These vegan waffles are the BEST! Golden and crispy on the outside, tender and fluffy on the inside. They're also super easy to make using pantry staples. Serve with loads of syrup and fresh fruit for the best vegan breakfast.

1 1/4 cup All Purpose Flour ((156g))
3 Tbsp White Granulated Sugar
2 tsp Baking Powder
1/4 tsp Salt
1 1/4 cup Soy Milk ((300ml) or other non-dairy milk)
2 Tbsp Coconut Oil (Melted)
2 tsp Vanilla Extract

Steps:

  • Set your waffle iron to preheat while you mix the batter.
  • Sift all purpose flour into a mixing bowl and add sugar, baking powder and salt. Mix together.
  • Add soy milk, melted coconut oil and vanilla extract and mix into a batter. Don't overmix.
  • When your waffle maker is heated, grease the waffle iron or spray it with non-stick spray (see notes). Pour even amounts of batter into the waffle machine and close the machine.
  • Cook for 3-5 minutes or until golden.
  • Serve with vegan butter, powdered sugar and fresh berries with loads of syrup drizzled over the top.

270 grams whole wheat flour (approx. 2 cups spooned + leveled)
2 teaspoons baking powder
400 ml Thai Kitchen unsweetened coconut milk (approx. 13.5 ounce can)
1/3 cup mashed banana (approx. 1 very small banana or half a large)
1 teaspoon pure vanilla extract
2-4 tablespoons water (if needed)
blueberry chia jam
fresh fruit
maple syrup

Steps:

  • Preheat your waffle iron to medium-high heat.
  • In a large mixing bowl, whisk together the flour and baking powder. Then add the coconut milk, banana, and vanilla and mix until just combined, and no floury bits remain but don't overmix. A few lumps are perfectly fine.NOTE: If the batter appears too thick (it should be pourable similar to pancake batter), add the optional water and give everything another quick stir.
  • Cook the waffles according to the manufacturer's instructions, approx 5-6 minutes for each batch. Cook longer for crispier waffles, and less for softer waffles.
  • Serve with blueberry chia jam, maple syrup, or fresh fruit.

2 tbsp chia seeds (mixed with 6 tbsp warm water)-to make chia egg
1/4 cup + 1 tbsp of coconut flour
1 cup of oat flour (ground oats) - gluten-free flour works here too
1/2 cup of unsweetened coconut flakes
1 1/2 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla
2 tbsp maple syrup
1/4 cup coconut oil, melted (plus more for greasing waffle-iron)
1 1/2 cups lite coconut milk
pinch of salt

Steps:

  • Turn on waffle-iron and let heat up.
  • Whisk together chia egg and let sit.
  • In a large bowl combine dry ingredients.
  • Melt coconut oil and combine with vanilla, maple syrup, and coconut milk. Add in chia egg.
  • Add wet ingredients to dry ingredients and mix thoroughly. Waffle batter will be thick.
  • Spray waffle iron with non-stick spray or grease using melted coconut oil.
  • Add batter to iron and follow waffle iron instructions to tell you when the waffle is done.
  • Top with mixings of choice. I like bananas and almond butter but maple syrup is also delicious!

1 14-ounce can full-fat coconut milk (about 1 3/4 cups)
1 vanilla bean
1 1/2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt (I like fine-grain sea salt for this recipe)
Your favorite cooking spray (if needed (I have a non-stick waffle maker so I don't need or use any spray))
Pure maple syrup
Butter (or vegan butter)
Fresh berries

Steps:

  • Preheat your waffle maker.
  • If the coconut milk is solidified, place it into a small saucepan and set over low heat. Heat just until liquid, but not warm.
  • Pour coconut milk into a large mixing bowl. Scrape the pulp of the vanilla bean into the coconut milk (discard the pod) or add vanilla bean paste or extract. Stir to combine.
  • Add the flour, sugar, baking powder, and salt. Stir gently with a wooden spoon just until combined (if you overmix, you risk making the waffles tough; don't worry, a few lumps are okay).
  • Spray your preheated waffle maker with cooking spray, if using. Pour batter into your waffle maker according to manufacturer instructions, as waffle makers vary. My waffle maker takes a heaping 1/3 cup per side.
  • Cook until golden brown, as per your individual waffle maker.
  • Serve with pure maple syrup, butter (or vegan butter), fresh berries, or anything else you'd like!
