Vegan Not-Chicken and Dumplings image

Enjoy a cozy night in with this simple vegan not-chicken and dumplings stew, which contains a delicious blend of winter veggies + LITERALLY BREAD straight in your soup bowl. Easy to make and absolutely nothing to roll out, this stew is the perfect ending to a long day.

1 medium onion (diced)
1 large carrot (sliced thin)
2 medium gold potatoes (peeled and diced)
3 large cloves of garlic (minced)
6 cups not-chicken broth OR vegetable broth
⅔ cup frozen corn
⅔ cup frozen peas
Handful fresh parsley (chopped)
black pepper and salt (to taste)
1 cup unbleached, all-purpose white flour
1 tablespoon nutritional yeast (optional)
1 ½ teaspoons baking powder
½ teaspoon salt
¼ teaspoon black pepper
½ cup almond milk (or another plant-based milk of your choice)
2 tablespoons oil (such as olive oil or melted coconut oil)

Steps:

  • In a large soup pot, combine onions, carrots, potatoes, garlic, and broth. Heat on medium high and bring to a boil. Cook (uncovered) for about 15 minutes.
  • Add frozen corn and peas, cook an additional 15 minutes, until potatoes are almost done (use a fork to pierce potatoes to check).
  • Meanwhile, begin making the dumplings. I like to use my stand mixer for these, but a medium bowl and a fork will work fine also! Start by mixing together dry ingredients. Then, slowly pour in the almond milk and oil, using your fork to whisk as you go (or set the stand mixer to low speed). The dumplings should be combined well and STICKY. Set aside until the soup is ready for you to drop them in.
  • Once the potatoes are close to done, and you have a good boil going, drop the dumplings by small spoonfuls into the pot. I like to work my way around the soup pot, making sure to fit as many as I can in! Once you are finished, the entire top of your pot should be filled in with dumplings. This recipe makes about 20, but it varies depending on how big you make them. Once you have all your dumplings in the pot, cover with a lid and cook for an additional 12-15 minutes. Leave the pot undisturbed for at least 10 minutes before you check!
  • After 10-12 minutes, you can check your dumplings and taste them to see if they're done. You know they're finished when the middle is no longer gooey or doughy. Once finished, turn off heat and stir in the chopped parsley. Sprinkle with black pepper and a pinch of salt, if desired.

Vegan chicken with a rich gravy and fluffy chive dumplings on top!

2 C. All purpose flour
2 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Salt
3 Tbsp. Dried chives
2 Tbsp. Flax meal
3 Tbsp. Water
1 C. Almond milk
1 tsp. Apple cider vinegar
1 Large carrot, diced
2 Stalks of celery,diced
1/2 an Onion, diced
2 Cloves of garlic,diced
1 Tbsp. Olive oil
1 C. White wine
1/4 C. All purpose flour
1/4 C. Vegan butter, I used Earth Balance
5 C. Vegan chicken stock or vegetable stock
2 C. Vegan chicken, I used Trader Joe's Chickenless strips
1 Bay leaf
Salt and Pepper to taste
1/2 tsp. Cayenne pepper(optional)

Steps:

  • Make the dumplings, whisk together all the dry ingredients in a medium mixing bowl, make a flax egg by mixing flax and water together and let sit for a minute. Make vegan buttermilk by mixing almond milk and apple cider vinegar together and let sit for a minute. Add the flax egg and vegan buttermilk to the dry ingredients, and stir until completely combined. Set aside. In a large soup pot , heat 1 tbsp of olive oil on medium heat, add the carrots, celery, onion and garlic. Sweat for a few minutes until the onion starts to become translucent. Add the white wine, stir and reduce for a few minutes. Pour veggies and remaining wine into a bowl and set aside. In the soup pot, add the vegan butter and flour and stir. Cook for a few minutes to make a roux. Add the stock and the veggies and wine back in. Stir together. Add the vegan chicken and bay leaf. Taste and season. Time to add the dumplings, scoop small scoops of dough into the liquid in the pot, until all the dough has been used. Cover and reduce heat to low, simmer for 25 to 30 minutes until the dumplings are cooked through. Serve with parsley!

I whipped this together this evening out of the blue - no real recipe served as a base other than measurements for dumplings. One taste, and it is as deep-down satisfying as anything I have tasted in a long time.

16 ounces tofu (I prefer 1 package of Veat Chik'n Nuggets, or chicken substitute of your choice)
8 ounces cream of mushroom soup (Imagine Foods makes a brand I like, or you can use cream of whatever-suits-you-best)
1 quart vegetable broth (or more) or 4 cups water, plus 2 cubes of boullion (or more)
3 mushrooms, quartered
2 carrots, chopped in chunks
5 new potatoes, quartered
1 zucchini, chopped in large pieces
4 leaves kale, shredded
2 cups broccoli florets
garlic
herbes de provence or Italian herb seasoning
2 dried red chilies, crushed
salt and pepper
dumplings
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup basil leaves, shredded
1/2 cup cream of mushroom soup
1/4 cup water

Steps:

  • Add broth and cream of mushroom soup (minus 1/2 cup reserved for the dumplings) to a large soup pot.
  • Bring to a simmer, and add chik'n, potatoes and carrots. Simmer for 10 minutes or until potatoes are just tender.
  • While simmering, put flour, baking powder and salt in a bowl.
  • Add shredded basil leaves and soup to flour blend and mix well.
  • If dough is too dry add up to 1/4 cup more water.
  • Add broccoli, kale, and zucchini to soup pot. Stir well, then add dumplings by the spoonful. Cover and simmer for 15 minutes.

  • Soak Soy Curls™ in about 2 1/2 cups warm water for about 10 minutes. Drain Soy Curls and toss with Bragg's liquid aminos and Italian seasoning. Heat oil in a large skillet on medium-high. Saute Soy Curls for about 5 minutes, turning often until slightly brown, set aside.
  • Heat oil in a large pot over medium heat, add onion and cook until soft for about 3 minutes. Add green onion, garlic, celery, thyme, rosemary sage and cayenne pepper, cook for another minute. Stir in carrots and potatoes and cook for about 2 minutes.
  • Add water or vegetable broth and nutritional yeast. Bring to boil and reduce to simmer for 10 minutes while you make the dumplings.
  • To make dumplings, combine brown rice flour, potato starch, tapioca starch, baking powder and salt in a medium bowl. Cut butter in flour until mixture resembles breadcrumbs. Add almond milk and form into a dough, take pieces of dough and lightly form into a ball. Drop into the stew and cook for 15 minutes. Stir in the Soy Curls and serve.
