai for the glaze.
  • In a large mixing bowl whisk together the flour, sugar, cornstarch, baking powder, baking soda, salt, ginger, cinnamon, cardamom, clove, and black pepper to combine.
  • Once the oven has preheated, add the wet ingredients to the dry and stir with a wooden spoon to make a thick batter, taking care to not over mix. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a tester comes out of the center clean or with a few crumbs.
  • Let the cake cool for 10 minutes in the pan, then remove it and cool completely on a wire rack.
  • Make the glaze: sift the powdered sugar into a mixing bowl, add 2 tbsp of the chai steeped plant milk and mix to make a thick but pourable glaze.
  • When the cake has cooled, pour the glaze overtop to cover.

1 cup chai tea
1/3 cup uncooked quick oatmeal (Not instant)
1 cup whole wheat flour
1/2 cup unbleached white flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ginger
3/4 cup raw sugar
1/3 cup unsweetened applesauce
1 tablespoon vinegar
1 teaspoon vanilla extract
2 tablespoons organic maple syrup
1/2 cup chopped pecans (optional)
1/2 cup flaked coconut, 2 tbsp Reserved

Steps:

  • 1. Prepare the Chai ahead of time by steeping two teabags in one cup of boiling water until cool.
  • 2. Preheat oven to 350°F Grease and flour a 8-inch square baking pan.
  • 3. Combine the dry ingredients (oatmeal through sugar) in a medium-sized mixing bowl.
  • 4. Add the Chai, applesauce, vinegar, vanilla, syrup, pecans and all but the 2 tablespoons of coconut.
  • 5. Mix well, and pour the batter into the prepared pan. Sprinkle with the reserved coconut and bake for about 25 minutes, or until a tester inserted into the center of the cake comes out clean.
  • 6. Serve warm or at room temperature.

  • Pre-heat oven to 350F and grease a 9-inch square pan. (You can also line it with parchment paper).
  • In a large bowl, whisk together the flour, sugar, spice, baking soda and salt. Add in the milk, oil and vanilla and whisk or stir until combined.
  • Pour the batter into the prepared pan and bake for 28-30 minutes, or until a tooth pick inserted in the middle of the cake comes out clean. Remove from oven and let cool completely on a wire rack.
  • In a deep mixing bowl, scoop out the solidified coconut milk (discard or reserve the coconut water for another recipe). Using an electric mixer, beat the coconut milk on high for about a minute. Scrape down the sides and add the orange juice, maple syrup, orange zest and cardamom. Mix on high for a few minutes until the frosting is light and fluffy.
