3/4 cup powdered sugar
1 teaspoon vanilla
1 1/2 cups Gold Medal™ all-purpose flour
1/4 cup finely chopped dried apricots
1/4 cup butter or margarine, softened
1/4 cup apricot preserves
1 cup powdered sugar
3 medium dried apricots, cut into 48 strips

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick cookie sheet). In medium bowl, beat 1 cup butter, 3/4 cup powdered sugar and the vanilla with electric mixer on medium speed until smooth. Beat in flour until well blended. Stir in finely chopped apricots.
  • Shape dough into 1-inch balls. On ungreased cookie sheet, place balls 2 inches apart.
  • Bake 8 to 12 minutes or until bottoms are light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In small bowl, beat 1/4 cup butter and the apricot preserves with electric mixer on medium speed until smooth. Beat in 1 cup powdered sugar until well blended. Spread frosting over cookies. Top each cookie with apricot strip.

1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon pure vanilla extract

1/2 teaspoon fine salt
3/4 cup semisweet chocolate chips
1/4 cup roughly chopped dried apricots

Steps:

  • Beat the butter, brown sugar and granulated sugar with an electric mixer on medium speed in a large bowl until fluffy. Add the vanilla and egg and beat to combine.
  • Whisk together the flour, baking soda and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the chocolate chips and dried apricots.

1 teaspoon vanilla extract
3/4 cup roughly chopped dried apricots

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, combine oats, flour, baking powder, and salt; set aside.
  • In the bowl of an electric mixer, cream butter and sugars on medium speed until smooth; beat in egg and vanilla. With mixer on low speed, add oat mixture, and mix until just combined. Stir in apricots and almonds by hand.

2 1/2 cups all-purpose flour
1 teaspoon baking powder
2 sticks (1 cup) unsalted butter, softened
1/4 cup packed brown sugar
1 teaspoon vanilla
1 large egg
1 cup confectioners sugar
2 teaspoons fresh lemon juice

Steps:

  • Simmer apricots, water, and 1/4 cup granulated sugar in a small saucepan, stirring until sugar is dissolved and liquid is reduced by about half, 12 to 15 minutes. Remove from heat and add rum, then cool slightly. Purée in a food processor or blender until smooth (use caution when blending hot liquids).
  • Whisk together flour, baking powder, and a pinch of salt in a small bowl. Beat together butter, brown sugar, and remaining 1/2 cup granulated sugar in a large bowl with an electric mixer at moderate speed until pale and fluffy, about 5 minutes. Beat in vanilla and egg. Add flour mixture and mix at low speed until just combined. Form dough into a log and chill, wrapped in plastic wrap, until firm, about 1 hour.

  • Whisk together confectioners sugar, lemon juice, and enough water (about 2 1/2 teaspoons) to make a thick but pourable icing. Drizzle icing over rectangles and cut diagonally into 1-inch-thick strips. Let stand until icing is set, about 15 minutes.

3/4 cup sifted confectioners' sugar
1 teaspoon pure vanilla extract
2 cups sifted all-purpose flour, plus more for parchment
1/2 teaspoon salt
1/2 cup finely chopped dried apricots

Steps:

  • Preheat oven to 325 degrees, with rack in center. Line a baking sheet with parchment paper. Place butter, confectioners' sugar, vanilla, flour, and salt in large mixing bowl. Stir well with a wooden spoon until mixture is combined but not too creamy. Stir in dried apricots. Turn out dough onto a piece of plastic wrap, and pat to flatten into a disk.
